Mexican Chicken Pasta Salad
Mexican Chicken Pasta Salad Recipe Cool, refreshing salad with a Mexican flavor. This can be served as a side dish or entree. (Prep time includes 1 hour refrigeration time) 8 ounces penne pasta (2 cups uncooked) 2 cooked chicken breasts, diced (about 2 cups) 1 (8 3/4 ounce) can whole kernel corn, drained 1 small zucchini, cut in half lengthwise,then sliced 1-2 stalk celery, sliced thin 1 medium sweet red pepper, sliced 1 medium green pepper, sliced (optional) 4 green onions, sliced 1 can green chilies 1/2-1 cup shredded cheddar cheese (optional) 2 cups lettuce, chopped 1/4 cup chopped cilantro Dressing 3/4 cup mayonnaise 1/4 cup sour cream or yogurt 2 tablespoons ReaLime juice 2 teaspoons sugar 1/2 teaspoon salt 3/4 teaspoon cumin 1/2 teaspoon chili powder 6-8 servings Cook pasta according to package directions, drain, rinse, and set aside. Combine all vegetables in a large bowl. Combine all dressing ingredients; stir thouroughly. Pour dressing over salad; toss to coat. Chill 1 hour, then serve. Note: Instead of mixing lettuce into salad, you can layer it on top to keep it from wilting.

SWEET MACARONI SALAD (KEEPER)
Sweet Macaroni Salad A sweet out-of-the-ordinary dressing makes this macaroni salad special. I MADE THIS FOR MY SONS GRADUATION PARTY AND RAVE REVIEWS...sorry about caps... INGREDIENTS 1 package (16 ounces) elbow macaroni 4 medium carrots, shredded 1 large green pepper, chopped (I don't use) 1 medium red onion, chopped 2 cups mayonnaise 1 can (14 ounces) sweetened condensed milk 1 cup sugar 1 cup cider vinegar 1 teaspoon salt 1/2 teaspoon pepper DIRECTIONS Cook macaroni according to package directions; drain and rinse in cold water. In a large serving bowl, combine the macaroni, carrots, green pepper and onion. In a small bowl, whisk the mayonnaise, milk, sugar, vinegar, salt and pepper until smooth. Pour over macaroni mixture and toss to coat. Cover and refrigerate overnight. Yield: 14 servings.

Her bestest very pasta salad (LOL)
My BESTEST VERY pasta salad is very easy! 1-1Lb. box of tri pasta 1-large bottle of WishBone Robusto Italian Dressing. McCormicks Salad Supreme 1-small bag of mini carrots, chopped 1 each: red and yellow peppers, chopped 1-vadallia onion sliced thin and halved 1 brick Cracker Barrel Extra Sharp orange Cheddar Cheese 1-can of Jumbo black olives, sliced Mix all and chill. mmmm think I'll just go make one RIGHT NOW! Hope you enjoy!!!

Crab Louie Pasta Salad
Crab Louie Pasta Salad Pasta Bow Ties(cooked and drained)not rinsed Imitation crab or real crab celery diced green onion diced tomotoes diced Mix dressing in a separate bowl Dressing 1 bottle of Chili Sauce(Del Monte) mayonaise you'll want to add gradually because you definitely want more chili sauce flavor than mayo. Add to the above ingredients Chill and serve with french bread Hope you enjoy. Please let me know
