What You Can Do about Web Sites that Promote Animal Cruelty


The Humane Society of the United States frequently receives correspondence from individuals concerned about sites on the Internet that celebrate and encourage the exploitation of animals. In many cases, what appears to be illegal activity is actually protected under the law as free speech...


If you see a web site that promotes or glorifies animal cruelty or exploitation, take these steps:

1. Do not contact the person running the site. In many cases, creators of offensive web sites are encouraged by the negative attention they receive in response to their site. For this reason, we discourage people from e-mailing or otherwise contacting the individuals who run offensive web sites...

2. Contact the Internet Service Provider (ISP) hosting the site. In response to complaints they receive from concerned visitors, ISPs have in many cases removed sites because they determined that the sites' content violated the ISP's User's Agreement. Click here to find the ISP for a site that ends in .com, .net, or .org. Click here to find the ISP for a site in an international domain (such as .uk or .ch)...

3. Resist spreading the word. If you have concerns about a web site, contact your elected officials. Please do not contact friends and neighbors. Many well-intentioned individuals believe that the best course of action is to tell all of their friends and relatives about such web sites. Sometimes petitions against a site will be generated. Ultimately, such petitions or mass emails only increase the number of visitors to a web site, encouraging the site's creator...

If you think that an animal is being abused or neglected, it is important that you do something about it. Your involvement may be the animal’s only hope..

First, find out which agency is responsible for investigating and enforcing the anti-cruelty laws in your state, county, or town. This may be a local humane society or SPCA (Society for the Prevention of Cruelty to Animals) or a taxpayer-funded animal shelter (animal control). In jurisdictions without a humane society or animal-management department, citizens can call upon the police or sheriff’s department to enforce the law..

If the animal victim is not in immediate need of rescue, check state and local animal-protection laws by visiting your local library or city hall or by conducting an online search. Print out a copy of any laws that you believe are being violated, and be ready to cite these laws to authorities. In most states, causing an animal “unnecessary suffering” is illegal. That term can include everything from beating an animal to depriving him or her of clean water, food, or shelter..

If the animal is in a life-threatening situation, call authorities immediately. Follow up with them in a timely manner to determine their findings and course of action. If they do not respond right away, call your local animal rescue organization such as SPCA..
What to Look For

Physical Observations


• Does the animal have access to food, water and shelter?
• Is his/her area clean?
• Does the animal have apparent injuries that have not been treated?
• Does the animal appear to be overly aggressive or timid?
• Does the animal appear to be neglected?
**Neglect is vaguely defined as failure to provide an animal with necessary food, water, shelter, rest, sanitation, ventilation, space, or medical attention
• Did you witness the owner physically abuse the animal?

Gathering Evidence

Once you have determined which law-enforcement agency to contact (and ensured that the animal is not in imminent danger), provide authorities with a short, concise, factual, written statement, detailing the key points of what you have observed and giving dates, locations, and approximate times. Timely fact-gathering is crucial—the more time that passes, the greater the risk that specifics will be forgotten, witnesses will move, evidence will disappear, injuries will heal, etc. If you can, take pictures and date them; photographic or videotaped evidence fortifies your case, and short, factual, written statements from other witnesses will back up your observations..
Documenting the incident with photographs and videotape can be very helpful in prosecution. If such cruelty is not witnessed directly but is suspected, animal control authorities should be notified. Reports of animal cruelty should be as detailed as possible. Dates, times and circumstances should be noted and related to animal control authorities, who should also be made aware of any physical evidence (photos, video, etc.)..

Always keep a record of everyone you contact (official or otherwise), the dates of the contacts, and the content and outcome of your discussions. Never pass on a letter, photograph, or any documentation without first creating a copy for your file. Make it crystal clear to authorities that you wish to pursue this case and are willing to lend your assistance if necessary, and be sure to follow up! If you stay involved, they’re more likely to do the same.. Photobucket
Law-enforcement officials should inspect the animal visually, and if possible, conduct a hands-on field exam (referred to as “palpating” the animal) in order to find injuries or an otherwise unhealthy physical condition that may be obscured by the victim’s fur. Officials will often be fooled by a dog who “acts happy,” but manic or social behavior does not mean that the animal is safe; he or she may just be anxious to please or desperate for attention. A more thorough examination is necessary, and an injured or clearly endangered animal must not be left behind..

The crime scene should also be thoroughly inspected for any indication that abuse has occurred. Suspects and neighbors (potential witnesses) should be interviewed. If the investigator agrees that your complaint has merit, a warning may be issued, charges filed, a warrant served, and/or the animal(s) removed..

Pursuing Your Case

Persistence has saved countless animals from abusive people. If you are unable to get satisfaction from law-enforcement officers, go straight to their supervisors. If necessary, appeal to local government officials, such as the mayor, prosecutor, city council members, or county commissioners. A simple call to the media (TV and print) in your area can move mountains. News coverage often forces officials to act and can also scare the abuser into stopping the cruel behavior. News coverage may also inspire viewers who have seen similar acts to step forward and share their own accounts.

If you have personally witnessed an act of cruelty, you can go to your local magistrate or police commissioner and swear out a warrant to summon the abuser to court. Expert witnesses can be very helpful—a veterinarian, for example, can sign a statement that it is his or her “expert opinion” that a dog suffers if swung by a leash, deprived of food, etc. If you know a sympathetic veterinarian, seek his or her assistance, and let officials know that you have expert support..

A person reporting animal cruelty should ask for the name of the animal control officer and ask what action is planned. Follow up, and report any change observed in the animal's condition and situation. A person reporting animal cruelty need not be concerned with confidentiality. An investigating officer is not likely to identify the source of the complaint. Should the keeper of the animal be prosecuted, witnesses may be called to testify, but the immediate condition of the animal should outweigh concerns about having to testify months from now. You may be that animal’s only hope of survival.

There is no delicate way to put it: foie gras is an unspeakably vile product.
After writing to Harvey Nichols and meeting with company officials – and with the help of our campaign hero, Sir Roger Moore – the high-end department store has agreed to drop foie gras from its restaurant menus. This means that Harvey Nichols is now a completely foie gras–free retailer. This latest development follows on our 2007 success in getting the store to remove the cruel product from its shelves. Please know that important victories like this one can only be achieved with the support of caring PETA members like you!
Foie gras is a "delicacy of despair". This "torture in a tin" is made by ramming a metal pipe down frightened birds' throats and pumping enormous amounts of grain into their stomachs, causing the birds' livers to become hideously engorged. This painful overfeeding process can even cause the birds' internal organs to rupture while the animals are still alive. Eventually, the birds' diseased livers will be turned into foie gras.
Let me describe the process of producing foie gras so that you can pass the information along to friends, families, colleagues and restaurateurs:
Deprived of water to swim in and the opportunity to stretch their wings, fly or do anything else that is natural and important to them, ducks and geese who are used to produce foie gras suffer from fear, severe frustration, stress, skeletal disorders, respiratory problems, behavioral issues and everything else imaginable. Crammed into tiny pens or wire-mesh cages fouled with feces and blood, the birds have pipes shoved down their throats several times a day and are force-fed approximately 2 kilograms of grain, maize and fat. The pipes sometimes puncture the birds' throats, causing intense pain and making it impossible for them to drink. Powered by hydraulic pumps, the pipes that blast food into the bird's stomachs can cause severe tissue damage and internal bleeding. Birds have been known to shake all over in fear of their next force-feeding assault. The animals become sick and are often unable to move, and some may be eaten alive by rats and maggots.
Those who survive develop a condition called "hepatic steatosis" in which their livers swell to up to 10 times their normal size. Finally, after several weeks of this torment, the birds are killed and their livers are sold as foie gras.
There is no delicate way to put it: foie gras is an unspeakably vile product.
When people find out how much suffering goes into even the tiniest portion of foie gras, most back our campaign wholeheartedly. That was the case with Sir Roger Moore, who became a leader in the fight against foie gras after watching a PETA video. As you can see, PETA's campaign against foie gras is working. An ever-growing number of consumers, restaurants, airlines and other businesses are saying "no" to this disgustingly cruel food.
Harvey Nichols joins another major retailer, Selfridges, which has also agreed to stop selling foie gras following pressure from PETA and our affiliates. His Royal Highness Prince Charles has banned foie gras from all Royal residences, and a number of local authorities – including York, Bolton and Stockport councils – have banned it from council events. Earlier this year, the organisers of the Brit Awards also dropped foie gras from their menu as a direct result of PETA’s campaigning. The British Academy of Film and Television Arts soon followed suit, pulling foie gras from its menu and pledging never to serve the cruel product at its restaurant or any of its events. PETA US and its activists helped push the state of California to ban the production of foie gras by 2012. Also, newly crowned Formula 1 World Champions Sebastian Vettel and Red Bull Racing both refuse to eat or serve foie gras, and AirAsia – Malaysia's leading airline – will never again serve foie gras at its events.
But even now, the industry defends its ghastly creation. That's why, as we choose the next target of our campaign against foie gras, we need you by our side.
We're pushing hard for the day when the sale of foie gras will be banned outright in this country and when the production of foie gras will be banned across Europe. But as with all our campaigns, our success in changing the hearts of government officials, corporate leaders and the public depends on the support of committed PETA members like you.

Egg Substitute - Why not "free range"?

This is something we're often asked. A lot of people don't realise that the production of free range eggs still involves animal cruelty. For a start, half of all chicks are killed because they are males (and hence no good for laying eggs). Sadly, the females don't fare much better. They may continue to live in cramped conditions in large sheds, suffer more disease than battery hens, and still undergo the stress of transportation and slaughter when their egg laying declines.

Just like hens in battery cages, free range hens may have the tip of their beak cut off to stop them fighting. This is an agonising procedure which can leave the hen in pain for days.

In addition, the environmental and health arguments against eggs still apply.

Making the Change

So - all the eggs have gone and somebody wants a cake. Don't panic! It's actually very easy to make egg-free cakes, quiches, mousses and other traditionally eggy dishes. Most vegan cookbooks contain plenty of such recipes. Meanwhile, a lot of vegetarian cookery books rely heavily on eggs - especially for cakes, pastries and puddings. These recipes can all be adapted and the following should provide you with some ideas.

Egg Substitutes
Eggs are used to bind a dish and, when whipped, may also incorporate air making a cake or pudding very light. Vegan egg replacement powders are available from health food shops. This can be useful, especially for tricky foods like meringues. However, many recipes can be adapted using one of the suggestions below. Just remember to bear in mind the final dish... you can't use banana as a substitute when making a quiche!

instead of 1 egg, you can use...

* 1 tbsp gram (chick pea) or soya flour and 1 tbsp water
* 1 tbsp arrowroot, 1 tbsp soya flour and 2 tbsp water
* 2 tbsp flour, 1/2 tbsp shortening, 1/2 tsp baking powder and 2 tsp water
* 50g (1oz) tofu blended with the liquid portion of the recipe
* 1/2 large banana, mashed
* 50 ml (1oz) white sauce

tips on raising agents...

* use self raising flour
* add extra oil and raising agent (e.g. baking powder)
* use about 2 heaped tsp baking powder per cake
* instead of baking powder, use 3/4 tsp bicarbonate of soda and 1 dssp cider vinegar (good for chocolate cakes)
* try sieving the flour and dry ingredients, then gently folding in the liquid to trap air

alternative binding agents...

* soya milk
* soya dessert - vanilla, chocolate, strawberry...
* custard - see below
* mashed banana
* plain silken tofu
* soya cream
* sweet white sauce (soya milk, vegan margarine, sugar and cornflour)
* agar agar

Recipes
Batter

For savoury pancakes or deep frying combine soya flour, plain flour, vegetable oil, soya milk, baking powder and salt. For sweet pancakes, omit the salt and baking powder. Use as normal battter. It will keep for 1-2 days in fridge. See our pancake recipe just down the page.

Burgers won't fall apart without the egg. Use gravy, mashed potato, oil or yeast extract (e.g. Marmite or Natex) mixed with a little hot water to add moisture. Add breadcrumbs, flour or oats for a drier texture. See the rissole recipe further down the page.

Custard
Follow your usual recipe, but use soya milk and check the custard powder is vegan. Add a little vanilla essence to taste. Try our delicious chocolate banana custard cake at the end of the page.

Glazes

Brush with soya milk.

Mousse

Make your own creamy desserts using plain silken tofu, golden or maple syrup and a flavouring such as chocolate or lemon.

Pancakes

4 oz (115g) plain white or wholemeal flour
2 oz (55g) soya flour
13 floz (375 ml) soya milk
2 tsp vegetable oil

1. Sieve the flours into a bowl. Gradually whisk in the soya milk to make a smooth sauce, then mix in the oil. Place in fridge for 30 minutes.
2. Drop 1-3 tbsp of the mixture in to a frying pan containing hot oil. When one side is cooked, flip over and cook the other side.
3. Remove from pan and serve with sugar and lemon juice.

Other fillings include maple syrup, chocolate sauce, soya cream, soya ice cream, stir fry vegetables drizzled with peanut sauce, vegan cream cheese and herbs, tofu, leek and mushroom.

Scrambled 'Egg' on Toast

10 oz (285g) plain tofu
2 tbsp vegetable oil
1 tsp turmeric
1 tsp herbs, chives or parsley
Salt and pepper to season
Toast spread with margarine

1. Mash the tofu evenly and fry it in the vegetable oil until evenly cooked.
2. Add the turmeric, herbs and season to taste. Cook a further few minutes. Serve on crispy toast spread with margarine.

You can also add fried mushrooms, sweet or hot peppers, onions, garlic... anything you like... to vary the recipe.

Red pepper, Courgette and 'Bacon' Mini-Quiche

Pastry:
12 oz (340g) plain wholemeal flour
6 oz (170g) margarine
Cold water to bind

Filling:
2 medium onions, finely chopped
2 medium courgettes, chopped small
2 medium red peppers, chopped small
1 lb (450g) tofu
1/2 pkt Redwoods cheatin bacon, chopped small - optional
1 level dssp mixed herbs
1 1/2 dssp tomato puree
1 level tsp salt
Generous pinch black pepper and ginger
1 pack of vegan cheese
Enough soya milk to make a paste

1. Preheat the oven to 200C/400F/gas mark 6.
2. First make the pastry by rubbing the margarine into the flour until it resembles fine breadcrumbs. Add enough water to make a dough which is soft, but not sticky. If possible place in a plastic bag in the fridge for half an hour.
3. Roll out the pastry and use a cutter (about 2.75 inch) to cut the pastry into rounds. Place them all onto bun trays.
4. Now make the filling: fry the onions for a few minutes then add the courgettes and red pepper. Fry until they begin to soften.
5. Cube the tofu and chop the cheatin bacon into bits. Add the tofu, cheatin bacon, herbs, tomato puree and condiments and fry a bit longer.
7. Take off the heat and add the cheese and enough soya milk to make a paste.
8. Place about a heaped teaspoon into each mini-quiche and bake for 20 minutes or until golden. Makes about 50 delicious mini-quiches.

Yorkshire Puddings

3 oz (85g) white fat
4 oz (115g) self raising flour
Pinch fine salt
1/2 pint (280 ml) soya milk
2 oz (55g) whole egg replacer

1. Preheat the oven to highest temp: 220C/425F/gas mark 7.
2. Put 1 tsp fat in each compartment on a bun tray with 12 compartments. Put the tray near the top of the oven with a baking tray underneath to catch drips.
3. Mix the flour and salt with a hand whisk very thoroughly. Mix the egg replacer into a smooth paste with about 2 fluid ounces/60 ml of water. Mix this in with the milk in a jug.
4. Once it is ready to go in the oven i.e when the oven and fat are very hot (this will take at least 10 mins) add half of the liquid to the dry mix. Mix it into a smooth batter (paste) then add the remaining liquid. It should be like cream, if it's too thick add more liquid.
5. Transfer the batter to a jug and fill each compartment to the top. It should sizzle as it goes in. Do this as quickly as possible before the heat gets out. Cook for 15-20 mins.

Brazil and Hazel Nut Rissoles

1/2 tsp yeast extract
1 tsp tomato puree
2 tbsp hot water to bind
31/2 oz (100g) ground brazil nuts
31/2 oz (100g) ground hazelnuts
31/2 oz (100g) wholemeal breadcrumbs
1 tbsp mixed herbs
Ground nuts to coat

1. Dissolve the yeast extract and tomato puree in the hot water. Mix with the dry ingredients and form into small ball shapes. Roll in ground nuts to coat. Fry until golden brown.

Vegan Mayonnaise

4 tbsp soya milk
1/2 tsp grain mustard or mustard powder
1 tbsp lemon juice
2-3 tsp cider vinegar
1/2 clove garlic, crushed
7 fl oz (200 ml) vegetable oil
salt and pepper

1. Blend together the soya milk, mustard, lemon juice, cider vinegar and garlic.
2. Keep the blender running and add the oil gradually, in a thin stream. By the time you have added all the oil the mayonnaise should be thick.
3. Season to taste and keep in the fridge until needed. It will keep for a few days.

Ann's Blooming Lovely Chocolate Orange Cheesecake

3-4 oz (75-100g) vegan margarine
9 oz (250g) vegan digestive biscuits
1 lb (450g) firm tofu, mashed
juice of one and a half oranges
1 banana or rind of 1 orange
2 oz (55g) cocoa powder
3 tbsp oil
2 oz (55g) sugar
2-4 tbsp soya milk

1. Base: Melt the margarine gently in a saucepan. Crush the digestive biscuits until they resemble fine breadcrumbs. Remove margarine from heat and mix in biscuit crumbs. Press into 11 inch flan tin.
2. Topping: Mix the tofu, orange juice, banana or orange rind, cocoa, oil and sugar to a smooth consistency: preferably in a food processor. If it doesn't mix well, add a few tablespoons soya milk. Place over the base and smooth the top. Cook for 30-40 minutes at 175C/350F/gas mark 4. Remove from oven, cool and chill overnight in fridge. Add topping of your choice e.g. slices of orange or grated chocolate.

Chocolate Sponge Cake

For other flavoured sponges use - for example - lemon juice and rind or vanilla instead of cocoa

6 oz (175g) self raising flour
2 heaped tsp baking powder
1 oz (25g) cocoa
3 oz (75g) sugar
4 1/2 fl oz (125 ml) melted vegan margarine
11 1/2 fl oz (325 ml) cold water

1. Place all ingredients in a bowl and stir. Divide the mixture between two well greased round tins. Bake at 190C/375F/gas mark 5 for 30 minutes or until a cocktail stick inserted into the middle of the cake comes out clean. Cool on a wire rack.

2. Make chocolate or coffee flavour "butter" icing using 6 oz (170g) of sieved icing sugar to 3 oz (85g) vegan margarine, plus flavouring. Use some of this to sandwich the cakes together, and the rest to decorate the top. Add plain chocolate drops, grated chocolate, chocolate covered coffee beans, vegan "cream", alcohol etc as desired!

Spiced Apple Cake

1 lb (445g) cooking apples, peeled and sliced
4 oz (115g) vegan margarine
4 oz (115g) raw cane sugar
6 oz (170g) sultanas
2 oz candied peel
2 level tsp bicarbonate of soda
1 tbs boiling water
8 oz (225g) wholemeal flour
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground allspice

1. Cook the apples in the minimum of water. When they are soft, mash to a puree and drain very well.
2. Cream together the margarine and the sugar, then add the apple puree to make a thick mixture. Stir in the fruit.
3. Mix the bicarbonate of soda with the water and add this to the mix. Sift together the flour and spices and mix in.
4. Pour it into a very well greased cake tin, smooth the top and bake at 350F/180C/gas mark 4 for 45 mins to 1 hour.

Chocolate Banana Custard Cake

Sponge cake
12 oz (275g) white self-raising flour
1 tsp bicarbonate of soda
8 oz (225g) caster sugar
8 fl oz (250 ml) vegetable oil
5 fl oz (150 ml) orange juice
5 fl oz (150 ml) water
1 1/2 tsp vanilla extract

Custard
Custard powder
1-2 tbsp sugar to taste
1 pint soya milk
1/2 tsp vanilla essence

Chocolate sauce
3 1/2 oz (100g) plain chocolate
4 scoops margarine
3 heaped tbsp icing sugar
1-2 spoons soya cream (or banana OY shake)

~ 2-3 bananas

1. First make the sponge cake.
i. Preheat the oven to 160C/325F/Gas 3. Grease 2 x 8-8 1/2 inch tins.
ii. Sift the flour and bicarbonate of soda into a large bowl. Add the sugar.
iii. In another bowl, add the oil, orange juice, water and vanilla extract. Whisk together to combine, then pour the mixture into the dry ingredients and mix well to a smooth, fairly wet batter.
iv. Pour the mixture into the prepared cake tins and bake in the preheated oven for about 30 minutes, until the cakes start to shrink away from the sides of the tins and spring back when lightly pressed in the centre.
v. Leave the cakes to cool in the tins for 5 minutes, then turn out to cool on a wire rack.
2. Next make one pint of custard as per instructions on the packet. Stir in vanilla essence at the end and leave to cool.
3. To make the chocolate sauce melt the chocolate with the margarine, icing sugar and soya dream.
4. Once the sponge has cooled crumble it into a flat form, in a dish approximately 12 x 8 inch. Then add the cooled down custard, cut a thick layer of banana on top and finally pour the still liquid chocolate sauce which will thicken up over night. Chill for 2-3 hours then serve.



How to Substitute Eggs

Making any dessert or egg-inclusive recipe vegan is delightfully easy! Here's a guide to what to use and why some attempts usually fail. Let's start with some products often used to replace eggs



Ener-G egg replacer is lauded as the vegan hero among egg replacers. Ener-G is not only vegan and is free of gluten, wheat, casein, dairy, egg, yeast, soy, nut, and rice. However, from experience I would advice using this egg replacer in conjunction with other binding agents that will be listed below.

Flaxseed, when ground up as well as Baking Powder or Baking Soda can also be used to fluff up a baked food.




The problem with emulsifiers like Ener-G and flaxseed is they may not bindthe product, so gas fills the food but escapes and leaves the product flat. To bind the product, try mixing the emulsifier with something starchy like potato flour or bananas (which also emulsify)

For a sweet egg replacer, try applesauce. You may want to experiment with this or get a recipe as the sauce will overcompensate with the water recommended by the recipe and your cake or muffins may come out mushy and wet.

In general, follow these egg-conversion ratios for trying out these options



Ener-G Egg Replacer - follow directions on box.

2 tbsp cornstarch = 1 egg

2 tbsp arrowroot flour = 1 egg

2 tbsp potato starch = 1 egg

1 heaping tbsp soy powder 2 tbsp water = 1 egg

1 tbsp soy milk powder 1 tbsp cornstarch 2 tbsp water = 1 egg.

1 banana = 1 egg in cakes.



1 tbsp milled flax seed and 3 tbsp water = 1 egg. Light, fluffy cakes
If your recipe calls for cream or milk, there are plenty of vegan options available and yes, you can use soy/rice/oat/hemp/almond milk! For creamier recipes, look for Silk brand Creamer.

For recipes, I highly recommend books by Vegan Dessert guru Isa Chandra Moskowitz. Here's a link to her blog where you can find updated recipes and Moskowitz's books ,Veganomicon", and my personal favorite, "Vegan with a Vengeance"
