North Carolina style
My favorite
BBQ is North Carolina style. Pork shoulder smoked all night with hickory or pecan wood. then chopped up for sandwiches.
The sauce is pretty simple, basically vinegar and pepper, but I make mine with a good dousing of salt and some garlic powder. I use a mix of black pepper and cayenne. It was a little strong for some people so I started mixing it half and half with regular store bought sauce, usually cattleman's.
I used to own a BBQ restaurant and I sold a lot of North Carolina style but I still had to have the regular tomato based sauce and down here in South Carolina, because of the German influence still present here from the ninteenth century you have to aslo have a mustard based sauce. i don't know anywhere else in the country they have mustard based, yellow BBQ sauce but around here it's expected.
