Mesquite-Barbecued Corn On The Cob






Here’s an easy way to dress up a summertime favorite. The spicy seasonings are the perfect complement to fresh sweet corn.


Serves: 6


Ingredients:


4 ears corn, halved

2 tablespoons butter, softened

3 scallions, white and light green parts, sliced

1 teaspoon mesquite seasoning


Directions:


  1. Preheat the grill or broiler.
  2. Place the corn in a single layer in an extra heavy duty foil
    cooking bag. Add the butter, scallions, and mesquite seasoning. Close
    the bag. Fold tightly several times to seal.
  3. Place the bag in a broiler pan. Grill or broil for 25 minutes, or
    until sizzling hot, occasionally rotating and shaking the bag to
    distribute the seasonings.
