Mesquite-Barbecued Corn On The Cob
Here’s an easy way to dress up a summertime favorite. The spicy seasonings are the perfect complement to fresh sweet corn.
Serves: 6
Ingredients:
4 ears corn, halved
2 tablespoons butter, softened
3 scallions, white and light green parts, sliced
1 teaspoon mesquite seasoning
Directions:
- Preheat the grill or broiler.
- Place the corn in a single layer in an extra heavy duty foil
cooking bag. Add the butter, scallions, and mesquite seasoning. Close
the bag. Fold tightly several times to seal. - Place the bag in a broiler pan. Grill or broil for 25 minutes, or
until sizzling hot, occasionally rotating and shaking the bag to
distribute the seasonings.
