The long road is often the least appealing. In our fast-paced world today, it seems so many of us so often look for the quickest solution, or the short answer. My wife could tell you I am not one for the short answer. She has often asked me if I could just give her a simple yes or no and leave it at that. With me, the explanation that goes with the yes or no may be repetitive, and overly lengthy. But, my quirks aside, in life the best things may call for repetition, and often develop over time. Consider how we love others, and how we might love others toward the Lord. With the right amount of prayer, time, and love, we can help others let go of the short answers and turn toward THE Answer. But we ourselves must remember that even though our efforts may feel repetitive and lengthy, the harvest indeed will come if we do grow weary, if we do not faint, and if we do not give up.

Kahlua Mudslide drink

Ingredients to use:

0.5 oz   Coffee Liqueur
1 oz   Cream
0.5 oz   Irish Cream
0.5 oz   Vodka
 
Directions:
Fill a shaker half full with ice cubes. Pour all ingredients into shaker and shake well. Strain drink into a Cocktail glass and serve.

Chili con Carne

yield: Makes 8 servings
active time: 1 hour
total time: 11 hours 45 minutes

Ingredients
4 tablespoons vegetable oil, divided
4 pounds well-trimmed boneless beef chuck (from about 5 pounds), cut into 1/2-inch cube
2 medium onions, chopped
1 head of garlic (about 15 cloves), peeled, chopped
1/2 cup ground ancho chiles
2 tablespoons ground cumin
1/2 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 12-ounce bottle dark beer
1 28-ounce can diced tomatoes in juice
2 teaspoons dried oregano
2 teaspoons coarse kosher salt
2 tablespoons tomato paste
3 tablespoons masa (corn tortilla mix)
Coarsely grated sharp cheddar cheese
Chopped green and/or red onion
Chopped fresh cilantro
Diced fresh tomatoes (optional)
Sour cream (optional)


Ingredient info: Ground ancho chiles are available in the spice section of super markets and at Latin markets. Masa (or masa harina) is sold at super markets and Latin markets.

Preparation
Heat 1 tablespoon oil in large pot over medium-high heat. Add 1/3 of beef; sprinkle with salt. Cook until browned, stirring occasionally, about 3 minutes. Using slotted spoon, transfer beef to large bowl. Repeat 2 more times with 2 tablespoons oil and beef.

Reduce heat to medium. Add 1 tablespoon oil and onions. Sauté until soft, 8 to 10 minutes. Add garlic; stir 2 minutes. Add ground anchos, cumin, allspice, cinnamon, and cloves; stir until fragrant, about 1 minute. Add beer; stir 1 minute, scraping up browned bits. Return beef and juices to pot. Add tomatoes with juice, 2 cups water, oregano, and 2 teaspoons coarse salt. Bring chili to boil. Reduce heat to low, cover with lid slightly ajar, and simmer gently until beef is just tender, 1 3/4 to 2 hours. Cool 1 hour, then chill uncovered until cold. Cover; chill overnight.

Spoon fat from chili. Bring chili to simmer over medium heat. Stir in tomato paste. Sprinkle masa over; stir to blend. Simmer uncovered until thickened and beef is very tender, stirring often, and adding more water by 1/4 cupfuls if too thick, about 30 minutes.

Divide chili among bowls. Top with garnishes and serve.

Honey-Roasted Onion Tart

yield: Makes 6 appetizer servings
active time: 1 hour
total time: 1 hour 40 minutes


Ingredients
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
3 bacon slices, cut crosswise into 1/2-inch pieces
1/4 cup honey
1/4 cup dry white wine
2 large sweet yellow onions (about 1 1/2 pounds), cut into 1/4-inch-thick rounds
Nonstick vegetable oil spray
3/4 cup crème fraîche
1/2 teaspoon fine sea salt
1/8 teaspoon freshly grated nutmeg
1 teaspoon fresh thyme leaves

Preparation

Position rack in top third of oven and preheat to 375°F. Using lightly floured rolling pin, roll out puff pastry on lightly floured surface to 14x10-inch rectangle. Fold 1/2 inch of pastry edges in toward center on all sides, forming 13 x 9-inch rectangle. Transfer pastry to large rimmed baking sheet. Press firmly on pastry edges with fork to form rim. Chill crust.

Cook bacon in small skillet over medium heat until brown and crisp. Transfer to paper towels to drain. Reserve 1 tablespoon bacon drippings from skillet.

Whisk honey, wine, and reserved 1 tablespoon bacon drippings in large bowl. Add onions; toss to coat. Coat another large rimmed baking sheet with nonstick spray. Spread onion mixture in even layer on sheet. Roast 30 minutes. Turn onions over, allowing rings to separate. Roast until onions are caramelized, turning often for even browning, 30 to 45 minutes. Remove from oven; cool onions slightly.

Increase oven temperature to 400°F. Mix crème fraîche, sea salt, 1/4 teaspoon black pepper, and nutmeg in small bowl. Using offset spatula, spread crème fraîche over crust to folded edge. Arrange onions atop crème fraîche. Sprinkle with bacon. bake tart until crust is light golden brown and topping is bubbling, 20 to 25 minutes. Sprinkle with thyme and serve.

Chicken Taquitos

yield: Makes 12 servings

Ingredients:
1 store-bought whole roasted chicken
1 cup favorite barbecue sauce
1 (16-ounce) container sour cream
1 (4 1/2-ounce) can chopped green chiles
2 cups frozen corn, thawed
1 small red onion, diced
1 clove garlic, peeled, crushed, and minced
1 cup shredded smoked Gouda cheese
2 cups shredded Monterey Jack cheese
1 teaspoon cumin
1 teaspoon chile powder
1 tablespoon freshly ground black pepper
24 flour tortillas
1 cup vegetable oil, for frying
Favorite salsa and guacamole, for serving

Preparation

In a large bowl, debone the chicken and shred the meat. Add the barbecue sauce, sour cream, chopped green chiles, corn, red onion, garlic, both cheeses, and spices. Toss well.

In a large pan over moderate heat, warm 1/4 cup of oil until it sizzles. Meanwhile, put 2 tablespoons of the chicken filling into each tortilla, roll, and secure with a toothpick. Working in 4 batches (wipe the pan clean and add 1/4 cup fresh oil between batches), pan-fry until the tortillas are golden brown and the mixture is warm, about 3 minutes per side. Drain on a paper towel, transfer to a platter (or serve 2 per plate), and serve with your favorite salsa and guacamole.

Chocolate Cherry Biscotti


2 tablespoons unsalted butter, softened
3/4 cup Demerara sugar*
2 large eggs
1 teaspoon vanilla extract
1 2/3 cups all-purpose flour
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon kosher salt
3/4 cup dried tart cherries

*Demerara sugar, which is raw cane sugar, is available at natural food stores or online at igourmet.com.


Preparation

Preheat oven to 350°F. Spray large cookie sheet with cooking spray or brush lightly with vegetable oil.

In large bowl using an electric mixer, beat together butter and sugar on high speed until light and fluffy, about 2 minutes. Add eggs, one at a time, beating well after each addition. Add vanilla and beat briefly to incorporate.

In medium bowl, whisk together flour, cocoa, baking powder, and salt. Add to butter mixture and beat on low speed just until incorporated, kneading by hand at the end. Add cherries and beat on low speed just until incorporated.

Turn dough onto work surface and if necessary, knead briefly to incorporate any loose cherries. Divide in half and roll each half into 8-inch-long (approximately 1 1/2-inch-wide) log.

Carefully transfer logs to prepared baking sheet and bake until tops are firm to touch and bottoms are light golden, about 25 minutes. Cool on baking sheet on rack 1 hour. Reduce oven temperature to 250° F. Using serrated knife, cut logs on a slight diagonal into 12 (1 1/2-inch-thick) slices. Return biscotti to baking sheet, cut-sides down. Bake, turning over once, until dry and crisp, about 45 minutes. Transfer to rack and cool completely.

Makes: 6 servings
Prep Time: 20 minutes
Cook Time: 20 minutes
Ready In: 40 minutes

 This dessert can be served plain and is the perfect filing for your King Cake or homemade doughnuts.

Ingredients
2 cups milk
4 eggs
1 tsp vanilla
2 tbsp granulated sugar
3/4 cup granulated sugar
1/3 cup boiling water
2 tbsp gelatin
1/2 cup cold water
 
Directions
Scald milk (milk heated almost to boiling) and pour over egg yolks, beaten slightly with the two tablespoons of sugar. Caramelize the 3/4 cup of sugar and dissolve in boiling water. Add to the soft custard. Add gelatin which has been softened in the cold water. Strain into a bowl and set in ice water. When it begins to thicken, add vanilla and egg whites beaten stiff. Chill. Serve plain or topped with whipped cream.

Parrots tend to be "left handed," study finds

SYDNEY (Reuters) - Parrots, like humans, choose to use one side of their body more than the other, with more of them left handed -- or, more precisely, left footed than anything else.

Some species even try out both before deciding on one side.

Australian researchers found that virtually all the parrots they studied prefer to use either their left eye and left foot, or right eye and right foot.

"Basically, you get this very close relationship with the eye that they use to view the object and then the hand that they use to grasp it, and it's very consistent across all the species except a couple," said Calum Brown, a senior lecturer at Macquarie University in Sydney, who led the study.

"In some species, they're so strongly right or left handed at the species level that there's effectively no variation."

In the study, published in "Biological Letters," Brown and his colleagues studied roughly 320 parrots from 16 different Australian species to see which eye they used to view potential foods.

Ultimately, they found that roughly 47 percent were left handed, 33 percent right handed, and the remainder ambidextrous.

In addition, in some cases young birds appeared to experiment with both sides before finally settling on one.

"With Sulphur-crested cockatoos -- every single individual we've seen is left-handed. But when you see the juveniles which have just fledged, they're experimenting with both hands, all the time," Brown said.

"They eventually settle on using their left hands."

The idea of handedness in humans is tied to the use of one hemisphere of the brain over another, known as "lateralization." In the case of the parrots, this appeared to be an advantage regardless of whether the left or the right side dominated.

"It's quite obvious that in terms of direct foraging, as well as more complicated problem-solving situations, that if you're very strongly lateralized, irrespective of whether you're right or left handed, you tend to be better at this sort of task," Brown said.

He added that lateralization allowed much more efficiency, the way a computer with two processors can do two things simultaneously and effectively multi-task.

"We think that's possibly what's going on with parrots," he said.

It was Valentine's day and Jim and Danielle's first date.  They sat in the darkened cinema waiting for the film to start. Devoted and Determined During World War II my parents had planned a romantic Valentine’s Day wedding. Suddenly my father, then stationed at Camp Edwards in Massachusetts, received orders to prepare to ship out, and all leaves were canceled. Being a young man in love, he went AWOL. He and my mother were married four days earlier than originally planned and he returned to base to an angry sergeant. REMINDERS FROM GOD:

The Thing I Fear

"What I feared has come upon me; what I dreaded has happened to me."1

A Daily Encounter reader writes, "My new husband is in the military and recently left for his first deployment. I have been feeling very sad and mournful about his leaving. I felt like the Lord showed me that I feel abandoned. I know this is an irrational feeling, because I know he has been working so hard to get to this place for two years. He and I both feel like this is a calling on his life. I knew when I married him that he would be leaving for months at a time. But now that it is here, I can't help but feel like his love for me is smaller than his love for his job. What steps should I take to deal with my abandonment issue?"

Dear Jane (not her real name), chances are your abandonment issue has little, if anything, to do with your husband being away. His absence has merely triggered unresolved issues from your past—in all probability (as you also implied) going back to your early relationship with your emotionally-uninvolved father and then reinforced by your former marriage. If this is true, you need effective counseling to help you resolve your "father wound." If you don't resolve this issue, you will be troubled by it in some way for the rest of your life. Furthermore, it is very important that you don't project this feeling onto your husband, or the thing you fear you may unconsciously make to happen.

While your feelings of abandonment may seem to be irrational, they are actually logical in that they are authentic feelings based on your past experiences. This is why it is so important not to project these emotions onto your present situation and blame your husband for the way you feel. For those of us who have an abandonment issue, we need in-depth therapy to help us resolve our problem. It seems to me that if we have a "father wound," we need to resolve this with a trusted male therapist and, if a "mother wound," with a female therapist.

Unfortunately, there are no simple quick-fix answers. True, God can heal quickly, but more often than not he heals these wounds through healing relationships. That is, as we were damaged in damaging relationships, we are healed in healing relationships. The healing takes place over time as we are connected to a safe, loving, non-threatening counselor or very understanding friend who gets to know all about us and loves and accepts us just as we are—unconditionally and without strings attached. Little by little this experience reprograms our feelings to produce in us what counselors call "object constancy." In other words we become secure in our love with our loved ones so that when we are separated from them, we no longer feel abandoned nor suffer from separation anxiety.

To start, tell God exactly how you feel and ask him to lead you to a safe counselor and to the help you need to overcome your abandonment issue. And don't ever give up praying for and getting the help you need until your abandonment issue/father wound is healed. Until you are freed from this past issue, you will not be free to fully live and fully love.*

Suggested prayer: "Dear God, thank you that your love for me is totally unconditional and everlasting. Help me to feel secure in your love and get the help I need to feel secure in my human relationships knowing that I have 'object constancy.' Thank you for hearing and answering my prayer. Gratefully in Jesus' name. Amen."

Why Are Some Dogs More "Anxious" Than Others and What Can You Do?

Do you Some dogs are very nervous and "anxious" - especially when they are alone.

Dogs are social animals that form strong bonds with people, so it is not surprising that they may feel somewhat anxious when separated from their social group.

Most dogs adapt well to the typical daily separation from their owners.

Unfortunately, problems can arise when overly dependent dogs develop a dysfunctionally strong attachment to their owners. The dog with separation anxiety shows signs of distress when left alone and over-attachment when the owner is present.

Separation anxiety may be manifested as destruction of the owner's property and other behaviors that may be harmful for the dog or annoying for people sharing the dog's immediate environment.??

It is important to realize that dogs with separation anxiety are not doing these things to get even with the owner for leaving, out of boredom, or due to lack of obedience training. These dogs are not being destructive out of "spite" or boredom.

What can you do if your dog suffers from this problem?

The first step in treating separation anxiety is to break the cycle of anxiety. (For a really good article on severe problems - go to petplace.com and search "Separation Anxiety". This is a great article.)

Here are a few tips:

1.    For dogs with separation anxiety, every time their owner leaves they become anxious and the distress they feel is reinforced until they become absolutely frantic every time they are left alone. You should give your dog an acceptable item to chew, such as a long lasting food treat, only when you go out. The goal is to have the dog associate this special treat with your departure. A great treat toy is the Zogoflex Tux. It has a cavity that you can fill with peanut butter, soft cheese or medium-sized treat bones. Your dog will have to work at removing all of the treat, so it will pleasantly occupy his time.

2.    Another good option for some dogs is a "Doggie Daycare" or hiring a pet sitter. This is often a better alternative for dogs that are initially resistant to treatment. It can be expensive, but prices vary.

At the end of the tax year, Revenue Canada office sent an inspector to audit the books of a local hospital. Southwest Cheese Soup

1  package (1 lb) pasteurized prepared cheese product loaf, cut into cubes 
1  can (15.25 oz) Green Giant whole kernel corn, drained 
1  can (15 oz) Progresso black beans, drained, rinsed 
1  can (10 oz) diced tomatoes with green chiles, undrained 
1  cup milk 
 Fresh cilantro sprigs, if desired 
  
  DIRECTIONS

In 4-quart Dutch oven, mix all ingredients except cilantro.
Cook over medium-low heat, stirring frequently, until cheese is melted and soup is hot. Garnish each serving with cilantro.

Quick Chicken Quesadillas

Prep Time  25 Minutes
Total Time 25 Minutes
Makes 4 quesadillas

6  oz refrigerated cooked Southwest-flavor chicken breast strips (from 9- or 12-oz package) 
1/2  cup Old El Paso Thick 'n Chunky salsa 
1  package (11 oz) Old El Paso flour tortillas for burritos (8 inch; 8 tortillas) 
 Cooking spray 
2  cups finely shredded Colby-Monterey Jack cheese blend (8 oz) 
1/4  cup sour cream 
  
DIRECTIONS:  

Cut chicken into bite-size pieces. In small bowl, mix chicken and salsa.
Spray 1 side of 1 tortilla with cooking spray; place sprayed side down in 10-inch nonstick skillet. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese. Top with another tortilla; spray top of tortilla with cooking spray.
Cook uncovered over medium heat 4 to 6 minutes, carefully turning after 2 minutes, until golden brown. Repeat with remaining tortillas, chicken mixture and cheese. To serve, cut quesadillas into wedges. Serve with sour cream and, if desired, additional salsa.

Grilled Jerk Chicken Kabobs

Prep Time 25 Minutes
Total Time 1:25 Hr:Mins
Makes 6 kabobs

6  boneless skinless chicken thighs (about 1 1/4 lb), cut into 1-inch cubes 
1/3  cup jerk seasoning sauce 
1  cup canned or fresh pineapple chunks 
2  medium red bell peppers, each cut into 12 wedges 
1/2  medium onion, cut into 12 wedges, separated into chunks

DIRECTIONS:
In shallow glass or plastic dish or resealable food-storage plastic bag, mix chicken and 1/4 cup of the jerk sauce. Cover dish or seal bag; refrigerate 1 hour to marinate, stirring occasionally.
Heat gas or charcoal grill. Drain chicken; discard marinade. On each of 6 (15-inch) metal skewers, thread chicken, pineapple, bell peppers and onion alternately, leaving space between each piece. Brush vegetables with remaining jerk sauce.
Place kabobs on grill over medium heat. Cover grill; cook about 15 minutes or until chicken is no longer pink in center and vegetables are tender.

1 1/2  cups fresh baby carrots 
2  medium potatoes, peeled, cut into 1-inch pieces 
1  medium stalk celery, cut into 1-inch pieces 
1  (1.5-oz.) pkg. beef stew seasoning 
1  lb. beef stew meat 
1  cup water 
1  cup Green Giant Niblets Frozen Corn 
1  cup Green Giant Frozen Cut Green Beans 

In 3 1/2 to 4-quart slow cooker, layer carrots, potatoes and celery. Place stew seasoning on waxed paper or in plastic bag. Add beef; coat with seasoning. Add beef to slow cooker; sprinkle with any remaining seasoning. Add water. Layer frozen corn and green beans on top.
Cover; cook on low setting for 8 to 10 hours. Stir stew before serving.

How to Use "Who" and "Whom" Correctly
  
Who or Whom?

The correct use of who and whom in questions may seem like a lost battle, still joined only by punctilious English teachers. But the correct usage remains important in formal writing, and careful speakers have not yet surrendered the distinction either. After reading this article, you will feel more comfortable with using the distinction correctly.

Steps
Understand the difference between who and whom. Both who and whom are pronouns. However, "who" is used as the subject of a sentence or phrase, to denote who is doing something (like he or she). On the other hand, "whom" is used as the object of a verb, to denote whom has something done to it (like him or her). While a preposition (at, by, for, in, with, etc.) often comes before "whom", this is not always the case, so the key question is to ask "who is doing what to whom". What follows is a quick way to determine which pronoun to use in a particular question.
Use whom when referring to the object of a verb.
To whom it may concern:
To whom did you talk today?
Whom does Sarah love?
Use who when referring to the subject of a sentence or phrase.
Who brought the paper inside?
Who talked to you today?
Who went to dinner?
Ask yourself if the answer to the question would be he or him. If you can answer the question with him, then use whom. It's easy to remember because they both end with "m". If you can answer the question with he, then use who.
Example: A suitable answer to the question, "To [who or whom] did the prize go?" is, "It went to him." (It is improper to say "It went to he.") The correct pronoun for the question is whom.
Example: A suitable answer to the question, "[Who or Whom] went to the store?" is, "He went to the store." (It is improper to say "Him went to the store.") The correct pronoun for the question who.
When trying to discern whether or not who or whom is accurate, simplify the sentence. Although other words in a sentence might throw you off the track, simplify the sentence to reveal just the basic subject, verb, and object, and you'll be able to work it out quickly. It helps to move the words around in your head to identify the word relationships. For example:
Marie Antoinette and her ladies-in-waiting only invited people to their party [who or whom] they considered to love parties as much as they did. The revised mental version becomes: "whom they considered."
Marie Antoinette prevented her mother from knowing [who or whom] she invited to the Petit Trianon. The revised mental version becomes: "[who or whom] she invited." Then, you could rearrange it again to say: "she invited whom", clarifying that she did something to (invited) whom.
Note that the distinction between "who" and "whom" is not as essential in spoken language as it is in formal written language. Over time, it's possible that the distinction will erode away altogether but for now, it remains important to keep the distinction clear in written language.
 
Tips
Ask yourself "who did what to whom?"
It is possible to write around problems involving who and whom, but the result is almost always clumsy. If you write "To which person did the prize go?" because you can't remember that whom is the correct pronoun for such a question, you will have avoided a grammatical error at the expense of elegance.
Here's a useful mnemonic for remembering about objects and subjects. If you say "I love you" then "you" is the object of your affection and the object of the sentence. "I" is the subject. "[Whom or Who] do I love?" is "Whom do I love?" because the answer, "you", is an object.
Learning another language can help greatly. In most languages, using "who" in the place of "whom" can cause great confusion. A great example of this is German or Spanish.
Warnings
There is much confusion and misuse on this topic. Just as correctly using whom may make others think that you are intelligent, misusing it may make you seem pompous. Never use whom as a subject pronoun. This is as incorrect as using who where whom is required. People will mistakenly believe that you are trying to be formal.
"Whom are you?" is wrong. It is meant to be "Who are you?"

The apostle Paul writes that "evil men and impostors will grow worse and worse, deceiving and being deceived" (II Timothy 3:13). People today are no different from when Moses wrote the Pentateuch or Paul his epistles, but the occasion to sin, the incentive to do so and thus sin's frequency and intensity are at their highest levels since just before the Flood. In other words, the environment to commit sin more easily grows ever more amenable, and human nature is taking advantage of it. We have been born into—indeed have unwittingly contributed to creating—an environment in which it is exceedingly difficult to remain faithful.

We live in a world in which self-centeredness is being promoted to its greatest extent in human history. Appealing advertising hammers away at us to gratify ourselves: Why wait, why deny ourselves, why sacrifice, why not go along with everyone else? Constantly we hear, "Indulge yourself because you deserve it."

This world always appeals to moral and ethical standards lower than those of the great God and His way of life. In Technicolor with emotion-stirring music, Hollywood "sells" adultery and fornication as acceptable as long as the couple involved are attractive and somehow oppressed—thus "deserving" of a "better" relationship.

War, murder, lying, stealing, coveting, Sabbath-breaking, and idolatry are acts that almost everyone in the world would claim as being wrong, yet most unwittingly commit them to some degree and promote them in our culture. They justify their sin because everybody else is doing it, and they see no good reason why they should not just go along. If they try to swim against the tide, they think they will be taken advantage of.

Not too long ago, a person's word was his bond, and mere handshakes sealed major business agreements. Tales of Abraham Lincoln's honesty over pennies are an almost legendary part of our nation's history. Historians say that faithfulness was such a hallmark of the Roman Republic that not one divorce occurred in its first seven hundred years! But in the last fifty years this nation has seen a calamitous, family-destroying rise in the divorce rate that threatens the very stability of society.

Faithlessness is playing a major role in this destruction. People are without natural affection and traitors to their marital contract. Child abuse is becoming ever more prevalent. Athletes seem to break contracts almost at will. Manufacturers lie about the quality of their products, and workers fudge in the quality of their work.

Faithlessness is rising to its peak because self-centeredness, the father of irresponsibility, is being promoted to its utmost. It is the spirit of this age, but we have cause to resist it by what God has offered us in His revelation. God-centeredness in our lives is the answer to faithlessness and irresponsibility. But God-centeredness is not cheap, and few are willing to pay the price: their lives!

10 Most Common Dog Conditions - Learn About Them

What are the most common reasons for dogs to be sick? Do you know? I have my opinion based on what I see in my practices but I wondered if there was an actual list published on this subject.

I found this list of the 10 Most Common Dog Conditions and thought you might be interested. It comes from, Veterinary Pet Insurance (VPI) , the nation's oldest and largest provider of pet health insurance. They recently analyzed the medical claims they received  to determine the top 10 most commonly claimed conditions for dogs. In fact, they found that the top 10 conditions accounted for about 25 percent of all medical claims received last year.

Here are the 10 Most Common Dog Claims:

1. Ear Infections
2. Skin Allergies
3. Pyoderma/ Hot Spots
4. Gastritis/Vomiting
5. Enteritis/Diarrhea
6. Urinary Tract Infections
7. Benign Skin Tumors
8. Eye Inflammation
9. Osteoarthritis
10. Hypothyroidism
 
All of these common conditions on this list are potentially serious and they can all be expensive. The most expensive of these was benign skin tumors, with an average submitted claim fee of $327. Keep in in mind that skin tumors are a chronic (recurring) condition... that can really add up.

Pet owners whose dogs receive optimal care for any of the conditions on this list end up paying hundreds if not thousands of dollars.

Finally, here's an interesting comment that VPI made about the list. Nearly a third of all the common conditions could be related to or exacerbated by diet, diet changes, or dietary indiscretions. These gastrointestinal problems typically result in vomiting or diarrhea. The most effective way to reduce common dietary conditions is to follow your veterinarian's recommendations on a quality pet food tailored to your pet's dietary needs and to feed that food consistently.

Dealing with Excessive Barking
 
The first step to stopping barking is to understand why it is happening. Dogs bark for all kinds of reasons, including anxiety, boredom and/or loneliness. Sometimes they bark just because it feels good.

Luckily, most dogs will respond to one or other intervention to curtail their barking. Whether you simply bring an outdoor dog inside or take the time to apply behavior-modification techniques, you can cause a dog to be less of a nuisance and to be more socially acceptable.

Honey Mustard Chicken Tidbits

Dip Italian-seasoned chicken bites into a sweet and tangy sauce. All you need is five ingredients!

Prep Time 15 Minutes
Total Time 35 Minutes
Makes 25 servings

1/4  cup honey mustard 
3  tablespoons butter or margarine 
1  teaspoon garlic salt 
3/4  cup Progresso garlic herb bread crumbs 
1  lb chicken breast tenders (not breaded), cut into 1-inch pieces (about 50 pieces) 
 Additional honey mustard, if desired 

Heat oven to 400°F. Line cookie sheet with foil or cooking parchment paper; spray foil or paper with cooking spray.
In medium microwavable bowl, mix 1/4 cup honey mustard, the butter and garlic salt. Microwave uncovered on High 45 to 60 seconds or until butter is melted.
Place bread crumbs in large resealable plastic food-storage bag. Add chicken pieces to mustard mixture; stir to coat. Shake chicken pieces in bag of bread crumbs until coated. Place on cookie sheet. Discard any remaining honey mustard and bread crumbs.
Bake 20 to 25 minutes or until no longer pink in center. Serve with additional honey mustard.

Serve-With
Try different dipping sauces like ranch dressing, spaghetti or barbecue sauce, or maple syrup with these coated chicken bites.
Do-Ahead
Coat the chicken pieces 2 to 3 hours before baking, then cover and refrigerate until it's time to bake them.

Salad
8  oz uncooked gemelli or rotini pasta 
1  medium zucchini, cut in half lengthwise, thinly sliced (2 cups)

4  oz fresh baby spinach leaves 
1/2  cup chopped fresh basil leaves 

Dressing
1/4  cup olive oil or vegetable oil 
3  tablespoons red wine vinegar 
1  teaspoon coarse-grained mustard 
1  teaspoon salt 
1/2  teaspoon pepper 
1  garlic clove, crushed 
  
DIRECTIONS:

Cook and drain pasta as directed on package. Rinse with cold water to cool; drain well.
Meanwhile, in small bowl, mix all dressing ingredients until well blended.
In large bowl, mix cooked pasta with remaining salad ingredients and 1/4 cup of the basil. Pour dressing over salad; toss until coated. Cover; refrigerate 2 to 3 hours to blend flavors.
Just before serving, sprinkle remaining 1/4 cup basil over top of salad.

 DIRECTIONS:

In 12-inch nonstick skillet, mix rice, soup and water. Heat to boiling; reduce heat to medium-low. Cover; cook 5 minutes.
Stir carrots and meatballs into rice mixture. Cover; cook 10 to 15 minutes, stirring occasionally to prevent sticking, until rice and carrots are tender and meatballs are hot. Sprinkle with parsley.

 Start with a package of fried rice mix and end up with a delicious dinner in half an hour.
 1  lb extra-lean (at least 90%) ground beef 
1  tablespoon grated gingerroot 
1  box (6.2 oz) fried rice-flavor rice and vermicelli mix (with seasoning packet) 
2  cups water 
1  medium red bell pepper, coarsely chopped (1 cup) 
2  cups Green Giant Select Valley Fresh Steamers frozen sugar snap peas (from 12 oz bag)    

DIRECTIONS:

In 12-inch nonstick skillet, cook ground beef and gingerroot over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.
Add rice and vermicelli mix with contents of seasoning packet; cook and stir 2 minutes. Add water; bring to a boil. Reduce heat to low; cover and simmer 15 minutes, stirring occasionally.
Stir in bell pepper and sugar snap peas; cover and cook 5 to 10 minutes or until vegetables are tender, stirring occasionally.

THE  SNEEZE
        
They walked in tandem,  each of the ninety-two students filing into the  already crowded auditorium. With their rich  maroon gowns flowing and the  traditional caps,  they looked almost as grown up as they  felt.

Dads swallowed hard  behind broad smiles, and Moms freely brushed  away tears.

This class would NOT  pray during the commencements, not by choice,  but because of a recent court ruling prohibiting  it.

The principal and  several students were careful to stay within the  guidelines allowed by the ruling. They gave  inspirational and challenging speeches, but no  one mentioned divine guidance and no one asked  for blessings on the graduates or their  families.


The speeches were nice,  but they were routine until the final speech  received a standing   ovation.

A solitary student  walked proudly to the microphone. He stood still  and silent for just a moment, and then, it  happened.

All 92 students, every  single one of them, suddenly SNEEZED  !!!!

The student on stage  simply looked at the audience and  said,
 

'GOD BLESS  YOU'

 
And he walked off the  stage...   

   The audience exploded  into applause. This graduating class had found a  unique way to invoke God's blessing on their  future with or without the court's  approval.

REMINDERS FROM GOD:

Don't Quit


From the Apostle Paul: "But this precious treasure—this light and power that now shine within us—is held in perishable containers, that is, in our weak bodies. So everyone can see that our glorious power is from God and is not our own. We are pressed on every side by troubles, but we are not crushed and broken. We are perplexed, but we don't give up and quit. We are hunted down, but God never abandons us. We get knocked down, but we get up again and keep going."1

I suppose there are times when all of us feel overcome by problems and feel like quitting. I've been there, but couldn't find anything better than my Christian faith to quit to. Today I thank God for the courage to keep going, not knowing that God was allowing trials to strengthen my faith and to help me grow.

If you feel like giving up and quitting, perhaps the following poem will encourage you to hang in, hang on, but never hang up when the going gets tough.

    Don't Quit

    When things go wrong as they sometimes will,
    When the road you're trudging seems all uphill,
    When the funds are low and the debts are high,
    And you want to smile, but you have to sigh.
    When care is pressing you down a bit,

God never forsook the Apostle Paul who faced incredible trials and opposition. And he will never forsake you or me as long as we place our trust in him.

Did you know that most household pets don't drink enough water? Water is essential for all life, and having a constant supply of fresh water is crucial to keeping your pet healthy. Most of the time, a pet's water will sit on the floor for hours or even days. The fresh, cold water from this morning can become filled with bacteria, saliva and dust by the time you come home from work. It's no wonder that most pets don't drink enough! A purifying fountain that circulates water throughout the day can change all that.

A well-hydrated pet is a healthier pet that will benefit from better overall health.

Whatever you do - ensure your dog has plenty of fresh clean water.  Wash out the water bowls daily and fill with fresh water. You an even stimulate pets to drink by topping off the bowl or adding ice cubes occasionally.

Make sure your dog drinks enough water! Dogs should drink approximately 20 to 40 ml of water per pound of body weight per day. This comes out to about 3 to 4 cups of water for a 20-pound dog. Dogs that eat canned food may drink less since canned foods contain a high percentage of water compared to dry food. ??

Encourage your dog to drink by topping off the water bowl or by using a pet fountain.

Slow Cooker Southwestern Pork Burritos

Prep Time 10 Minutes
Total Time 8:10 Hrs:Mins
Makes 12 burritos

boneless pork shoulder roast (2 1/2 lb), trimmed of fat 
1  can (10 oz) diced tomatoes and green chiles, undrained 
3  tablespoons tomato paste 
1  tablespoon honey 
3  cloves garlic, finely chopped 
1  tablespoon chili powder 
1/4  teaspoon salt 
12  Old El Paso flour tortillas for burritos (8 inch; from two 11.5-oz packages) 
 
Assorted toppings (such as shredded Cheddar cheese, sour cream, chopped fresh cilantro, shredded lettuce, diced tomatoes), if desired 
     
Spray 3- to 4-quart slow cooker with cooking spray. Place pork in cooker.
In blender, place tomatoes, tomato paste, honey, garlic, chili powder and salt. Cover; blend on medium-high speed 10 seconds, stopping blender frequently to scrape sides. Pour over pork.
Cover; cook on Low heat setting 8 to 10 hours.
Remove pork from cooker; place on cutting board. Shred pork with 2 forks; return to cooker and mix well.
Serve pork mixture on tortillas with toppings. Pork mixture will hold on Low heat setting up to 2 hours.

Kitchen Tips
This tasty pork filling also makes great sandwiches. Spoon the filling on top of toasted bread slices. Top with shredded lettuce and shredded Monterey Jack or Cheddar cheese.
To warm tortillas, wrap them in foil and heat in a 325°F oven for about 15 minutes. Or place on a microwavable paper towel, and microwave on High for 30 seconds.

3/4  cup reduced-calorie Italian dressing 
1 1/2  teaspoons grated lemon peel 
3  cloves garlic, finely chopped 
3/4  pound fresh or frozen (thawed) uncooked medium shrimp, peeled an deveined 
3  cups broccoli flowerets 
1  medium yellow summer squash, cut lengthwise in half, then cut crosswise into slices (1 1/2 cups) 
2  tablespoons water 
8  cherry tomatoes, cut in half 
12  extra-large pitted ripe olives, cut in half 
1/4  cup chopped fresh basil leaves 
 Grated Parmesan cheese, if desired 
  
   DIRECTIONS:

Cook and drain linguine as directed on package; keep warm. Mix dressing, lemon peel and garlic; set aside.
Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add shrimp; stir-fry about 2 minutes or until shrimp are pink and firm. Remove shrimp from skillet.
Spray skillet with cooking spray; heat over medium-high heat. Add broccoli and squash; stir-fry 1 minute. Add water. Cover and simmer about 3 minutes, stirring occasionally, until vegetables are crisp-tender (add water if necessary to prevent sticking).
Stir in dressing mixture; cook 30 seconds. Stir in tomatoes, olives, basil, shrimp and linguine; stir-fry until hot. Sprinkle with cheese.

Old-fashioned oats and whole-wheat flour add texture and healthy fiber to these chewy cookies.

Makes 4 dozen cookies

1 3/4  cups packed brown sugar 
1  cup butter or margarine, softened 
1  teaspoon vanilla 
2  eggs 
1  cup Gold Medal all-purpose flour 
1  cup Gold Medal whole wheat flour 
1  teaspoon baking powder 
3  cups old-fashioned oats 
  
 DIRECTIONS: 
 
Heat oven to 350°F. In large bowl, beat brown sugar and butter with electric mixer on medium speed, scraping bowl occasionally, until light and fluffy. Beat in vanilla and eggs until well blended.
On low speed, beat in all-purpose flour, whole wheat flour and baking powder, scraping bowl occasionally, until well combined. Stir in oats.
On ungreased cookie sheets, drop dough by heaping tablespoonfuls 2 inches apart. Flatten cookies to about 1/2-inch thickness.
Bake 12 to 14 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks.

3  cups shredded Cheddar cheese (12 oz) 
1  cup cubed cooked ham 
1  cup uncooked elbow macaroni (3 1/2 oz) 
2 1/4  cups milk 
2  eggs 
1/2  cup Original Bisquick mix 
1/4  teaspoon salt 
 Chopped fresh parsley, if desired 
 
DIRECTIONS:  

Heat oven to 400°F. Spray 10-inch or 9 1/2-inch glass deep-dish pie plate with cooking spray.
In large bowl, mix 2 cups of the cheese, the ham and uncooked macaroni. Spread in pie plate.
In blender, place milk and eggs. Cover; blend on medium speed until smooth. Add Bisquick mix and salt; blend until smooth. Pour over mixture in pie plate.
Bake 35 to 40 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or until cheese is melted. Let stand 10 minutes before serving. Sprinkle with parsley.

THE PASTOR'S CAT
 

This particular story just made me laugh. Every time I think about it, the vision of that poor cat just amuses me to no end.

Hope the story leaves a bright spot in your day.

Whoever said the Creator doesn't have a sense of humour?

Dwight Nelson recently told a true story about the pastor of his church. He had a kitten that climbed up a tree in his backyard and then was afraid to come down. The pastor coaxed, offered warm milk, etc.

The kitty would not come down. The tree was not sturdy enough to climb, so the pastor decided that if he tied a rope to his car and pulled it until the tree bent down, he could then reach up and get the kitten.

That's what he did, all the while checking his progress in the car. He then figured if he went just a little bit further, the tree would be bent sufficiently for him to reach the kitten. But as he moved the car a little further forward, the rope broke.

The tree went 'boing!' and the kitten instantly sailed through the air - out of sight.
The pastor felt terrible. He walked all over the neighborhood asking people if they'd seen a little kitten. No. Nobody had seen a stray kitten.  So he prayed, 'Lord, I just commit this kitten to your keeping,' and went on about his business.

A few days later he was at the grocery store, and met one of his church members. He happened to look into her shopping cart and was amazed to see cat food. This woman was a cat hater and everyone knew it, so he asked her, 'Why are you buying cat food when you hate cats so much?'
She replied, 'You won't believe this,' and then told him how her little girl had been begging her for a cat, but she kept refusing. Then a few days before, the child had begged again, so the Mom finally told her little girl, 'Well, if God gives you a cat, I'll let you keep it.' She told the pastor, 'I watched my child go out in the yard, get on her knees, and ask God for a cat. And really, Pastor, you won't believe this, but I saw it with my own eyes. A kitten suddenly came flying out of the blue sky, with its paws outspread, and landed right in front of her.'

Never underestimate the Power of God and His unique sense of humor.

REMINDERS FROM GOD:

  Proverbs 8:13
(13) The fear of the LORD is to hate evil;
Pride and arrogance and the evil way
And the perverse mouth I hate.


Proverbs 8:13 is one of the definition verses of the Bible, along with "sin is the transgression of the law" (I John 3:4, KJV) and "the love of God that we keep His commandments. And His commandments are not burdensome" (I John 5:3), among others. Here, the fear of the Lord is defined as "hating evil."

In the Bible, "evil" is used in a wide variety of ways, but as we might expect, its basic meaning is simply "bad" or "negative." It appears in both the passive and active senses. When used passively, it describes distress, misery, misfortune, calamity, or repulsiveness. Proverbs 8:13, however, does not express the passive form of evil, but the active form, which is used in two ways in the Bible. The first can be defined as "what is wrong with regard to God's original and ongoing intent," while the second is narrower in scope: "what is detrimental in its effects on mankind."

People are most familiar with the second definition. When we think of evil, we typically imagine something that is purposefully injurious or intentionally unkind. It is not merely bad in the sense that a hurricane may be bad; it is more than merely unpleasant, but rather terrible by someone's design. In this definition of evil, there is intent to harm—or at the very least, ambivalence toward harm done to another. Evil does not care if harm is done.

In his book, People of the Lie—subtitled "The Hope for Healing Human Evil"—Dr. M. Scott Peck provides a simple yet profound definition of evil: "that which does harm to life or liveliness." The book is about "malignant narcissism": self-centeredness so extreme and pervasive that those possessing it continually injure others around them, not with physical wounds, but with subtle assaults on their emotional or spiritual well-being. This evil cannot be observed directly—the malignant narcissist is a master of deception—but can be seen only in its effects on others, in subtle violence perpetrated against the human spirit in others. Even as these people are doing harm to life and liveliness, they are putting on a pretense of righteousness and piety, terrified at the thought that others might see them as they truly are or that they might actually have to face themselves.

This second way that "evil" is used in the Bible—"what is detrimental in terms of its effects on mankind" or "that which does harm to life or liveliness"—can be quite subjective, thus the Bible also defines it as "what is wrong according to God's intent." A common description in the Old Testament is that a certain person or group "did evil in the sight of the LORD." This description is key because the people did not consider their deeds to be evil. In their view, they were harmless acts. Nobody was getting hurt, and nothing detrimental occurred (that they could see), so they did not consider their behavior to be evil. But what they did was evil—in God's sight.

Israel and Judah justified blatant idolatry and even child sacrifice by saying that they were not doing any harm, or that the harm it might do to the child was insignificant compared to the "greater good" that they believed would come from the sacrifice. The same justification is used for the practice of abortion today.

Israel did not consider temple prostitution to be harmful either, but in the eyes of God—the only eyes that see objectively—what they did was evil. It was evil not just in terms of going against God's intent; it went against God's intent because it was injurious to those involved in it, even though they could not see it. In their myopic pride, they were unable to see that what they were involved in would ultimately bear horrible fruit. So God had to define right and wrong, good and evil, because man is so shortsighted that he often cannot see what will cause harm to himself or to a neighbor.

Halloween is a good example of this, for it is nothing short of the glorification of evil. Its roots go back to the Celtic festival of Samhain, who was the "lord of the dead." It was a boiling mixture of drunkenness, revelry, licentiousness, vandalism, treachery, superstition, anarchy, and rank demonism. Today, this festival is dressed up in a creative costume and dubbed "fun for the kids," but its essence is the same. The world calls it "harmless fun," but it is obvious from Scripture that it is "evil in the sight of the LORD."

However, Proverbs 8:13 says that those who fear God instinctively and earnestly loathe those things that do harm to life and liveliness, even if the harm is not immediately apparent. If we fear God—if we respect Him and what He stands for—then we also oppose all that He is against, which certainly includes anything associated with "the evil one" or his subservient "evil spirits."

5 Signs That Your Dog Is Aging

3. Decreased activity - As dogs get older, their body's metabolic rate slows. This results in a decreased activity level.

4. Weight gain - Elderly dogs require 30 to 40 percent fewer calories. By eating a normal maintenance diet, obesity often develops.

5. Infections - As the body ages the immune system weakens, making it harder for the dog to ward off infections.

As your dog gets older, medical treatment can become more expensive.  To make sure that you can provide the very best care for your dog, I recommend that you consider pet insurance .  Do it now while your dog is still under 6 years of age and in relatively good health. A small pet insurance premium is much more affordable than large veterinary bills.

Encouraging Your Dog to Drink
 
Proper hydration is crucial in the healing process; however, the ill or painful dog may not be interested in drinking. It is important NOT to force water into your dog, as it could lead to aspiration pneumonia if your dog is not swallowing appropriately.

Listed below are several options to encourage your dog to intake water.

1. Give your dog an ice cube to lick.
2. Allow your dog to lick water from your hand or your finger.
3. Feed canned dog food, as it has a higher water content.
4. Add warm water or low-sodium broth to your dog's food.
5. With your veterinarian's permission, offer small amounts of Pedialyte.
6. Adding an ice cube to the water bowl can encourage some dogs to drink.

If your dog is weak and not interested in food or water, see your veterinarian.

Sausage Calzone
 
Prep Time  15 Minutes
Total Time 55 Minutes
Makes 6 servings

8  oz bulk Italian pork sausage 
1  medium onion, chopped (1/2 cup) 
1  jar (4.5 oz) Green Giant sliced mushrooms, drained 
1  can (16 oz) pizza sauce 
3  cups Original Bisquick mix 
1/2  cup boiling water 
2  tablespoons olive or vegetable oil 
1  cup shredded mozzarella cheese (4 oz) 
2  tablespoons shredded Parmesan cheese    

Heat oven to 450°F. In 10-inch skillet, cook sausage and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until sausage is no longer pink; drain. Stir in mushrooms and 1/2 cup of the pizza sauce; cook until thoroughly heated.
In medium bowl, stir Bisquick mix, boiling water and oil until dough forms (add additional tablespoon of water if needed). Place dough on surface sprinkled with Bisquick mix; roll in Bisquick mix to coat. Shape dough into a ball; knead about 10 times or until smooth. Roll dough into 12-inch round.
On ungreased cookie sheet, place dough round. Top half of dough with sausage mixture to within 1 inch of edge. Sprinkle mozzarella cheese over sausage mixture. Fold dough over filling; press edge with fork to seal. Sprinkle with Parmesan cheese.
Bake 14 to 18 minutes or until golden brown. Remove from cookie sheet to cutting board. Cool 5 minutes before cutting into 6 wedges. Heat remaining pizza sauce; spoon over each serving.

 
Variation
You can use a package of sliced pepperoni in place of the sausage and onion. Just stir pepperoni together with the 1/2 cup pizza sauce and mushrooms and fill the calzone.

Variation
To personalize your calzone, add your family’s favorite pizza toppings. Try bell pepper, olives or onions.

Tzatziki Cucumber Dipping Sauce

Ingredients:Yield:

3 large cucumbers, peeled and seeded
salt
3 garlic cloves (or more to taste)
1 tablespoon fresh lemon juice
1 tablespoon olive oil
fresh ground pepper (optional)
1/4 cup freshly chopped mint leaf (or to taste) (optional)

Directions:
Prep Time: 15 mins

Total Time: 15 mins
1 Line a sieve with a double thickness of dampened cheesecloth.
2 Spoon in yogurt and set the sieve over a bowl.
3 Refrigerate for two to three hours or until yogurt is about half its volume, nicely thick and creamy.
4 Shred or cut cucumber into julienne strips.
5 Place in a colander in sink or over a bowl, sprinkle generously with salt, mix well and let drain for at least 30 minutes to an hour.
6 Rinse and gently pat dry.
7 In a mortor and pestal muddle the garlic into a bit salt.
8 Add to the thickened yogurt, cucumber, lemon juice, olive oil, and if desired, the pepper and mint.
9 Mix well.
10 Serve or refrigerate for a day or two so flavors mingle.
11 Stir again before serving and sprinkle with additional minced mint leaves if desired.

The Ultimate Greek Salad

 6 Servings

Ingredients:

Dressing
6 tablespoons olive oil
1 1/2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
2 garlic cloves, minced
1 teaspoon dried oregano (Mediterranean is best)


Salad
1 head lettuce, torn into bite-size pieces ((I use Romaine)
3 large plum tomatoes, seeded and coarsely chopped
1 English cucumber, peeled and coarsely chopped (the long, thin, almost seedless ones)
1 medium red onion, cut into thin rings and soaked for 10 minutes in a small bowl of ice water to make it less sharp
1 small green pepper, cut into thin rings
3/4 cup kalamata olive
3/4 cup crumbled feta cheese


Directions:

1 Whisk dressing ingredients together until blended.
2 Season to taste.
3 Drain onion from ice water and pat dry with paper towels.
4 Combine all salad ingredients, except cheese, in large bowl.
5 Toss with dressing.
6 Sprinkle cheese over and serve.

A delicious mixture of beef, noodles, Chinese cabbage, spinach, and tofu, sukiyaki is easy to make.

Serves: 4
Prep. time: 10 minutes
Cooking time: 11 minutes


1/2 pound angel hair pasta 
3 tablespoons cooking oil 
1/4 cup sugar 
1 1/2 pounds club steak, trimmed of fat, sliced very thin 
10 scallions, including green tops, cut diagonally into 1-inch lengths 
3/4 cup canned low sodium chicken broth 
2/3 cup soy sauce 
1/3 cup dry white wine, or sake 
1/2 pound soft tofu, drained and cut into 1/4-inch cubes 
1/2 pound napa cabbage, cut into 1-inch pieces 
1/4 pound mushrooms, quartered 
1/2 pound fresh spinach, large stems removed, leaves washed 


 
In a large pot of boiling, salted water, cook the pasta until just done, about 3 minutes. Drain. Rinse with cold water and drain thoroughly.

Heat a large nonstick frying pan over moderately high heat. Add the oil and sprinkle the sugar into the pan. Let sit until the sugar begins to turn golden brown, about 1 minute. Stir until the sugar turns a medium brown. Add the steak, in about five batches, turning quickly with tongs, until browned and just done, 1 or 2 minutes in all. Remove. The sugar should glaze the beef with brown caramel. If the pan gets too hot, reduce the heat to moderate so the sugar won't burn. Add the scallions; cook, stirring, until browned, about 2 minutes.

In the pasta-cooking pot, combine the pasta, the beef and any accumulated juices, the scallions, broth, soy sauce, sake, tofu, cabbage, and mushrooms and bring to a simmer. Simmer, stirring, until the vegetables are almost tender, about 2 minutes. Add the spinach and continue cooking until wilted, about 30 seconds longer.

1/2 lb. ground beef, (85% lean) 
1 medium onion, chopped 
1 small green pepper, chopped 
1/2 tsp. dried basil leaves, crushed

3 cans Campbell's Healthy Request Condensed Tomato Soup 
4 cups water 
2 tsp. lemon juice 
4 cups cooked elbow macaroni, cooked without salt 


INGREDIENTS
 
COOK beef, onion, pepper, basil and oregano in saucepot until browned. Pour off fat.

ADD soup, water, lemon juice and pasta. Heat through.

Matthew 12:1-8

(2) And when the Pharisees saw it, they said to Him, "Look, Your disciples are doing what is not lawful to do on the Sabbath!" (3) But He said to them, "Have you not read what David did when he was hungry, he and those who were with him: (4) how he entered the house of God and ate the showbread which was not lawful for him to eat, nor for those who were with him, but only for the priests? (5) Or have you not read in the law that on the Sabbath the priests in the temple profane the Sabbath, and are blameless? (6) Yet I say to you that in this place there is One greater than the temple. (7) But if you had known what this means, 'I desire mercy and not sacrifice,' you would not have condemned the guiltless. (8) For the Son of Man is Lord even of the Sabbath."

Matthew 12:1-8 adds yet another example of Sabbath encounters Jesus had with the Pharisees. According to the Pharisees, the disciples reaped, threshed, and winnowed the grain; they were guilty of preparing a meal. What was the disciples' motivation? They were traveling, hungry, and had no place to prepare a meal. They were young and strong and could have fasted without harm, but because it was a Sabbath, Jesus drew attention to one of the Sabbath's main purposes. It is a day of mercy.

Christ draws his justification from I Samuel 21:1-6. He reasons that, if David under unusual circumstances could allay his hunger by eating bread consecrated for holy use, then the disciples could also legitimately provide for their needs in unusual circumstances. The emphasis here is on "unusual." How many times did David flee for His life and find himself hungry near the Tabernacle? It happened at least once, but even for a man of war like David, such situations occurred only rarely.

The overall lesson is that God does not intend His law to deprive but to ensure life. If the need arises, we should not feel conscience-stricken to use the Sabbath in a way that would not normally be lawful. Christ admits David's actions were not normally lawful, and neither were the disciples'—except for the circumstances. In this case, they were blameless BECAUSE A LARGER OBLIGATION OVERRULED THE LETTER OF THE LAW. In this circumstance, mercy is more important than sacrificing a meal. Holy bread or holy time can be used exceptionally to sustain life and serve God.

Christ takes advantage of the situation to teach another connected lesson. He draws attention to the extent of the priests' Sabbath labors in the Temple. Their work actually doubled on the Sabbath because of the number of sacrifices God required, yet they were guiltless. Why? They were involved in God's creative, redemptive work, as Christ explains in John 5, 7, and 9. They fulfilled a purpose of the Sabbath that someone had to do.

Because of the disciple's involvement in the work of God, circumstances dictated a profaning of the Sabbath. From this, we can understand that LOVING SERVICE IS GREATER THAN RITUAL FULFILLMENT. What is mercy? It is a helpful act where and when it is needed. It is an act of loving encouragement, comfort, pity, and sympathy for the distressed. It is the relieving of a burden.

El Niño and the Groundhog – Science and Folklore

  Groundhog Day is coming! Will the groundhog see his shadow? If we were in the middle of an El Niño, he might just see it. Behind the rodent folklore is an odd bit of science trivia.

The Folklore—Look at the legend that has had folks trekking to Punxsutawney, Pennsylvania since 1887. According to the folklore, if Phil the groundhog comes out of his hole and sees his shadow on February 2, it means there will be six more weeks of really crummy weather. If not, the rest of winter will melt away.

 
This legend is a holdover from European folklore. Since medieval times, people watched hedgehogs, badgers, bears or wolves to see if they saw their shadows on Candlemas, February 2. Once people settled in America, the local groundhogs took the place of bears, badgers and other critters.

According to the National Climate Data Center (NCDC), the tradition became publicized in 1887 when a newspaperman wrote about local hunters who celebrated February 2 by going on a groundhog hunt, followed by a jolly groundhog barbecue. He embellished the story with tales of the forecasting skills of Punxsutawney Phil. The rest is history.

The Science—When people continue a weather tradition, it is usually because it contains at least a small grain of truth. Historically the grain of truth for Groundhog’s Day in America is related to the El Niño.

The El Niño, an abnormally warm Tropical Pacific current, warps global wind and weather patterns. In North America it usually produces a warm winter starting along the West Coast and expanding eastward. By mid-winter, the warmth of a moderate to large El Niño usually reaches the Great Lakes and Midwest. Then, as the El Niño weakens, the warmth retreats and normal winter returns to the East.

In large parts of the East, this means an El Niño frequently produces a cool early winter, warm mid-winter and cool late winter. If a large rodent was wandering around in the relatively mild mid-winter, there might be enough sunshine to see his shadow. Then the El Niño would weaken and winter would literally come storming back.

It should be remembered that the Groundhog tradition persisted in America during the 1700s and 1800s, during the last stages of the “Little Ice Age.” What occasionally worked during those chilly times may not work now. The NCDC claims that since 1988, groundhogs have only had a 39% accuracy rate.

Accurate or not—it’s a great holiday and a good excuse for a party or barbecue.

Crab Dip

Tasty and easy to prepare -- even less of a hassle if you make it ahead and refrigerate or freeze it until it's needed. The contributor notes that her family, having experimented with many types of crackers, recommends Ritz as the best complement for the dip.

Yield: 8 to 10 servings

1/2 cup (1 stick) butter, at room temperature
1 package (8 ounces) cream cheese, at room temperature
2 cups grated American cheese (approximately 1/2 pound)
1 container (16 ounces) sour cream
1 heaping tablespoon minced dried onion
1 package (14 to 16 ounces) frozen crab meat and/or imitation crab meat

Preheat the oven to 350 degrees F. Mix together all the ingredients in a large casserole dish. Bake, uncovered, for 45 to 60 minutes, until the mixture is bubbling and the top is browned. Stir before serving hot with crackers

Spicy Chicken Tenders

Yield: 4 servings

12 ounces chicken tenders
1 tablespoon vegetable oil
2 tablespoons butter
2 tablespoons hot sauce
Rinse the tenders and pat dry with paper towels. Heat a large nonstick skillet until hot enough to sizzle a drop of water, and lightly brush with a thin film of vegetable oil. Add the tenders, a few at a time, quickly searing both sides until chicken is cooked through, 2 to 3 minutes per side.

Remove the chicken to a side dish.

Remove the skillet from the heat. Add butter and allow it to melt in the warm skillet. Stir in hot sauce (Tabasco is good) until blended. Add the chicken to the skillet. Place over medium-high heat and stir-fry just until the tenders are coated with the sauce. Transfer to a platter. Serve with moist corn bread, corn on the cob, and baked beans.

8    flour tortillas
4  teaspoons  butter or margarine, melted
1  cup  shredded cheddar cheese
4  slices  bacon, cooked and crumbled
1/2  cup  diced tomato

Directions
1. Prepare grill. Brush 1 side of the flour tortillas with the melted butter. Sprinkle the unbuttered side of 4 tortillas evenly with the cheddar, bacon, and tomato. Cover with remaining tortillas, buttered side out. Grill over medium-hot coals for 30 to 60 seconds per side or until golden. Cut into wedges. Makes 4 servings.

1  package (3 oz.)  cream cheese, softened
6  ounces  Monterey Jack with jalapeno pepper cheese, shredded (1-1/2 cups)
1  cup  ricotta cheese
1/3  cup  chopped fresh parsley
1/2  cup  walnuts, toasted and ground
1  large  egg, lightly beaten
6  to 8 drops  red pepper sauce
20  sheets  phyllo dough
1/2  cup  butter or margarine, melted

Directions
1. Preheat oven to 375 degree F. Lightly grease 2 cookie sheets. Set aside.

2. Beat the cream cheese in a medium bowl until smooth. Stir in the pepper Jack cheese, ricotta, parsley, walnuts, egg, and pepper sauce until evenly combined.

3. Place 1 phyllo sheet on a work surface and brush lightly with butter. Top with a second phyllo sheet and brush with butter. With a sharp knife, cut crosswise into five 3-inch-wide strips. Place 1 rounded teaspoon cheese mixture on the end of each strip. Fold up around filling to form a triangle (flag-style). Transfer triangles, seam side down, to prepared cookie sheets and brush tops lightly with butter. Repeat with remaining phyllo, butter, and filling.

4. Bake for 12 to 15 minutes or until lightly golden. Serve warm. Makes 50 appetizers.

Make-Ahead Tip: Prepare as directed above. Freeze on cookie sheets. Transfer to freezer proof plastic bags. Freeze up to 1 month. Bake in a 375 degree F oven for 20 to 25 minutes or until lightly golden.

Ingredients
1  cup  butter or margarine, softened
2  cups  shredded sharp cheddar cheese
2  teaspoons  Worcestershire sauce
2  cups  all-purpose flour
1/2  teaspoon  salt
1/4  teaspoon  ground red pepper
2  large  egg yolks
2  tablespoons  milk
1/2  cup  finely chopped walnuts

Directions
1. Beat the butter and cheese in a large mixing bowl until light, then beat in the Worcestershire sauce. On low speed, beat in the flour, salt, and red pepper until well mixed. Divide dough into quarters. Shape each quarter into a log, 1 inch in diameter. Wrap logs in wax paper and refrigerate at least 3 hours or overnight.

2. Preheat oven to 375 degree F. Whisk together the egg yolks and milk in a small bowl. Cut 2 logs into 1/4-inch-thick slices. Arrange on 2 ungreased cookie sheets and brush tops with beaten egg mixture. Sprinkle with nuts. Bake for 10 to 12 minutes or until golden. Transfer to wire racks and cool. Repeat process with remaining logs, omitting the nuts. Makes about 12 dozen wafers.

Make-Ahead Tip: Prepare as directed above. Freeze wafers in an airtight container up to 1 month. Thaw at room temperature.

In her bestseller book, The Hiding Place, Corrie Ten Boom tells of the tense times in Holland during the German invasion. One night when there was bombing and shelling happening all around the house where she and her sister lived, Corrie couldn't sleep. Hearing her sister in the kitchen, she decided to go down and join her.

Long into the night after all the bombing ceased and all was silent, Corrie returned to her bed only to find that her pillow—right where her head lay—had been pierced with a sizable piece of sharp metal shrapnel from an exploding bomb! Going downstairs to the kitchen saved her life!

She rushed to tell her sister saying, "Betsie, if I hadn't heard you in the kitchen . . . ." To this her saintly sister interrupted, "Don't say it, Corrie. There are no ifs in God's world. The center of his will is our safety."

Later through terrible trying times in a Nazi prison, Miss Ten Boom was to learn over and over this marvelous truth: "God's will is our hiding place."

God considers these things to be idolatrous; they honor demonic spirits, and thus He calls them abominations or detestable things, things that He hates. Interestingly, He says these practices are a reason why He sent Israel in to dispossess these people. We do not want to practice customs that ultimately bring on God's wrath and destruction.
In Leviticus 20:6, God likens spiritism to prostitution, the physical counterpart to spiritual prostitution, idolatry. To God, witchcraft and occultism are similar to sexual immorality, but one is physical and the other is spiritual. Which is worse—physical or spiritual prostitution? Both defile the purity God desires in our flesh and in our spirit (II Corinthians 7:1). This linking of spiritism with sexual sins and idolatry occurs elsewhere (Exodus 22:16-20; I Samuel 15:22-23). Witchcraft is equated with them because it is both prostitution and idolatry.
When a Christian meddles in spiritism of any kind, whether witchcraft, sorcery, divination, consulting a medium or fortune-teller, or even reading a horoscope, he undermines his relationship with God—just as a man who visits a prostitute damages his relationship with his wife. Someone else is coming between the two covenanted parties, causing division. Occultism puts a wedge between God and the Christian; he might as well bow to an idol. It produces the same result: to drive him away from God.
The New Testament takes the same approach as the Old:
Now the works of the flesh are evident, which are: adultery, fornication, uncleanness, licentiousness, idolatry, sorcery, . . . of which I tell you beforehand, just as I also told you in time past, that those who practice such things will not inherit the kingdom of God. (Galatians 5:19-21)
The apostle Paul speaks of adultery, fornication, uncleanness, and licentiousness—all with at least overtones of sexuality—then he mentions idolatry and immediately thereafter sorcery! It cannot be just a coincidence that they all fall in this order. Those who practice such things will not inherit the Kingdom of God because they are not fulfilling their covenant with God.
"Sorcery," intriguingly, is pharmakeia in Greek, from which we derive our words "pharmacy" and "pharmaceutical." Diviners, enchanters, witches, and sorcerers employed drugs and other potions to put them or their clients "in the spirit" so their "magic" would work. The drugs, then, came to stand for sorcery of all kinds. For the same reason, drug use is part of the celebration among the more serious Halloween devotees today.
The Bible's teaching on this is consistent. Spiritism, the occult, is a form of idolatry, a kind of spiritual prostitution. Its end is separation from God and eventual destruction.

According to Veterinary Pet Insurance Co. (VPI) - the nation's oldest and largest provider of pet health insurance - there were nearly 2,000 foreign body ingestion claims received over the past year. They made a list of all the objects dogs ingested.

This is one of the most common problems in dogs - they often eat thing they shouldn't.
So what types of things do dogs eat most often? Socks, hand towels, sticks, and rocks were especially popular "snack" choices. Other ingested items that made the list were not quite as common.

Pizza Del Giorno

Onions and sausage combine to make a robust topping for pizza. The peppers add color and zesty flavor.

Serves: 6
Prep. time: 5 minutes
Cooking time: 25 minutes
 
 
5 cups (about 1 1/2 pounds)yellow or red onions, halved and sliced 
8 ounces fully cooked spicy smoked sausage, sliced 
1 tablespoon olive oil 
1 tablespoon balsamic vinegar 
1 ten-ounce (12-inch) pizza shell 
1/4 cup broken walnuts, toasted 
8 ounces mozzarella cheese, sliced 
1 tablespoon dried oregano 
2 teaspoon chopped fresh thyme 
1/2 cup roasted red bell pepper, or pimento strips 

 
Preheat the oven to 400 degrees.

Sauté the onions and sausage in olive oil in large skillet for 8 to 10 minutes or until tender. Add a little more oil if pan gets dry. Add the vinegar and stir.

Spread the mixture over the pizza shell. Top with walnuts, cheese, herbs, and bell pepper. Bake for 15 minutes or until heated through.

Pasta Stuffed Pizza-Style

Pasta and pizza in one dish! The kids are sure to love this meal.

Serves: 4
Prep. time: 20 minutes
Cooking time: 15-20 minutes


30 jumbo pasta shells, or 13 manicotti shells 
3 medium zucchini, peeled and grated 
2 teaspoons garlic powder 
1 cup Italian bread crumbs 
1 1/2 ounces pepperoni sausage, slices (torn into small pieces) 
1 large egg white 
3 cups low-sodium tomato sauce 
1 teaspoon dried oregano 
1 teaspoon dried basil 
3 ounces part-skim mozzarella cheese, grated 
1/4 cup Grated Parmesan cheese 

 
Prepare pasta according to package directions.

While pasta is cooking, preheat the oven to 450 degrees F.

Toss the zucchini with the garlic powder and transfer to a colander. Let it sit for 5 minutes and then squeeze out as much moisture as possible. Transfer to a large bowl.

Stir the zucchini with the bread crumbs, pepperoni, and egg white to make the filling.

In another mixing bowl, stir together the tomato sauce, oregano, and basil.

When pasta is done, drain well. Rinse with cold water and drain again. Stuff the shells with the filling mixture and arrange them in a 9 x 13 x 2-inch pan. Spoon the sauce over pasta and sprinkle with the mozzarella and Parmesan cheeses. Bake uncovered 15 to 20 minutes or until the cheese has melted.

Prep: 20 minutes
Chill: 8 hours
Bake: 60 minutes

 
Ingredients
1-1/4  cups  sugar, divided
1-1/2  cups  milk
1/2  cup  heavy or whipping cream
1    Mexican cinnamon stick (canela)* or 1 cinnamon stick
4  large  eggs
1  teaspoon  vanilla extract
  Pinch  salt

Directions
1.Heat oven to 325 degrees F. Arrange rack in center of oven.

2.Melt 1/2 cup sugar in a small saucepan over medium heat, swirling pan occasionally, until sugar becomes amber in color, 10 minutes (do not stir). Pour caramel into the bottom of a 4- or 5-cup souffle dish.

3.Bring milk, cream, remaining 3/4 cup sugar and cinnamon stick to boil in a small saucepan over medium heat. Remove from heat; cover and let stand 10 minutes.

4.Meanwhile, whisk together eggs, vanilla and salt in a large bowl. Strain milk mixture through a sieve into eggs; whisk to combine. Discard cinnamon stick. Strain mixture again into prepared dish. Place dish in a roasting pan, making sure there is at least 1 inch of space between the edge of the dish and the roasting pan. Place roasting pan on oven rack. Carefully pour enough hot water into roasting pan to come halfway up side of dish.

5.Bake until custard is just set, 60 to 65 minutes (mixture will jiggle slightly, but that's okay). Remove flan from oven. Let flan cool in hot-water bath 15 minutes. Remove dish from water bath and cool completely on wire rack. Cover with plastic wrap and refrigerate overnight.

6. To serve, run a knife around the edge of souffle dish. Place a serving plate slightly larger than dish on top. Invert flan onto plate. Makes 8 servings.

*Mexican cinnamon sticks ("canela") are similar to regular cinnamon, but softer and less sweet. Available in most Hispanic supermarkets.

1  tablespoon  anise seeds
2  large  eggs
1/2  cup  white wine
1  cup  sugar
2  teaspoons  ground cinnamon

Directions
1. Heat oven to 400 degrees F. Line 2 large cookie sheets with parchment paper.

2. Whisk together flour, baking powder and salt. Beat the 1-1/2 cups sugar and the shortening in a large mixer bowl on medium speed 2 minutes, until fluffy. Beat in anise and eggs for 2 minutes, until combined. Reduce speed to low; beat in flour mixture and wine just until combined. (The dough will be stiff but that's okay.) Divide dough into quarters.

3. Combine the 1 cup sugar and cinnamon in a medium shallow bowl or pie plate. Set aside.

4. On a floured surface, roll one piece of dough to 1/4-inch thickness. Cut dough with a 3-inch cookie cutter. Transfer cutouts to prepared cookie sheets 1 inch apart. Using the tip of a small spoon, press indentations along outer edge of cookies. Repeat with remaining dough, rerolling and cutting scraps. Bake 10 minutes, until lightly golden. Cool on cookie sheets on wire racks, 5 minutes.

5. Dredge warm cookies in sugar topping. Cool cookies completely on wire rack. Makes 7 dozen cookies.

Asparagus – Who knew ?

    This is from a friend
 
     My Mom had been taking the full-stalk canned style
     asparagus that she pureed and she took 4 tablespoons in
     the morning and 4 tablespoons later in the day. She did
     this for over a month. She is on chemo pills for Stage 3
     lung cancer in the pleural area and her cancer cell
     count went from 386 down to 125 as of this past week.
     Her oncologist said she does not need to see him for 3
     months.
 
                 THE ARTICLE:
                 Several years ago, I had a man seeking asparagus for a
                 friend who had cancer. He gave me a photocopied copy
                 of an article, entitled, Asparagus for cancer ‘printed in
                 Cancer News Journal, December 1979. I will share it
                 here, just as it was shared with me: I am a
                 biochemist, and have specialized in the relation of diet
                 to health or over 50 years. Several years ago, I learned
                 of the discovery of Richard R. Vensal, D.D.S. that
                 asparagus might cure cancer. Since then, I have worked
                 with him on his project We have accumulated a number
                 of cepticse case histories. Here are a few examples:
 
Case No. 1, A man with an almost hopeless case
                 of Hodgkin’s disease (cancer of the lymph glands) who
                 was completely incapacitated. Within 1 year of starting
                 the asparagus therapy, his doctors were unable to
                 detect any signs of cancer, and he was back on a
                 schedule of strenuous exercise.
Case No. 2, a successful businessman 68 years old
                 who suffered from cancer of the bladder for 16 years.
                 After years of medical treatments, including radiation
                 without improvement, he went on asparagus. Within 3
                 months, examinations revealed that his bladder tumor
                 had disappeared and that his kidneys were normal.
 
Case No. 3, a man who had lung cancer. On March 5th 1971, he
                 was put on the operating table where they found
                 lung cancer so widely spread that it was inoperable.
                 The surgeon sewed him up and declared his case
                 hopeless. On April 5th he heard about the Asparagus
                 therapy and immediately started taking it By August,
                 x-ray pictures revealed that all signs of the cancer had
                 disappeared..
                 He is back at his regular business routine.
 
Case No. 4, a woman who was troubled for a number of
                 years with skin cancer. She finally developed different
                 skin cancers which were diagnosed by the acting
                 specialist as advanced. Within 3 months after starting
                 on asparagus, her skin specialist said that her skin
                 looked fine and no more skin lesions. This woman
                 reported that the asparagus therapy also cured her
                 kidney disease, which started in 1949. She had over 10
                 operations for kidney stones, and was receiving
                 government disability payments for an inoperable,
                 terminal, kidney condition. She attributes the cure of
                 this kidney trouble entirely to the asparagus.
 
                 I was not surprised at this result, as `The elements of
                 ceptics medica’, edited in1854 by a Professor at the
                 University of Pennsylvania , stated that asparagus was
                 used as a popular remedy for kidney stones. He even
                 referred to experiments, in 1739, on the power of
                 asparagus in dissolving stones. Note the dates!
                 We would have other case histories but the medical
                 establishment has interfered with our obtaining some
                 of the records. I am therefore appealing to readers to
                 spread this good news and help us to gather a large
                 number of case histories that will overwhelm the
                 medical ceptics about this unbelievably simple and
                 natural remedy.
 
For the treatment, asparagus should be cooked
                 before using, and therefore canned asparagus is just
                 as good as fresh. I have corresponded with the two
                 leading canners of asparagus, Giant and Stokely, and I
                 am satisfied that these brands contain no pesticides or
                 preservatives.
                 Place the cooked asparagus in a blender and liquefy to
                 make a puree, and store in the refrigerator. Give the
                 patient 4 full tablespoons twice daily, morning and
                 evening. Patients usually show some improvement in
                 2-4 weeks. It can be diluted with water and used as a
                 cold or hot drink. This suggested dosage is based on
                 present experience, but certainly larger amounts can do
                 no harm and may be needed in some cases. As a

                 cures can prevent.’ Based on this theory, my wife and I
                 have been using asparagus puree as a beverage with

Numbers 23:10 is one of Balaam's prophecies. He is looking out at all of Israel from a height, seeing their vast number, and he has just said that they have been blessed by God.

He then says, "Let me die the death of the righteous, and let my end be like his!" What about his life between this particular time and his own death? He did not want to live as the righteous but to die as righteous. Put another way, Balaam did not want to live righteously; he only wanted to be considered a righteous man when he died. He wanted "heaven" without behaving heavenly while he was alive. He was perfectly fine with continuing his trade as a sorceror and even cursing God's people just so that at the very end, he could make a death bed repentance and squeak in between the bars of heaven's gate, so to speak.

Frankly, the religion of Balaam—his doctrine or teaching, his way of life—was the dominant religion of the time, just as Protestantism is the dominant religion of our time. People then had the same human nature as people do now, and they wanted the best of both worlds. They were willing to do whatever they wanted—even to sin grievously—believing that in the end they would still be saved, because what they were doing was not all that bad. They believed God would disregard their behavior. Remember, Balaam later advises the Midianites, "Get the Israelites involved in idolatry and sex with the women of Moab." A truly righteous individual would never even think of causing others to sin. Would God ignore such a thing?

This is the impression one gets from Balaam. He knew what was right, but would not take the responsibility to do it. Yet, he wanted all the rewards and blessings that would come from it.

Another idea that surfaces here is that he thought he could manipulate God. He thought he could bribe Him by giving Him sacrifices, cajoling Him, making a deal with Him—into cursing even His own people. Obviously, it did not work. He did not understand God in the least.

Balaam did not understand what is written in Deuteronomy 10:12-14, which Moses wrote at about this same time. In the New King James, this section is titled "The Essence of the Law."

And now, Israel, what does the LORD your God require of you, but to fear the LORD your God [Balaam certainly did not fear God—he was willing to negotiate with Him], to walk in all His ways [He did not want to obey Him] and to love Him [certainly his actions did not show that he loved God at all], to serve the LORD your God with all your heart and with all your soul [Balaam was in it for himself—his heart and soul were not with God], and to keep the commandments of the LORD and His statutes which I command you today for your good? Indeed heaven and the highest heavens belong to the LORD your God, also the earth with all that is in it.

Here puny Balaam was trying to match wits with the God of all the universe—and he thought he could win! Notice the next verses:

The LORD delighted only in your fathers, to love them; and He chose their descendants after them, you above all peoples, as it is this day. Therefore circumcise the foreskin of your heart, and be stiff-necked no longer. For the LORD your God is God of gods and Lord of lords, the great God, mighty and awesome, who shows no partiality nor takes a bribe. (Deuteronomy 10:15-17)

Balaam did not understand this very simple point: In the covenant relationship we have with God, we are the junior partners. Our job is to submit, to obey, to fear and respect Him, and if we do that, everything will work out fine. However, when we step outside that role and try to take God's prerogatives from Him and do things that only He can do, then we start getting into deep trouble. This is where Balaam was— in very dangerous territory. He was trying to negotiate with God as if he were His equal.

He was attempting to impose his will on God, and make God change for him! Is that not basically selfish? Is it not self-interest above what's in God's interest? In a way, it is like saying to God, "You're wrong, and I'm right, so You should do it my way!"—as if we can see things from our vantage point better than God can.

If we try to change God's will on some matter that He has clearly shown us, we are saying, "I am God, not You." We want our will to be followed and not His. There are several verses in the Bible that say, "Who are we before God?" We are the clay—He is the Potter! Balaam had it all backwards.

Does Your Dog Like to Cuddle?

Some dogs are sort of aloof, and others are lap dogs or real "cuddlers". What is it in their personality that makes them different? This is somewhat of a mystery.

What makes one dog standoffish and another dog extremely affectionate? It probably has a lot to do with their genetic make-up as well as their socialization skills. From an early age, your dog's breed and socialization skills (both pet-to-pet and pet-to-human) have an impact on his behavior.

This makes sense when you think about people - no two are alike. Some families and cultures are more "touchy-feely" than others. Some people like to cuddle and others don't.

The reason a dog likes to cuddle with you or with his toys probably has a lot to do with both bonding and comfort. Puppies cuddled with their mothers and littermates for warmth, and undoubtedly this gave them comfort. Dogs that are submissive are often more apt to cuddle and be near their gentle leader.

Ingredients to use:

Fill a mixing glass with cracked ice. Add creme de menthe, creme de cacao, and cream. Shake and strain into a chilled cocktail glass. Garnish with chocolate shavings.

Pork Chops with Apples and Onions

"This pork chop dish was one of the first my eldest son requested the recipe for when he got his own kitchen. Sometimes we replace the onion with leeks or add a sliced potato. We have deglazed the pan with beer, white wine, cider, chicken broth, and even water. Sautéed apples and onion combine with the pork for a tastiness that never disappoints."

Serves: 6


6 bone-in pork chops (loin or shoulder), cut 3/4 inch thick
Coarse salt
Freshly ground black pepper
1 tablespoon(s) extra-virgin olive oil or vegetable oil
2 tablespoon(s) unsalted butter
1 large white onion, sliced
3 cup(s) cored, sliced apples
1 cup(s) beer, white wine, cider, or chicken broth


Directions

Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
Swirl the butter into the pan. Add the onion and apples. Sauté until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.

Shepherd's Stew

   Quick and easy to prepare -- and very good, too.

Yield: 6 servings

1 pound sweet or hot Italian sausage, sliced
1 large onion, chopped
6 potatoes, peeled and diced
1 cup sliced celery, including leaves
2 cans (16 ounces each) whole tomatoes
1/4 cup chopped fresh parsley
1-1/2 cups beef broth or stock (or 2 beef bouillon cubes dissolved in 1-1/3 cups water)
1 bay leaf
1/2 teaspoon dried thyme
1/4 teaspoon pepper
juice of 1/2 lemon (optional)
salt to taste

In a large saucepan or nonreactive Dutch oven, brown the sausage over medium heat. Add the onion and saute until transparent, about 5 minutes. Add the remaining ingredients and bring to a boil. Reduce the heat and simmer, uncovered, for 45 to 60 minutes, or until the potatoes are tender. Remove the bay leaf before serving. Serve hot.

Quick Coq au Vin

Here’s a quick version of Coq au Vin, a red wine-braised chicken-and-vegetable stew that usually takes the better part of an afternoon to make. Serve with herbed mashed potatoes and green beans.

4 servings, 1/2 breast & 3/4 cup sauce each
Active Time: 45 minutes
Total Time: 45 minutes

Ingredients
1/4 cup all-purpose flour
2 bone-in chicken breasts (about 12 ounces each), skin removed, trimmed
1/2 teaspoon salt, divided
1/2 teaspoon freshly ground pepper, divided
1/4 cup water
2 tablespoons extra-virgin olive oil, divided
4 ounces mushrooms, quartered (about 1 1/2 cups)
2 large carrots, thinly sliced
1 small onion, halved and sliced
1 teaspoon crumbled dried rosemary
1 14-ounce can reduced-sodium chicken broth
1/2 cup dry red wine, preferably Zinfandel
1 tablespoon tomato paste
2 tablespoons chopped fresh parsley

Preparation
Place flour in a shallow dish. Cut each chicken breast in half on the diagonal to get 4 portions about equal in weight. (Two will be smaller but thicker, the other two larger but thinner.) Sprinkle the chicken with 1/4 teaspoon each salt and pepper and dredge in the flour. Whisk water with 2 tablespoons of the leftover flour in a small bowl; set aside.
Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Reduce heat to medium and add the chicken. Cook, turning once or twice, until lightly browned on all sides, 5 to 7 minutes total. Transfer to a plate.
Add the remaining 1 tablespoon oil to the pan; reduce heat to medium-low. Add mushrooms, carrots, onion and rosemary and cook, stirring occasionally, until the vegetables are softened and browned in spots, about 5 minutes. Add broth, wine, tomato paste and the remaining 1/4 teaspoon each salt and pepper. Stir until the tomato paste is dissolved. Bring to a simmer.
Return the chicken and any accumulated juice to the pan. Cover, reduce the heat to maintain a simmer and cook, stirring once or twice, until an instant-read thermometer inserted into the thickest part of the breast registers 165°F, 15 to 20 minutes. Transfer the chicken to a serving plate.
Increase the heat under the sauce to medium-high. Stir the water-flour mixture, add it to the pan and cook, stirring, until the sauce is thickened, about 1 minute. Serve the chicken with the sauce, sprinkled with parsley.

How to Stop Being Indispensable


Trying to be in too many places at once?
Are you busy being everybody's somebody? Never dropping the requests and demands from a friend, colleague or partner but all too willing to let your own needs fall by the wayside? Do you feel that if you don't do it, everything else will fall apart at the seams and a disaster will occur? If this sounds like you, you may have a bad case of indispensable"itis" and it's time to get real. Here is what to do.

Trying too hard?
Learn that nobody is indispensable. A harsh fact of life to learn but a real one. Every person is in a replaceable situation when they base their value on what they do rather than on who they are. Even a mother who does everything for her child is replaceable if the child marries or finds someone else to "do it all" (although certainly she's not replaceable as a loving person who matters). Your worth needs to be based on valuing yourself, not on creating value by doing too much for others.
Learn your self worth. A common habit for many people is to define themselves by what they do in life (whether it be a paid or unpaid job, or a role) rather than by valuing oneself as a whole. As a result, when someone suggests that you're not needed to tally the accounts this month or you're not needed to babysit the children, it can be a big ego hit rather than viewing it as an opportunity to be doing something else equally valuable and useful.
Self worth is not something you can glean from a book, although reading about how other people have found their pathway of self-fulfillment in life can help to guide your own ideas. It is important to spend time thinking about your purpose, values, and talents now and then, to ensure you're leading a fulfilling life.
One of the most important ways to develop self worth is to respect yourself. This means not putting yourself down and learning to assert yourself when you feel that your boundaries have been crossed or ignored.
Indispensability can be a sign of wanting to be in control or to be viewed as "the" expert; it can also signal the extent of your comfort zone. This kind of controlling or complacent approach is likely to lead to closed-mindedness about new ways of doing things. Given that things are always changing, this approach can cause you to feel threatened when new people and ideas arrive, as well as leaving you feeling insecure. Keep in mind that expertise is a shared experience and that learning continues to be essential, even for the highly specialized expert. If you worry about losing face when you admit that you don't know all or that you might not be the right person for the task, it's time to ease up and accept that you can't do it all.
 Are you really the only one for the task?
Question why you're always being asked. When somebody asks you to do something many times in a row, question why they chose you. If you get an answer like "because you always do it", or "because you are the only person I know who ever gets work finished around here", or "because you are here", then you know you're well on the way to being used, rather than being viewed as indispensable.

If you're worried that you're being taken for granted, look for reasons like "because your creative vision won us the account last time" before saying yes. And even when you do agree, always remember that it is appropriate to ask for advice, help, and delegation authority, and not just to assume you're "it" for everything.
 What other challenges can you rise to when you feel left out?
Think about the times you've been unceremoniously left out or dropped from activities or events, or overlooked for a job or role. This is an exercise in helping you to realize that you're not so indispensable after all. Even more importantly, it's about seeing the flipside to your own sense of indispensability. Principally, be aware that other people feel fine inserting themselves into "your" role or job where they find it appropriate to do so. Seen from this perspective, it might help you to realize that indispensability is often a convenient concept for you to adopt when you wish to hold onto something all for yourself but very inconvenient when someone else adopts it and prevents you from taking on the opportunities they're hogging.

To escape this way of thinking, learn to take on new roles or tasks that have the potential to expand your own abilities and horizons, without feeling as if you're spoiling another person's indispensability. Provided you're relying on doing what you're best at and approaching it in a team oriented way, you're not taking away anything from another person, just as they don't feel they're taking away anything from you when they seize the opportunities.
 Trying to be everything to one person or workplace can be a risky strategy
Realize what you're up against. One of the modern day paradoxes is how a work system that proves time and again how dispensable we are when it comes to layoffs and demoting also drives us to try and be as indispensable as possible to the workplace. Unfortunately, this attempt at seeming indispensability results in placing all your eggs into the one basket of the company you work for, making things very risky for you when the times get tough and the company axes people. All those long hours, extra miles, and going without at work can actually weaken your position if you didn't allow time to be a well-rounded, balanced person with interests and contacts outside of the firm, things that can act as a safety net when your job does go wrong.
Be very careful about making yourself "indispensable" to a disinterested corporation; by all means be responsible, engaged, and useful as an employee but do not rely on always being loved by the job. Knowing that you are potentially dispensable allows you to continuously cultivate the back-ups you need to ensure a fulfilled, and less worry-ridden life.
At work, make boundaries clear, such as limiting time available for meetings, taking days off, telecommuting, taking vacation periods, etc. If you're prone to giving up vacations or attending one meeting too many because you feel indispensable, you won't be the most refreshed, creative, or enthusiastic employee on board.
Stop fearing the idea of restarting your career. A new career gives you the opportunity to have "beginner's mind". While scary, changing careers completely can shake up a stuck and fearful mindset that has you tethered to your current workplace. With a whole lot of new things to learn and do, you won't have the chance to feel indispensable or complacent!
 
Learn to say no. If you don't, you could end up saying yes to more than you're able to handle and you risk doing a mediocre job of may things, rather than a very good job of a few things. Be selective and learn polite but firm ways of saying no, such as: "I can't today, sorry"; "I'd love to but I'm busy for the next month."; "Thanks for asking but that's not in my area of expertise and I have to get the kids back home by 5 each day anyway."
Check your stress levels. If they're high, it's quite possible that some element of feeling indispensable is involved. You may be doing everything for everyone and not giving yourself the time of day, something that is bound to increase stress and tension in your life. Stress levels will reduce markedly when you minimize your sense of indispensability and become selective about what you will and won't do for other people.
Slow down! Learn patience and accept that focusing on a few things and doing them well is better than spreading yourself too thin to prove to everyone that you're there for them.
 No worries! I'd love for you to fix it!
Learn to delegate. This skill is often overlooked by those who feel indispensable because there is a fear of someone else doing what you perceive as your job, role, or task. Goodness, they might even be better at it than you! When you feel this way, an easy question to ask yourself is this: What is the worst that could happen? It could be that they're better at doing something than you but is that really a worry? If it's true, you're freed up to pursue something you're really good at because in all likelihood, you've delegated something you didn't have the time for or interest in doing.

Delegation also works to put tasks back with the person who is best able to deal with them; this is especially important where someone raises issues about something that they have clearly spotted and seem to know what to do about it. Use delegation to permit them to become involved more deeply in finding the solutions to the issues rather than having you on the back foot being defensive or overloaded.
 Are you valued or taken for granted?
Learn to distinguish between valuable and indispensable. A valuable person is one whose skills and accomplishments are highly sought after, well rewarded, and often praised; such a person is usually one who has the ability to prioritize requests and work at a pace that suits them. An indispensable person is someone who is always there, dependable, reliable at the drop of a hat but is not necessarily the one who gets the trophy, or gets noticed for the right reasons. Indispensability is often equated with being a doormat; the more you feel indispensable, the more you are vulnerable to having everyone wipe their feet on you as they load the tasks on to you without genuinely recognizing your true talents and worth.
 Take time to pause and reassess
Put balance back into your life. Along with learning to say no and standing up for your needs, act on those needs. Start pampering yourself and doing the things you'd rather have been doing while you've been too busy being indispensable. Start making it clear to others where your real talents lie and respond with alacrity only where those talents are being nurtured and fulfilled. Sometimes, it requires a complete break from whatever you've been doing so that you can gain perspective and return as a refreshed person ready to tackle things differently; it's worth it to lead the rest of your life with realized self-worth.
 

Tips
Have a discussion with the person or group making you feel indispensable. If the boss' expectations are unrealistic or the volunteer organization is relying too much on your altruism, it may be time to ask for changes. Tell the boss or volunteering organization that you have needs as much as those you're offering or volunteering to help.
Tell your boss politely that your performance is not optimal when you're still at the desk at 10pm at night when you've been in since 8am. Get your work done by 5pm and leave promptly. If it cannot be done on time, it's either too much work or you might need to assess how you're using the time during the day. If it's the sort of job where such hours are considered the norm, unless it's really thrilling you, look for a new career.
Tell the teacher that you're not the only one in the class who can be relied on to clean out the fish aquarium. You be in the position of being taken for granted because you let them and a little talk can help to enlighten them on seeing that you're being relied on too often. Few people like being placed in the position of having this pointed out, and will remedy it quickly.
If your family is the source of your feeling indispensable, this can be the hardest bind of all because of the emotional attachments involved. Seek outside help to clarify the situation if needed but certainly do start to point out every family member's personal responsibilities rather than shouldering it all. Sometimes it's a case of talking about what everyone has simply been assuming.

Note that few skills are indispensable, especially when you don't click with the person in a position to fire, leave, or cease communicating with you. Many people would prefer to work, live, or play with someone they like and get along with even if that person isn't optimal in skills or tasks over someone who is brilliant at the role or job but is a total hard case to get along with. Keep in mind that just because you're brilliant doesn't mean you're bearable! Spend more time brushing up on the socializing skills if you want greater sticking power.

So often when things change in our lives, we have such a resistance to the change. This is because when people see a big change appearing they are often fearful that it is something bad. But it is important to remember that when something big changes in our lives, it means something better is coming. There cannot be a vacuum in the Universe, and so as something moves out, something must come in and replace it. When change comes, relax, have total faith, and know that the change is ALL GOOD.

What to Do if You Find a Dog
 
Many Many people are reluctant to take a found dog to the

humane society or local animal shelter when found for fear

the dog won't be reunited with its owner and be euthanized.

What else can you do?

If you do take the dog to the humane society or animal

shelter, you can leave your contact information with a note

that if the owner is NOT found, to call you as you will

consider adoption. From there, you can decide what you

want to do.

Alternatively, here are some other things you can do to try

to find the dog's owner.

# Start by checking the dog for a tag or microchip. Tags

should be obvious as they would be on a collar. Most humane

societies or emergency clinics will have a scanner and will

scan the dog to identify a microchip. If they find one, they

will try to contact the owner.

# Contact your local humane societies, animal shelter, local

veterinarian's office, and local animal emergency clinic. Fax

or take them a flyer to post on their bulletin board.

# Create a flyer. Include information about where the dog

was found, the date it was found, a description of the dog,

a photo of the dog and your contact information.

# Posting signs or flyers in the neighborhood where the dog

was found (posting photos with the information on telephone

poles, your local library community board, at the grocery

store, ice cream parlor, etc).

# Place an ad in your local paper or papers (since it is free!)

Even if the owner doesn't read it - a friend of theirs might!

# Walk to neighborhood. Take a walk and ask around if

anyone lost a dog.

10 Tips for Photographing Pets
  
  Just like photographs of your kids, you'll always want

photographs of your pets to put online, to print, and to

share with others. But how do you take a picture of your

pet that looks great and captures them at their best?

Whether they stay still or bounce around, pets are a tricky

subject for photography. After reading the hints in this

article, you'll go from pet snapshots to pet masterpieces.

Steps

Having the camera on you makes it easy to capture those

moments.
Have your camera with you. Stating the obvious? It's not.

Many people miss precious pet moments by not having their

camera with them when spending time with their pets.

What's more, if your pet gets used to you having your

camera on you, they'll be more inclined to concentrate on

doing cute things rather than on taking interest in your

camera or even being afraid of it. Today's high quality small

digital cameras make it easy to take your camera with you

when playing with your pets, walking them, or just spending

time together, so remember to carry it with you.

A pet portrait - this dog just can't wait to get on the move!
Consider your pet's personality. Before you start

photographing your pet, ask what sets your pet apart from

other animals. This shouldn't be too hard since you've spent

a lot of time raising and caring for your pet. The aim is to

capture the parts of your pet's personality that bring out

your pet's best, and knowing the right moments likely to give

rise to these aspects of your pet's personality is helpful.
For example, if everyone knows your pet as a sleepy, lazy

or placid little creature, set up your photo shoot around his

bed or near where he goes after a meal to lie in the sun and

you’ll have every chance of capturing a shot that sums up

your pet completely. Alternatively if your pet is hyperactive,

inquisitive and always on the move, it might be better to do

your shoot at a local park where he’s racing around, jumping

for balls, or playing with other animals.

Show off your pet's special abilities. Bunnies can balance

things on their heads.[1]. Hamsters can stuff their cheeks.

Cats are very flexible. Dogs can chase their tails, shake, and

do tricks!
 
Think about context. Choosing the location for the perfect

pet shot is dependent on where your pet is feeling at ease

and comfortable. For dogs, that's almost anywhere you are

but for less boisterous and shyer animals, the best context

might be on their terms rather than on yours.
Find a location that will evoke memories and emotions for

you as the pet's owner, in years to come. For example, you

might have a place that you and your pet have shared some

special moments together, a place that will mean a lot in the

future as you look back over your shots.
Aim to keep the background simple.
Consider the background of your shots carefully. Ultimately

you don’t want your backgrounds to distract from your

photo – sometimes the best locations are the plainest ones,

such as a large patch of green grass, a well lit room with

white walls and plain carpet, etc., can be ideal. Equally, they

might appear too plain and sterile, so pay attention to such

details. And what you certainly don't want is the garbage

can or a boring or ugly wall backdrop! Bear in mind that if

the different elements in the background of the shot don't

add to it, avoid them.

Outdoors is best!
Be aware of the best lighting situations. When it comes to

pets, lighting is especially important. For starters, it is not

recommended to use the flash because it distracts animals

easily and can frighten a good number of them too. Flashes

also create spooky red-eye problems with some animals and

while you could photoshop this out, it's best avoided. The

only real exception is when you're photographing a pet with

very dark or black fur, as the black or dark fur tends to

absorb light and flash can add detail. With dark furry pets,

you might want to slightly over-expose your images for this

same reason.
Be careful not to over-expose white pets.
Prefer outdoor light as much as possible because it is the

best natural light option, comes in an array of wonderful

colors that indoor light doesn't, and outside photo shoots

tend to work best. Keep in mind that with white pets, you

run the risk of over-exposing shots so try to find a location

out of direct sunlight and definitely avoid a flash.
Get good natural light positions if indoors.
If you want to take indoor photos, try to stage the shots

near a well lit window or in a room with plenty of natural

light streaming in. Don't use a direct flash because this will

cause washed-out photos and might harm your pet's eyes

and raise the fear factor.
Use exposure compensation, all the time. On digital cameras

this is one of the most important adjustments. Look on your

LCD screen and watch for terminal underexposure or

highlights blown out to pure white (or close to it). Adjust the

exposure compensation as necessary.

Set up your camera for speed so that you can freeze

motion like this.
Set up your camera. If you're going to get great shots, it'll

pay you well to be familiar with a few critical adjustments.

Many pets present a challenge to photographers because

they're active and always on the move. The key with any

subject that’s on the move is to freeze their action by using

a fast shutter speed. Most digital cameras these days will

allow you to shoot in full manual mode if you feel confident

enough to get the mix between shutter and aperture right –

alternatively you can work in shutter priority mode where

you set the shutter speed and the camera automatically

does the rest by picking a good aperture to work with your

shutter speed.

If you find the following sub-steps confusing, or if you

don't care about technical trivia, feel free to ignore these

details; composition and lighting are much more important

and interesting.


Slower ISO speeds result in less noisy pictures – but

require longer shutter speeds, which are worse for freezing

motion. Don't sweat this too much; "Auto" usually works

fine.
Kick up the ISO as far as you dare. Faster ISOs mean

faster shutter speeds, all else being equal, which allow you

to freeze motion. Higher ISOs mean more noise though, so

play with it until you reach a level of noise you find

acceptable. If your camera has the ability to set ISO

automatically, ignore the preceding two sentences and use

it, and set your camera to shutter-priority mode to ensure

you get a fast enough shutter speed. The last alternative is

to use "sports" mode, which will mean the camera will select

the fastest shutter speed possible for your situation.

Automate as much as you can. Set your camera to one of its

automatic modes, and fully programmed automatic if that's

what gets the results you want. Animals move too fast to

give you time to operate everything manually.
Set up your camera for speed. If your pet is a fast mover,

you might also want to consider shooting in continuous mode

(burst mode) to take a quick series of shots in a row. This

can also lead to a wonderful sequence of shots that work

well together. Use continuous shooting and continuous auto

-focus; exactly what this will be called depends on your

camera – read your camera's manual for details.
Once you’ve got your shutter speed nice and fast, make

sure your camera is always at the ready so you can

anticipate the actions of your pet.
A boring snapshot: too far away, and taken from a human's

eye level.
Take a pet's-eye-view of the world when taking your

photographs. Get down on your pet's level where you can

look at them eye to eye. Images taken by a photographer

standing up and looking down on your pets not only leave you

too far away from your subject but they also mean the

shots end up displaying the "human perspective" – and look

like snapshots, not portraits. Getting down at your pet's

level means you enter their world and get a glimpse of what

life looks like from their angle – you’ll be impressed by the

results as they're more personal and have a real element of

intimacy.
 
Don't be afraid to lie on your stomach on the ground if it

gets a more interesting picture.
Get down on their level, fear not the itching and the insects!
Get as close to their level as you possibly can. Roll around to

take pictures of your pet from different and unusual

angles. Use your imagination.
Same dog as last step, same camera, better picture: take

pictures at their level and get as close as you can.
Get in close. Pets come in all shapes and sizes but in most

cases, they're smaller or shorter than a human and as a

result they tend to end up getting a little lost in photos

unless you make an effort to get up close to them. Of

course, getting close is not always easy, especially if you

have a pet that likes to move around, but it’s worth making

the effort as the detail that can be gained and the

personality that can be captured by an up-close-and-

personal photo shoot with a pet can really lift a photo to a

new level. Move yourself closer when you can and ensure

that there aren't any distracting elements in the frame.
If you can’t physically get close to your pet, get your

camera equipped with a zoom lens. The added benefit of a

long focal length is that it will help with isolating your pet in

terms of depth of field (that means, giving you a nice blurry

background so that your pet is the center of attention with

no distractions).
Try a wide angle lens. A wider angle lens allows you to get in

close (point 3) but also fits in a lot of the pet. The other

benefit of it is that using a wider angle lens will often give

your image a little distortion that will give your image a new

creative and fun perspective. Read up on ways to use the

wide angle lens distortion creatively; or just experiment.
Take lots of pictures; pets change from second to second.
Catch your pet unawares. Wait for your pet to do something

cute (or just looking cute, as pets do) and take your

pictures. Take as many as you can, since animals are doing

something different from second to second, and taking

many photos is free on digital (and on film you can justify it

to yourself by thinking of how much film you could shoot

with the digital camera you didn't buy). Play with your pet.

Take pictures while someone else plays with your pet. Get

them engaged and active. You never know what they'll do.
Spontaneous and candid is much better than posed.
Take care with posed pet shots. Apart from the near-

impossibility of getting a pet to stay still for long enough,

the best photographs come from animals doing what they do

best: acting cute and behaving spontaneously. A favorite toy

and some treats go much, much further than unnatural pet

clothes and everything else that typically goes wrong with

amateur "posed" photographs.
 
If you really want to try posed shots, photograph them

candidly, paparazzi style. It's fun to take shots while your

dog digs up flowers, as your dog buries a bone, as he falls

and chases a bee around. When you just sit there and wait

for his antics to start, you can photograph him the whole

time without him even noticing.
 
Mix up your framing. Pets, like human subjects, look

different from different angles and framing them in a

variety of ways can bring out different perspectives to your

shots. In your photo shoot, take some tightly cropped facial

shots (even focusing right in on single features like eyes,

noses, ears, whiskers, etc.) but also make sure you take

three quarter body shots as well as full body shots. This

way, you end up with a series of shots that give viewers of

your photos a full perspective on who your pet is.
 
Be playful. Pets can be playful little critters and rather than

attempting to contain this to get them posed for that special

shot it’s often very effective to go with their playfulness

and make it a central feature of your image. Include their

toys, stimulate them to look longingly into your camera by

holding a special treat above your head or take a picture

with them sitting on top of you mid-wrestle, etc. Make your

photo shoot a fun experience for both you and your pet,

and your shots are likely to reflect your enjoyment.
 
Here are some extra tips for shooting pictures of your pets

or children.

Tips
Keep the eyes in focus; this is where people instinctively

look.
People instinctively look at the eyes and photographs are no

different. Pets do the same. When taking at photographs,

make sure you're focused on them. Use your autofocus lock

if you're on an autofocus camera.
Sharing is good. And get kids and animals together for

optimal cuteness.
It's said that you should "never work with children or

animals".[2] That's for portraits. Posing just isn't in their

short list. But get them together and let them do their thing;

it can make for wonderfully cute, spontaneous photographs.
Sleeping pets make for great close-up photographs.
Eventually your pet will get tired and fall asleep. Take

pictures! As well as looking extra-adorable while asleep, it's

also easier to get much, much closer to them without them

taking too much interest in you and your camera (namely,

trying to eat the latter).
Lose your tripod. You don't need it. If you're shooting a

huge telephoto that requires one to reduce the consequent

camera shake, you're not getting close enough. If you find

yourself using shutter speeds too long for shorter lenses,

you're just going to end up with a blur as your pet moves

around. Pets are moving targets, and tripods are almost

never necessary for shorter lenses in good light.
A pet is a great subject for practicing photography. It's

cute and will happily model for portraits, action, and candid

photos for hours, though not necessarily in any particular

order. Use a digital camera, if you have one, for instant

feedback and free experimentation.

Warnings
If you're taking photos indoors (and you shouldn't be), at

the very least, bounce your flash off the ceiling rather than

firing it directly at your pet. Direct flash indoors makes for

uninteresting photos, as mentioned earlier; but powerful

flashes fired directly into the eyes of a subject at close

range scares your pet unmercifully, and it also carries the

risk of damaging your pet's eyes.

1 pinch salt
2 eggs, beaten
1/2 cup milk
1 tablespoon butter

Directions
In a large bowl, stir together the flour and salt. Add the

beaten egg, milk, and butter. Knead dough until smooth,

about 5 minutes. Let rest in a covered bowl for 10 minutes.
On a floured surface, roll out to 1/8 or 1/4 inch thickness.

Cut into desired lengths and shapes.
Allow to air dry before cooking.
To cook fresh pasta, in a large pot with boiling salted water

cook until al dente.

How to Make Hoppers (Indian Cuisine)
  
 
Hoppers make a great combination with South Indian and

Sri Lankan curries, forming an integral part of the local

cuisine. Hoppers come in different varieties and appear

differently depending on the chef's personal preferences.

Here is how to make delicious hoppers at home.

Ingredients

3 cups white rice
1 cup cooked white rice
1.5 cups grated coconut
1/2 cup coconut milk
1 tsp sugar
1 tsp salt
1 tsp yeast
100 ml (3.38 fl oz) lukewarm water
Steps
 
Soak the white rice in water for 3 to 4 hours.
 
Add the yeast and sugar to the lukewarm water. Leave aside

for 10 minutes.
 
Drain out the water from the soaked rice and grind it along

with the grated coconut and cooked rice to a smooth batter.
 
Add coconut milk to the batter until pouring consistency is

achieved.
Add the yeast and sugar mixture to this batter and stir

well, adding salt to taste.
 
Leave the batter to ferment for approximately 6 to 8

hours.
After the time has passed, heat a pan and grease it with oil

to prevent sticking.
 
Pour a ladle of batter to the pan and swirl it quickly to

spread the batter.
 
Most of the batter will pool at the centre of the pan and

sides will be thin and laced.
 
Cover the pan and cook for 3 to 4 minutes or until the

centre of the hopper is cooked.
 
Use a spatula to gently remove the hopper. Your delicious

hopper is ready – enjoy!

Tips
The pan used should preferably be a wok or something

similar, so as to achieve the laced edges.
You might not get your hopper right the first time. Practice

makes perfect.
Hoppers can be changed according to personal taste. You

can add an 'egg in the basket' or cheese to the centre.
If grated coconut is not available, add 1 additional cup of

coconut milk instead.

Warnings
Grease the pan before cooking the hopper or it will stick to

the pan.
The batter might turn sour if left to ferment for more than

the required time.

Healthy Pork Chop Casserole

This is a "wonderful" comfort dish! Children LOVE it, and do

NOT even know they are eating their veggies, unless you tell

them. You will have very tender chops, that can be cut with

a fork! Also, a great dish for any type of large function.

Yield: Can serve 4 to 12

Preparation Time: 20 minutes

Start to Finish Time: 2 to 2-1/2 hours

4-8 bone-in or boneless pork chops
6-10 Russet potatoes, peeled and sliced
1 large head cabbage, sliced
1-2 large onions, peeled and sliced
1 can cream of mushroom soup
1 can cream of chicken soup
Foil
Salt and Pepper to taste


Preheat oven to 350 degrees. Wash and pat dry chops with

paper towels. Season each with a little Kosher/sea-salt/no-

salt, and fresh ground pepper to taste.

In a non-stick frying pan, drizzle a little olive oil. On high

heat when oil is rippling, lay each chop in pan, only browning

each side! When browned on both sides, take out of pan and

lay on paper towels to drain any fat or oil off.

In a large deep casserole dish, lightly spray with olive

oil/Pam/or using butter, oil dish lightly for non-stick.
1. Lay your medium-thin sliced potatoes, 1-2 layers making

sure to cover the bottom of the dish.
2. Cover with a layer or two of sliced cabbage.
3. Next layer add sliced onions.
4. On top of onions, lay "browned only" chops.
In a medium bowl, mix together cream of mushroom and

cream of chicken soups, then spread evenly on top of your

casserole. Making sure everything is covered.
Tightly cover the dish with the shiny side of the foil down.

Place in preheated oven and cook 1-1/2-2 hours. When

finished, let rest for at least 20 minutes before removing

foil.

SHRIMP CREOLE

INGREDIENTS:

2 lbs. raw shrimp, in shells *I use the ones that are 41-50

ct. per pound and cut each in half*
1/4 c. butter
3 medium onions, chopped (1 1/2 cups)
2 medium green bell peppers, finely chopped (2 cups)
2 medium stalks celery, finely chopped (1 cup) *I never

have celery on hand, so I just leave it out.*
2 cloves garlic, finely chopped
1 cup water
2 tsp chopped fresh parsley *I never have this on hand

either, so I use dried or leave it out*
1 1/2 tsp salt *Since I never have celery, I use celery salt.*
1/4 tsp ground red pepper, cayenne
2 bay leaves
1-15 oz can tomato sauce
6 cups hot rice
**I also add white pepper and black pepper (about 1/4 tsp

of each), and MSH dashes his liberally with hot sauce.**


DIRECTIONS:

1. Peel and de-vein shrimp (and cut them into smaller pieces

if you
want). Cover & refrigerate.

2. Melt butter in saucepan over medium heat. Cook onions,

bell pepper,
celery, and garlic for about 10 minutes, stirring

occasionally, until
onions are tender.

3. Stir in remaining ingredients, except shrimp and rice.

Heat to
boiling; reduce heat to low. Simmer, uncovered 10 minutes.

4. Stir in shrimp. Heat to boiling; reduce heat to medium.

Cover and
cook 4 to 6 minutes, stirring occasionally, until shrimp are

pink and
firm. Remove bay leaves. Serve shrimp mixture over rice.

Not only is the flavor of this dish absolutely out-of-this-

world delicious, it's really pretty healthy. To make it even

healthier, you can use brown rice, but MSH hates the stuff!

Since there are just 2 of us, and MSH has no self-control

when it comes to this dish, I always make half a recipe. It's

quite easy, I just halve the quantity of everything (except

the spices) and cook it up!

Surf and Barnyard Stew

   A quick and easy one-pot dinner that's relatively low in

fat. For an interesting variation, try substituting venison

sausage for the turkey sausage. Either way, this rich dish is

a real winner.

Yield: 4 servings

1-1/2 tablespoons vegetable oil
1 cup finely chopped onions
1-1/2 cups chopped green bell pepper
3 garlic cloves, minced
1 cup rice
1/2 cup chicken broth or stock
1 can (16 ounces) diced tomatoes
2 tablespoons tomato paste
1/2 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
1/2 teaspoon crushed Italian seasoning
1/2 teaspoon chili powder and/or a few drops Tabasco

sauce (optional)
1/2 pound smoked turkey sausage (Polish kielbasa), peeled,

halved, and sliced 1/2 inch thick
3/4 pound cooked, peeled shrimp

DIRECTIONS:

In a large saucepan or nonreactive Dutch oven, heat the oil

over medium heat. Add the onions, green pepper, garlic, and

rice and saute until the onions are soft and the rice looks

dry and translucent, about 5 minutes. Add the broth,

tomatoes, tomato paste, and seasonings. Bring to a boil, then

reduce the heat and simmer for 15 minutes, until the rice is

cooked. Add the sausage and return to a boil; then reduce

the heat and simmer for 7 to 8 minutes. Stir in the shrimp

and cook long enough to heat through. Remove the bay leaf

and serve.

Wilted Spinach with Apples and Feta Cheese

8 cups torn spinach
1/4 cup sliced green onions
4 slices bacon
4 tablespoons cider vinegar
1 1/2 teaspoons granulated sugar
1/2 teaspoon dry mustard
1 cup sliced or chopped apple
1/3 cup crumbled feta cheese
2 hard-cooked eggs

In a large bowl combine the spinach and green onions; set

aside.
In a large skillet cook the bacon over medium heat until

crisp. Remove the bacon, reserving 2 tablespoons of the

drippings in skillet. Drain bacon on paper towels; crumble

and set aside.
Carefully stir vinegar, sugar, and mustard into reserved

drippings; bring just to boiling. Add apple and cheese. Toss

lightly and transfer to a serving bowl.
Remove the yolk from the hard-cooked egg; press yolk

through a sieve. Chop the egg white. Sprinkle salad with egg

yolk and white and bacon. Serve immediately.
Makes 4 to 6 servings servings.

While visiting my mother in the hospital, I stopped in the

cafeteria for breakfast. I set a piece of bread on the

moving toaster rack and waited for it to pass under the

heated coils and return golden brown. Instead, it got stuck

at the back of the toaster and I couldn't reach it. The

woman next in line quickly seized a pair of tongs, reached in

and fished out the piece of toast. "You must be an

emergency worker," I joked.

"No," she replied with a grin. "I'm an obstetrician."
