Butter Free Shrimp Scampi
Ready in 30 minutes Makes 4 servings Ingredients: 1 tablespoon Olive oil 4 cloves garlic, minced 1 teaspoon dried oregano 1 pound shrimp, peeled and deveined 1/4 cup wine, dry white, or vermouth 2 teaspoons cornstarch 3/4 cup fat-free chicken broth salt and black pepper to taste 8 ounces cooked and hot linguini 1/4 cup fresh parsley, chopped, optional Directions: Heat oil in large skillet over medium-high heat. Add garlic and saute 1 minute. Add oregano and stir to coat. Add shrimp and saute until pink, stirring frequently, for 3 minites. Add vermouth or wine and simmer 1 minute. Dissolve cornstarch in chicken broth and whisk until blended. Add mixture to skillet and simmer 2 minutes, until sauce thickens. Season with salt and pepper.
