Bisquick Easy Chicken Pot Pie

Ingredients:
1 2/3 cups Frozen mixed vegetables, thawed
1 cup Cut-up cooked chicken
1 can (10 3/4 oz) condensed cream of chicken soup
1 cup Original Bisquick
1/2 cup Milk
1 Egg

Preparation:
Heat oven to 400 degrees F.

Mix vegetables, chicken and soup in ungreased 9" pie plate.
Stir remaining ingredients until blended. Pour into pie plate.
Bake about 30 min or until golden brown.

TWEEKED
First off, I doubled everything so I could make a 9X13 pan full.

Bisquick Easy Chicken Pot Pie Plus

2 large boneless skinless chicken breasts
1 cup chicken broth
3 large stalks celery, cut in 1/4 inch slices
1 large onion, diced
1 large carrot, thin sliced
2 large potatoes, cut in 1/2 inch cubes
1 14.5 oz can cut green beans
1/2 15 oz can peas
1 tsp garlic powder
1/2 tsp Morton's Nature's Seasons Seasoning Salt
1/4 tsp fresh ground black pepper
1 cup Stovetop Stuffing Mix for Chicken
1 can cream of chicken soup
2 cups chicken gravy
2 cups Bisquick Baking Mix
1 cup milk
2 eggs
2 Tbs yellow cornmeal

Preheat oven to 400º F. Spray 9X13 baking dish with cooking spray.

Place chicken and broth in a 2 qt microwave safe baking dish and cook on full power 8 minutes in microwave. remove to platter to cool with slotted spoon, leaving broth in the dish.
Put onion, potatoes, carrot and celery in the broth, cover and cook approx 7 minutes on high or until veggies are tender.
While veggies are cooking, dice chicken and spread evenly in the 9X13. When veggies are done, remove from dish with slotted spoon and spread over chicken. pour green beans and peas over the cooked veggies and sprinkle the three seasonings over the veggies. Shake the stuffing over the veggies.
Put chicken gravy and soup in dish with broth, stir to mix and heat 2 minutes on high in microwave. Pour the soup/gravy mix over the vegetables in the 9X13.
Stir together the Bisquick, milk, eggs and cornmeal and spread evenly over the top of the chicken and veggies. Bake at 400º for 30 minutes or until golden brown.

Next time use 2-12 oz jars of gravy, 1/4 cup yellow cornmeal and 2 cups stuffing mix.
