Taco Soup
1 1/2 to 2 lbs ground beef
1 lg. onion chopped
4 cloves garlic chopped
1 pkg. Taco Seasoning
1 can Black Beans,undrained
1 canPinto Beans,undrained
1 can Kidney Beans,undrained
1can whole kernal corn,undrained
1 can Rotel tomatoes
1 can diced tomatoes with onions
2 cups water
1 pkg Taco Seasoning
1 pkg Hidden Valley Ranch Dressing powder
salt and pepper to taste
8-16 ounces Velveeta Cheese cubed, depending how cheesey you want it.
Brownbeef,chopped onion, garlic in skillet. Add taco seasoning and cook awhile longer.
Meanwhile in stockpot combine all the rest of the ingredients except salt and pepper and velveeta cheeseAdd the beef when browned. Add the salt and pepper bring to boil and lower heat aqnd simmer 1 hour. Stirring frequently. Toward end of cooking time add velveeta cheese, stir and serve with desired accompaniments such as shredded cheese, onions,corn chips, sour cream and etc.Its better the second day!!!
