REMINDER FROM GOD:
The Healing Power of Confession
"Therefore confess your sins [and faults] to each other and pray for each other so that you may be healed."1
In response to the Daily Encounter, "Do You Want to Be Healed?" where we shared the importance of the need and biblical injunction to confess our sins to a safe and trusted friend, one subscriber responded saying, "Thank you for this message. However, I have a question, what if among the people I fellowship with, there is no one with whom I feel safe to confess my sins. My pastor said that if I confess my sins to someone, and tomorrow, he hears someone talking or gossiping about what I confessed, I can only blame myself for telling it to someone. So where can I find a trustworthy person who will not break my confidence?"
I replied to this lady saying, "Yes, I agree that it is difficult to find a trusted, safe friend, to whom we can confess our sins and faults. This is such a tragedy as the Bible teaches us that this is a vital part of healing. And, unfortunately, I have never in my entire life ever heard a pastor or a 'faith healer' ever teach on the importance of confession of sins as a vital part of healing. My suggestion is, if this is possible, if you can't find a safe, trusted friend, it is worth paying a well-trained professional counselor to whom you can safely confess your sins and faults."
I don't think this is true in the Catholic Church. If confession of sin/s to a priest is done with the right motive, besides being a biblical injunction, besides resolving guilt which, unresolved, can make people literally ill, it is a very healthy and a vital part of healing and recovery. It is tragic when we as Christians don't feel safe to confess our sins to church leaders and fellow church members.
If a counselor is needed for a trusted person to confess to, and if you live in the U.S. or Canada, you could call the Narramore Christian Foundation for the name of a Christian counselor in your area. Call 1-800-477-5893 and press "1" for Dianne and she should be able to help most callers.
If you don't live in North American, it can help to write a letter to God and confess all your sins and faults and feelings in writing (David did this in the Psalms) … then read the letter out loud in a prayer to God, and then tear up the letter so no one else will ever see it and hold it against you.
Also pray and ask God to help you find a safe and trusted friend to whom you can safely share all your failures, struggles, and sins.
Suggested prayer: "Dear God, first, please help me to be a safe and trusted friend with whom fellow strugglers feel safe to confess their failures, struggles, and sins to. And when I need someone to whom I can confess my failures and sins please help me to find a safe and trusted person so I can be freed from guilt and be healed of any unresolved sin and/or super-charged repressed negative emotions that are seriously affecting my physical, emotional, and/or my spiritual health. Thank you for hearing and answering my prayer. Gratefully, in Jesus name, amen."

It has been my experience that life is what you make of it. You can look at it many ways. It can be like a cup of coffee it is all in how you make it. I have decided to look at my life as a garden because your harvest all depends on what seeds you plant. The more positive seeds you plant the more beautiful your life will become. Positive seeds can be anything for example: thoughts, affirmations, counting your blessings, or taking action.
Every day we are faced with choices. We choose how we feel, what we think, and our beliefs. You can look at a glass as half full or half empty. The attitude you choose can make or break your life. Think about life as that glass and if you choose to think of it as half full then your life shapes itself in a positive manner.

Positive affirmations are a good way to plant positive seeds into our garden of life. I like to think of the universe as a mirror it reflects back the thoughts that we think and send out. If we think negative thoughts then the universe sends us negative things and if we think positive thoughts and expect the best then the universe sends us good things in return. We just have to make sure that we say more positive affirmations then we complain in a day. Remember there is always strength in numbers.

Positive visualization is another great way to create a new and beautiful garden of life. Picture yourself living out your dreams. Imagine your new life in great detail. Take responsibility for your life and you will be amazed at the positive changes in your life. Last but not least, do not forget to weed your garden. Weeds are the negative thoughts, excuses, obstacles, and people who hold us back. Always surround yourself with positive people and things. Try to avoid gossip and bad news because these things only bring us down. Instead listen to uplifting music and fill your mind with inspiration. Always remember to look for the positive details in life. For example, stop and enjoy the beauty in nature like blue skies, animals, flowers, and trees.
When I see a palm tree I reflect upon how I want to be like this strong tree. The palm tree bends during the storm but it does not break. When the storm is over it bounces right back! This is a great way to keep your thoughts positive and your mind strong!

Peach or Strawberry Vanilla Ice Cream
4 cups light cream 1 cup sugar a pinch of salt 1-1/2 teaspoons vanilla
Heat 1 cup of cream very slowly (do not boil). Then stir in the sugar and salt until dissolved. Add vanilla. Chill. Add the rest of the cream and freeze.
Peach Ice Cream Add 3/4 cup sugar to 1-1/2 cups of peach pulp; reduce the vanilla to 1 teaspoon and add 1/2 teaspoon of almond extract. Mix well; add to the ice cream mixture and freeze.
Strawberry Ice Cream Add 3/4 cup sugar to 1 cup crushed strawberries and let stand 1 hour at room temperature. Add to ice cream mixture and freeze.

Seasoned Ground Beef Taco Filling
I don't always have the packages on hand and I can season as I like this way.
Ingredients:
4 lb. hamburger 3 Tbsp. chopped onion 1 can beef broth 1 can tomato sauce 1/4 cup chili powder 2 Tbsp. paprika 1 Tbsp. beef bouillon granules 1 tsp. chicken bouillon granules 1 Tbsp. cumin 1 tsp. garlic powder 1 tsp. cayenne pepper 1/2 tsp. pepper 1/2 tsp. lime juice 1/4 tsp. onion powder 1/4 tsp. sugar 1/4 tsp. salt 1/4 tsp. garlic salt
Directions:
In a heavy pan, cook the beef and onion over medium heat until meat is no longer pink, drain. Stir in the rest of the ingredients; bring to a boil. Cover and simmer for 10 minutes.
Always make sure your spices are fresh for the best flavor.

Pulled Pork Taters
This recipe is as manly as it gets, part meat, part potatoes—completely delicious. If there’s ever a time to be jealous of a potato, it’s now Prep: 15 min. Cook: 6 hours Yield: 6 Servings
Ingredients
1 boneless pork loin roast (2 to 3 pounds) 1 medium onion, chopped 1 cup ketchup 1 cup root beer 1/4 cup cider vinegar 2 tablespoons Worcestershire sauce 1 tablespoon Louisiana-style hot sauce 2 teaspoons salt 2 teaspoons pepper 1 teaspoon ground mustard 6 large potatoes 1 tablespoon cornstarch 1 tablespoon cold water 6 tablespoons butter 1-1/2 cups (6 ounces) shredded cheddar cheese 6 tablespoons sour cream
Directions
Place roast in a 5-qt. slow cooker. Top with onion. Combine the ketchup, root beer, vinegar, Worcestershire, hot sauce, salt, pepper and mustard; pour over top. Cover and cook on low for 6 to 8 hours or until meat is tender. Meanwhile, scrub and pierce potatoes. Bake at 400° for 50-55 minutes or until tender. Remove pork; shred meat with two forks. Skim fat from cooking juices; transfer to a large saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Return meat to cooking juices; heat through. With a sharp knife, cut an "X" in each potato; fluff with a fork. Top each with butter and pork mixture; sprinkle with cheese. Top with sour cream. Yield: 6 servings.
Nutritional Facts 1 serving equals 795 calories, 29 g fat (18 g saturated fat), 145 mg cholesterol, 1,677 mg sodium, 89 g carbohydrate, 7 g fiber, 44 g protein.

Peach Smoothies
Since the weather has been hot and humid lately in this part of Wisconsin, Peach Smoothies taste so good . . .
1/3 cup powdered milk 1/2 cup water 1/2 cup peach yogurt 1/2 cup orange juice 1 fresh peach cut into slices or a 1/2 cup of partially thawed frozen peaches
Measure dry milk and water into a blender. Whip for 30 seconds to a minute. Add the yogurt and orange juice and whip for 30 seconds to a minute. Add the peaches and whip for 30 seconds to a minute. Add more fruit juice for a thinner smoothie. Add more peaches and/or yogurt for a thicker smoothie.

Rhubarb Marmalade ~~~~~~~~~~~~~~~~~
If you like regular orange marmalade, you might want to try this recipe for rhubarb marmalade. It’s good on toast, but I like it on waffles and pancakes, too. And since this is the season for rhubarb. . .
4 cups of rhubarb (cut up in small pieces) 4 cups sugar 3 medium to large oranges 1 cup of water 2 tablespoons of cornstarch (optional at the end)
Wash the rhubarb and cut up into small pieces. Wash the oranges and cut up into small pieces, rind and all. (If there are seeds, remove the seeds.)
Combine all ingredients (except the cornstarch) in a large saucepan or a small kettle. Bring to a boil and cook over medium heat for 45 minutes. Stir occasionally at the beginning and stir more frequently toward the end of the cooking period.
If a thicker marmalade is desired, mix the cornstarch into 1/4 to 1/2 cup of cold water. While stirring the marmalade, slowly pour the cornstarch mixture into the marmalade and continue cooking for a few minutes until thicker.
Instead of adding cornstarch, you can also cook the marmalade for another 15 to 30 minutes to reach the desired consistency.
Seal in sterilized jars. Makes about 3 pints.
Process the jars in a boiling water bath for 10 minutes.
Or instead of a boiling water bath, after I have put the lids on the jars, I sometimes put the jars into a cake pan with a couple of inches or water and put them in the oven at 350 degrees Fahrenheit for 10 to 15 minutes.

Slow Cooker Hot Fudge Sundae Cake
PREP TIME 15 Min TOTAL TIME 3 Hr 25 Min SERVINGS 6
INGREDIENTS: 1 cup Gold Medal all-purpose flour 1/2 cup granulated sugar 2 tablespoons baking cocoa 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup milk 2 tablespoons vegetable oil 1 teaspoon vanilla 1/2 cup chopped nuts 3/4 cup packed brown sugar 1/4 cup baking cocoa 1 1/2 cups hot water
DIRECTIONS: 1 Spray inside of 2- to 3 1/2-quart slow cooker with cooking spray. Mix flour, granulated sugar, 2 tablespoons cocoa, the baking powder and salt in medium bowl. Stir in milk, oil and vanilla until smooth. Stir in nuts. Spread batter evenly in slow cooker. 2 Mix brown sugar and 1/4 cup cocoa in small bowl. Stir in hot water until smooth. Pour evenly over batter in slow cooker. 3 Cover and cook on high heat setting 2 hours to 2 hours 30 minutes or until toothpick inserted in center comes out clean. 4 Turn off slow cooker. Let cake stand uncovered 30 to 40 minutes to cool slightly before serving. Spoon warm cake into dessert dishes. Spoon sauce over top.
Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature.
Expert Tips
Cooling the dessert in the slow cooker gives the sauce time to thicken so it’s rich and fudgy.
Top off this chocolate lover’s treat with what else but a scoop of ice cream and a long-stemmed cherry!

REMINDER FROM GOD:
Revelation 6:9
(9) When He opened the fifth seal, I saw under the altar the souls of those who had been slain for the word of God and for the testimony which they held.
The apostle John tells why these saints suffered martyrdom: "for the word of God and for the testimony which they held." For John, these two are important elements, and they occur several times in Revelation. In opening the book, the apostle contends that he himself "bore witness to the word of God, and to the testimony of Jesus Christ" in Revelation 1:2, and in verse 9 he says he "was on the island that is called Patmos for the word of God and for the testimony of Jesus Christ." Later, when observing a vision of God's people contending with Satan, he writes, "And they overcame him by the blood of the Lamb and by the word of their testimony, and they did not love their lives to the death" (Revelation 12:11). A statement similar to Revelation 6:9 appears in Revelation 20:4: "And I saw the souls of those who had been beheaded for their witness to Jesus and for the word of God."
The first element, the word of God, is straightforward: It is the truth, the inspired revelation of God, that we find today in the Bible. For John and many in the first century, it was the Old Testament combined with the life and teachings of Jesus Christ. Only later was this supplemented by the epistles of the apostles, Acts, and Revelation. (No one can be certain when the authoritative canon was compiled, but all the components were likely in place by the time John died. Using Isaiah 8:16, some believe that he authorized the present canon before his death, c. AD 100.) Unlike many today, these martyrs of the fifth seal do not take God's Word for granted, believing that its message is personally vital, current, and authoritative, and they are willing to die rather than compromise with its instruction.
The second element, the testimony which they held, can seem to some to be more complex. The key word, testimony, is the Greek word marturÃan, which means either "the act or office of testifying" or "what one testifies." In modern terms, it is either the giving of evidence, as before a judge in a courtroom, or the evidence itself. The word witness is similarly used, as, for instance, the Two Witnesses of Revelation 11 are called mártusÃn ("witnesses" or "martyrs"), a related word. Their "testimony," then, is evidence they give or a witness they provide.
We should not forget the final phrase, "which they held," as it adds definition and emphasis to their testimony. The evidence they give means something special to them! It is not as if they witnessed an auto accident and, as unbiased bystanders, simply testified about how it happened. Their testimony is something so precious that they hold it fast, bear it, maintain it, keep it in trust, possess it, consider it, believe it, and adhere to it.
How do they give their testimony? It could be different for each one, but notice Jesus' interpretation of this seal in Luke 21:12-19:
But before all these things [the heavenly signs of the sixth seal], they will lay their hands on you and persecute you, delivering you up to the synagogues and prisons, and you will be brought before kings and rulers for My name's sake. But it will turn out for you as an occasion for testimony. Therefore settle it in your hearts not to meditate beforehand on what you will answer; for I will give you a mouth and wisdom which all your adversaries will not be able to contradict or resist. You will be betrayed even by parents and brothers, relatives and friends; and they will send some of you to your death. And you will be hated by all for My name's sake. But not a hair of your head shall be lost. In your patience possess your souls.
He specifically mentions testifying before religious authorities, in prisons, and before secular leaders. These are the "classic" occasions for witnessing of the truth, all of which are reported as happening to the apostles in the book of Acts. He also hints at other ways of testifying, more personal ones that involve relatives and "friends" seeing a Christian practicing his beliefs or hearing him propounding the truth, and betraying him to the authorities.
Hebrews 11 gives multiple examples of the heroes of faith making a witness of the true God and His way. Abel, for example, bore witness by making an acceptable sacrifice (verse 4). Enoch's translation was witness that He pleased God (verse 5). Noah's obedience in constructing the ark bore witness of his faith (verse 7). Abraham testified of his allegiance in many ways: leaving Ur (verse 8), dwelling in tents in Canaan (verse 9), and sacrificing Isaac (verse 17). Sarah, too, testified by conceiving and bearing the promised son, Isaac (verse 11). Later, Moses showed his faith by refusing royal rank (verse 24), forsaking Egypt (verse 27), and keeping the Passover (verse 28).
Likewise, we give testimony of our devotion to God and our beliefs in simple, everyday acts, many of which we probably never consider to be witnessing. We make a witness to other members of our families with our every word, act, and decision. We witness of our adherence to law in our public activities, from driving our cars to paying our taxes. Our diligence and thoroughness on the job testify of our godly character or lack thereof. One could go so far as to say that everything we say and do that is witnessed by others shouts out the testimony that we hold.
Are we, like these martyred saints, willing to lay down our lives for God's Word and our beliefs? It may never come to that for any of us personally, but do we have the sacrificial attitude applauded by Revelation 6:11 and many other New Testament verses? Do we value God's revelation of His way of life highly enough to defend it despite the cost? Do we, as Jesus warns in Luke 14:26, "hate" our lives enough to be His disciples?

7 Choices You Always Have (that you don’t always give yourself)
I believe the choice to be excellent begins with aligning your thoughts and words with the intention to require more from yourself. ~ Oprah Winfrey
Making choices is probably the most stressful thing that we do as humans. Or perhaps more accurately, the stressful thing we do is to choose avoidance when we don’t like what choices we’re facing. This is what creates the stress.
It doesn’t have to be that way though, especially if you don’t make yourself solely responsible for the outcome of all the things that you don’t like about your life. Basically we work like this: When we don’t like the result of our choices, we blame ourselves and lose confidence in our ability to make choices in the first place.
None of us can predict the outcome of every choice we make – including how others will or won’t respond to the things we choose for ourselves. And to think that we can, need to, or should is the enemy that so often prevents the feeling of living with purpose.
What we can do, however, when we are fearful about making a choice, is turn towards it, rather than away from it. Get uncomfortable for all of five minutes (that’s literally the length of time of actual discomfort at most), and make a decision in your mind to see how it feels before you act on it. You can learn to do this in just a few moments with practice.
To help you, here are seven strategies for not only making choices, but creating choices that you did know you had:
1. When faced with a choice that you don’t like or want to make, first ask yourself: “In this situation, what choice makes me more of who I want to be in this world?†Your choices are a reflection of what you value most in this world whether that’s love, kindness, integrity, courage, or something else.
2. Reflect on the choice you want to make and then ask yourself: “How will I feel about this choice in 10 minutes? 10 days? 10 months? 10 years?†Your mind can imagine future feelings that will help you to make big decisions like which job to take, what school to attend, or who to marry, etc.
3. Ask yourself a more beautiful question than: “What should I do?†– I guarantee that the answer is never good when the word “should†appears.
Substitute with: What’s the courageous thing to do? What is the loving thing to do? What is the life-serving thing to do? Or make up your own more beautiful question!
4. When in doubt, ask for some space and time before you answer. A few minutes. An hour. A day. A week. No one expects you to answer right away (except you). This way you can still your mind and feel into the right choice for you.
5. Find a “private ear†– someone that will mirror back what you really want for yourself. There’s always a part of you speaking your truth amongst the jumble of other stuff you’re saying. Well-meaning, highly invested people are well-meaning, highly invested listeners.

Refrigerate for up to 30 minutes. Set aside remaining marinade. Drain and discard marinade from salmon. Place salmon in a greased 11-in. x 7-in. baking dish. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork. In a small saucepan, bring reserved marinade to a boil; cook and stir until slightly thickened. Stir in pecans; serve with salmon. Yield: 4 servings.

Preheat oven to 375°F. Mix all ingredients except preserves until crumbly. Press two-thirds of crumbly mixture in ungreased square pan, 9 x 9 x 2 inches. Spread with preserves. Sprinkle with remaining crumbly mixture; press lightly. Bake 20 to 25 minutes or until golden brown. Cool completely. Cut into about 2 x 1-inch bars.
Apricot Linzer Bars: Substitute ground almonds for the ground walnuts and apricot preserves for the raspberry preserves.

Serves: 8 Prep Time: 15 minutes Cook Time: 90 minutes 5 cups turkey stock, recipe and ingredients below 3 stalks celery, cut into 1-inch pieces 2 large potatoes, peeled and quartered 2 carrots, cut into 1-inch pieces 1 onions, quartered 1 cup uncooked noodles 2 cups cooked turkey, cubed
Rich Turkey Stock:
Simmer the following ingredients: 2 pounds bony turkey pieces (back, neck & wings) ** 2 tablespoons vegetable oil 3 stalks celery with leaves, coarsely chopped 2 medium carrots, coarsely chopped 1 large onion, cut in chunks 1 to 4 cloves garlic (adjust amount used to taste), peeled 8 cups cold water 3 whole cloves 2 bay leaves 1/2 teaspoon dried thyme 1 teaspoon salt 1/4 teaspoon whole black peppercorns
Pat turkey parts dry with clean paper towels. Over medium-high heat, heat oil in a 5-quart saucepan or Dutch oven. In 2 to 3 batches, brown turkey parts on all sides. Remove from pan with a slotted spoon and reserve in a large bowl. Add celery, carrots, onion and garlic to pan and sauté until onion is tender, about 3-5 minutes. Return turkey parts to pan. Add water and bring mixture to a boil. Skim foam from surface. Add remaining ingredients. Reduce heat, cover and simmer for 1 hour or until turkey pieces are tender. Lift out turkey pieces with a slotted spoon. Strain stock through a sieve lined with 1 or 2 layers of cheesecloth. Discard vegetables and peppercorns. Skim off fat. Use a metal spoon to ladle the fat off the top or chill stock and remove solidified fat layer. When turkey is cool enough to handle, remove meat from bones. Discard skin and bones. Reserve meat for future use. Stock may be used at once or stored in a closed container in the refrigerator 1 to 2 days; or stored in freezer up to 6 months.
** NOTE: A leftover turkey carcass may be substituted for turkey pieces. In 5-quart saucepan, combine turkey stock and first 4 ingredients. Over high heat, bring to a boil. Reduce heat, cover and simmer for 1 hour. Stir in the noodles and turkey meat. Simmer until noodles are done and meat is heated through.

DIRECTONS
To make the marinade, place all the ingredients in a medium bowl and stir until well blended. Trim the fat from the steak and cut across the grain into 1/2-inch strips. Pour the marinade into a large resealable plastic bag and add the steak strips. Seal the bag and turn several times so all the steak strips are covered with the marinade. Marinate in the refrigerator for 4 to 6 hours. Drain and reserve the marinade. Prepare the grill or electric grilling machine for cooking. If using a charcoal grill, thread the peppers onto skewers and place on an oiled grid over ashen coals. Grill for 15 to 18 minutes. Thread the onions onto skewers and grill for 12 to 15 minute or until they are tender, turning once. Brush the vegetables with the reserved marinade occasionally. Thread the steak strips onto skewers. About 10 minutes before the vegetables are done, move them to a cooler part of the grid. Place the steak strips in the center of the grid and grill for 8 to 10 minutes for medium rare to medium doneness, turning once. Brush with the reserved marinade. Remove the steak strips and vegetables from the grill, season to taste, and remove from the skewers. If using an electric grilling machine, add the peppers, drizzle a bit of marinade over the top, cover and cook for 3 to 4 minutes, or until tender. About 1 to 1 1/2 minutes before the vegetables are done, push them to the top of the grill and place the steak strips on the lower portion of the grill for 1 to 1 1/2 minutes for medium rare. Remove, place the steak, onions, and bell peppers individual serving bowls, and cover to keep warm. While the steak and vegetables are cooking, warm the tortillas by covering tightly and placing them in a warm oven (250 degrees F) for about 15 minutes. Place a tortilla on each dinner plate. Serve the steak and vegetables family-style, allowing everyone to roll their own fajitas. Serve with salsa, cheese, guacomole, cilantro, or sour cream toppings.

Apple Cherry Turnovers
Turn escalloped apples into an extra-fruity pastry with the addition of dried cherries. Wrap the fruit in delicate pastry sheets and bake until crisp.
Serves: 4 Prep Time: 10 minutes Cook Time: 15 minutes
INGREDIENTS:
1 (12oz.) package STOUFFER'S Harvest Apples, fully heated according to package instructions 1/4 cup dried cherries 1/2 (17.3 oz.) package frozen puff pastry sheets, defrosted according to package instructions
DIRECTIONS:
PREHEAT oven to 400°F.
COMBINE Escalloped Apples and dried cherries in small bowl. Unfold puff pastry sheet; cut into four equal squares.
SPOON 1/4 apple mixture onto center of each square. For each turnover, fold one corner of dough over filling to form triangle; crimp edges of each turnover with fork to seal. Place turnovers on a baking sheet.
BAKE for 15 minutes or until golden brown. Drizzle with caramel sauce, if desired.

Mexican Rice
A 'side of Mexico' sure to enhance any Mexican meal
Serves: 8 Prep Time: 5 minutes Cook Time: 35 minutes 2 tablespoons butter or margarine 1 cup long grain white rice 1/2 cup onion, chopped 2 cloves garlic, finely chopped 1 16-oz. Jar ORTEGA Thick & Chunky Salsa, medium 1 1/4 cups water 1 large carrot, peeled and shredded 1/2 cup frozen peas, thawed (optional)
MELT butter in large saucepan over medium heat. Add rice, onion and garlic; cook, stirring occasionally, for 3 to 4 minutes or until rice is golden. Stir in salsa, water, carrot and peas. Bring to a boil. Reduce heat to low; cook, covered, for 25 to 30 minutes or until liquid is absorbed and rice is tender.
* Notes: For a quick-cook Mexican Rice, use 4 cups instant rice instead of 1 cup long-grain white rice, and 2 1/2 cups water instead of 1 1/4 cups water. After salsa mixture comes to a boil, cook for length of time recommended on instant rice package.

Directions
In a small bowl, combine the oil, vinegar, garlic, salt and herbs. Pour half of the marinade into a large resealable plastic bag. Add mushrooms; seal bag and turn to coat. Pour remaining marinade into another large resealable plastic bag. Add remaining vegetables; seal bag and turn to coat. Refrigerate for at least 1 hour. Drain vegetables and discard marinade. Grill mushrooms, covered, over medium heat for 3-4 minutes on each side or until tender. Place remaining vegetables in a grill wok or basket. Grill, covered, over medium heat for 8-12 minutes or until tender, stirring frequently. Spread cheese over mushrooms; top with vegetables. Yield: 4 servings.
Editor's Note: If you do not have a grill wok or basket, use a disposable foil pan. Poke holes in the bottom of the pan with a meat fork to allow liquid to drain.

Grill, covered, over medium heat for 15-18 minutes on each side or until potatoes are tender. Carefully open foil. Sprinkle the bacon cheeses over potato mixture. Grill 3-5 minutes longer or until cheese is melted. Open foil carefully to allow steam to escape. Yield: 4-6 servings.

In a large bowl, combine the oil; vinegar; lemon juice; parsley; sugar; salt, if desired; basil; and cayenne pepper. Cut the cooled corn off the cob. Add the corn, tomatoes, onion, and green and red peppers to the oil mixture. Mix well. Cover and chill for several hours or overnight.

Igloo Unusual, but interesting! If you're looking for something to do with your children, you can make play structures. Depending on how permanent you want the structure to last, you can either hot glue the bottles together or even bolt them together. (Check out a finished igloo over at Craft.) It's a fun project for children and adults, and the finished project is mobile enough for the kids to enjoy.
Planters You can make planters out of milk jugs. Just cut the tapered end off. What you are left with is a nice little pail for starting seeds in. Another interesting garden use for milk jugs? Protective cloches for small plants. Simply cut away the bottom, then place the jug over the plant.
Kids Masks With a little craftiness, you can make fun costume masks with your children that can be as elaborate (or as simple) as you like. The blog Filth Wizardry has instructions for some more fancy ones, including Batman and the Stormtroopers from Star Wars.
Funnel It's one of those tools that we mean to have, but never buy. In a pinch, the top of a gallon milk or water jug can work as a funnel. All you have to do is cut off the bottom. To see one in action, take a look at the blog Saving By Making.

Summer Salsa Salad
Yield: Makes 10 servings.
8 ears fresh corn, husked and cleaned 1/2 cup vegetable oil 1/4 cup cider vinegar 1-1/2 teaspoons lemon juice 1/4 cup minced fresh parsley 2 teaspoons sugar 1 teaspoon sea salt (optional) 1 tablespoon chopped fresh basil or 1/2 teaspoon dried basil 1/4 teaspoon cayenne pepper 2 large tomatoes, seeded and coarsely chopped 1/2 cup chopped onion 1/3 cup chopped green bell pepper 1/3 cup chopped red bell pepper
In a large saucepan, boil the corn for 3 to 5 minutes, or until tender. Drain and set aside to cool. In a large bowl, combine the oil; vinegar; lemon juice; parsley; sugar; salt, if desired; basil; and cayenne pepper. Cut the cooled corn off the cob. Add the corn, tomatoes, onion, and green and red peppers to the oil mixture. Mix well. Cover and chill for several hours or overnight.

These wraps are perfect for supper or a party.
Serves: 4 Prep Time: 10 minutes Cook Time: 15 min. 4 Mission Burrito Size Flour Tortillas 1/3 cup butter or margarine, softened 6 tbsp. grated Parmesan cheese 4 oz. provolone cheese, thinly sliced 4 oz. salami, thinly sliced 4 oz. capicola, or ham, thinly sliced 1/2 cup jarred, roasted bell peppers, rinsed and cut into strips 4 oz. mozzarella cheese, shredded marinara sauce or pizza sauce, heated
1. Heat oven to 400° F. 2. Lightly spread one side of each tortilla with softened butter; sprinkle with 1 tablespoon Parmesan. Arrange one fourth each of provolone, salami, capicolla (or ham) and roasted peppers over center of tortillas, leaving border around edges. Sprinkle with one fourth of the mozzarella. Fold up “wrap fashionâ€. Place seam side down on nonstick baking sheet. Brush with remaining butter; sprinkle with remaining Parmesan. 3. Bake 12 to 15 minutes or until golden brown. 4. Slice each “stromboli†in half on the diagonal. Serve with marinara or pizza sauce, if desired.

Try this scrumpious cherry pie. It will become a family favorite. Since you are using frozen or canned cherries, this pie can be made any time of year.
Serves: 8 Prep Time: 10 minutes Cook Time: 1 hour
4 cups frozen unsweetened tart cherries 1 cup granulated sugar 3 tablespoons quick-cooking tapioca 1/2 teaspoon almond extract 2 (9-inch) pie crusts 2 tablespoons butter, or margarine
Preheat oven to 400 degrees. In a large bowl, combine cherries, granulated sugar, tapioca and almond extract; mix well. (It is not necessary to thaw cherries before using.) Let cherry mixture stand 15 minutes.
Line a 9-inch pie plate with pastry; fill with cherry mixture. Dot with butter. Adjust top crust, cutting slits for steam to escape.
Bake 50 to 55 minutes, or until crust is golden brown and filling is bubbly. Note: 2 cans (16-ounces each) unsweetened tart cherries, well drained, can be substituted for frozen tart cherries.

A beautiful brunch or breakfast entree. It looks as good as it tastes!
Serves: 8-10 Prep Time: 30 minutes Cook Time: 45 mins. 8 Rhodes Texasâ„¢ rolls, thawed and risen 8 oz package cream cheese 3 cups chopped fresh spinach 1/2 teaspoon basil 1/2 teaspoon rosemary 1 egg 1/4 cup Parmesan cheese 2 cups ham, chopped 1 cup sliced fresh mushrooms 1/2 cup chopped onion 1 clove garlic, minced 2 tablespoons butter 1/4 teaspoon salt 1/8 teaspoon pepper 1 egg, beaten Parmesan cheese, if desired
Press rolls together and roll out to a 10x13-inch rectangle.
Mix cream cheese, spinach, basil, rosemary, egg, Parmesan cheese and ham in bowl. Spread mixture over dough.
Sauté mushrooms, onion, garlic, butter, salt and pepper. Spread over cream cheese mixture. Starting with the longest side, roll dough up tightly and place seam side down. Tuck ends under. With a long, serrated knife, cut roll lengthwise in half. Carefully, roll each half so the cut side is facing out. Twist halves together 3 times and then pinch ends together and tuck under. This will form a long twist.
Place on a large sprayed baking sheet. Brush with egg and sprinkle with Parmesan cheese, if desired. Cover with sprayed plastic wrap and let rise until double. Remove wrap and bake at 350°F 45 minutes. Do not underbake. Cover with foil the last 15 minutes. Let cool for 5 minutes before slicing.

Directions

She carefully compared the signature to the one I had just signed on the receipt. As luck would have it, they matched.
******************************************* What Does a Thought Weigh?
I have often struggled with ideas that can communicate the power of a single thought. Our brains have been labeled as the 3 pound universe and in many ways this is totally appropriate. But if our brains only weigh three pounds and we have literally millions and millions of thoughts stored somewhere, what does a thought weigh? That seems like kind of a non-sense inquiry-but wait a minute.
It has been estimated that we think some 60,000 thoughts every day. In addition to our thoughts, we handle tens of thousands of bits of information as a result only of external stimuli. Others have approximated the amount of negative information each of us process to be representative of at least 90% of the stimuli we process. Indeed, I would add that for many, the vast majority of their inner thoughts are also negative.
Now if you think of our 3 pound universe that way, then how much does all of the negativity weigh? Perhaps the true weight loss program we should all endeavor to maintain is the one that’s aimed at losing those negative thought patterns. All of the no-don’t, you can’t, you’ll never succeed at that, etc. and so forth. In other words, every self-limiting, self-imposed notion that proscribes what we will try and how well we will do at it. This is the kind of weight loss that applies to most of us.
The role the subconscious plays in limiting one’s success, in motivating their buying patterns, in establishing their beliefs, in fact–in literally every aspect of one’s life cannot be understated. Indeed, the evidence is in: the subconscious instructs the conscious what to do, what to say, when to act and more and it does so as much as 60 seconds before the conscious mind responds. The mind is very much like a large container that you can fill with anything you want, but then that input becomes it program. Years ago I likened this to the old computer programmers GIGO meaning Garbage In Garbage Out.
Most of us desire to change something. We want to improve our lives in some way. Change-that seems to be the theme of the day everywhere. During this last election cycle I found myself doing several radio interviews regarding subliminal communication and the art of persuasion. There were subliminal ads aimed at both political parties and there were a number of other psychological techniques employed to gain your vote, but then there’s nothing new about that. What did impress me was the number of people on both sides who were just totally fired up about the election. There was a new level of energy, a higher sense of enthusiasm and as a result, some deeper divides. Passion-that is the word I would use to describe this last presidential election; passion on both sides of the aisle.
Pundits for both sides had plenty to say but ultimately everything came down to one word– “change.†The dynamics of the election were such that change was virtually assured in some way regardless of who emerged victorious. Change is what the world wanted as well, and change is what the world celebrated when President Obama was chosen by Americans. Our time now is a time of change and change is what we want and change is what most people resist when it gets right down to it. Change is actually attenuated by fear-fear of the unknown.
My staff has asked me over the years about our products and our philosophy. Whenever I am asked this question I think of Bill Gates and his book, “Business at the Speed of Light.†Gates explains in this book how the railroad companies used to think of themselves as in the business of trains. Had they recognized that their business was transportation, there would have been a different future in front of them then that of trains alone.
Whether it’s about business or a matter of a more personal nature, change begins in the mind. Real change is not possible until there is agreement between the subconscious and the conscious mind. Claiming your right to succeed consciously may well be later undermined by unconscious/subconscious beliefs, motives and mechanisms.
Think for a moment, what would you like to change? If you could change anything about yourself, what would it be? What would you change that is changeable? Would you like more energy and enjoy feeling and looking much younger? Would you like a greater sense of inner peace? Would you benefit from a better memory or an enhanced learning ability? Would you like to improve or attract a relationship in your life? Would you like to find the perfect employment? Would you like to change your body image or end some addiction? Or how about becoming fitter and/or more athletic? Again, what would you change?
My research over the past 30 years has repeatedly verified a simple hypothesis. In order to truly change-you must change your mind.

It May Be Today
"In my Father's house are many rooms … I am going there to prepare a place for you. And if I go … I will come back and take you to be with me."1
I remember reading a few years ago about a strange occurrence which I was informed took place in Haiti. A man reported to a gas (petrol/fuel) station owner that he had picked up a hitchhiker who was sitting in the back seat when, as they were driving along, suddenly blurted out, "Jesus is coming! Jesus is coming!" Whereupon the man looked around and his passenger had disappeared.
Even more strange was the response from the gas station owner who said, "You're the third person who has told me the exact same story."
Whether this incident was a strange coincidence, the figment of someone's imagination, or something supernatural I cannot be certain. But of one thing we can be sure, Jesus is coming again. He himself promised he would.
Christ's first coming is an indisputable fact of history. His second coming is just as certain. He said he would come when we least expect it. The important thing is to be ready by receiving him as our personal Lord and Savior. He is coming again. It may be today. If so, are you ready?
Remember, too, "Only one life, 'twill soon be past. Only what's done for Christ will last."

Incredible Mini-Burger Bites
2 lbs. lean ground beef 1-1/2 oz. pkg. onion soup mix 2 eggs, beaten 1/2 c. dry bread crumbs 3 T. water 1/2 t. garlic salt
1 t. pepper 24 dinner rolls, split 6 slices American cheese, quartered Garnish: catsup, mustard, shredded lettuce, thinly sliced onion, dill pickles Mix first 7 ingredients in a bowl; refrigerate for an hour. Spread meat mixture over a large, greased baking sheet. Cover with plastic wrap and roll out evenly with a rolling pin. Discard plastic wrap; bake at 400 degrees for 12 minutes. Slice into 24 squares with a pizza cutter. Top each roll with a burger square, a quarter cheese slice and garnish as desired. Makes 24 mini sandwiches

Homemade Hostess Cupcakes
Remember those pre-packaged cupcakes that were sold in the grocery stores; 2 cupcakes in a package, filled with that delicious white cream, and topped with that lovely little swirl? Well, here's a recipe to make them at home!
There are 3 parts to this recipe, the cake, the filling, and the frosting. If you want, you could make the cupcakes ahead of time and store them in the fridge or under a cake dome for a day until you get around to making the filling and frosting but, be warned, these cupcakes will dry out fast.
Ingredients
Basic Chocolate Cake
1 1/4 cup sifted flour 1/4 cup Hershey's baking cocoa (DON'T EAT IT YET - my husband made that mistake) 1/8 tsp. baking soda 1/4 lb. butter or 1/2 cup of margarine 1 cup granulated sugar 1/2 cup firmly packed dark brown sugar (feel free to eat this) 1/2 tsp. vanilla extract 3 large eggs 1/2 cup sour cream (I used low fat and it tasted fine)
Fluffy White Frosting Filling:
This tastes very similar to marshmallows
1 1/2 cups powdered sugar 2 egg whites 1/3 cup water 1/4 tsp. cream of tartar OR 3/4 tsp. lemon juice 1 tsp. vanilla extract
Chocolate Butter Cream Frosting:
2 and 2/3 cups powdered sugar 3/4 cup Hershey's baking cocoa 6 Tbsp. butter 6 Tbsp. milk 1 tsp. vanilla

Sift and stir together flour, cocoa and baking soda. Cream the butter, sugars, vanilla and sour cream. Beat in eggs. Add flour mixture in parts (to keep your mixer from blowing it all over your counters).
Place cupcake liners in cupcake pan (I find that paper liners are best). Consider leaving one cupcake hole unfilled so that you do not risk squishing a cupcake with your oven mitt when you pull them out to check for doneness. Fill 2/3 of the way and bake at 325 degrees F for 10 minutes; then check on them every five minutes after that until a toothpick in the biggest one comes out clean. These cupcakes will be VERY moist and perhaps not very big. Gently remove from cupcake pan (with the help of a butter knife or spoon if needed) and set on a plate or cooling rack. For the filling, separate your eggs. I use an egg separator but you could also just break the egg and gently slide the yolk from one broken shell to the other until all the egg white has separated. Do this in a separate bowl or cup as having any yolk at all in this recipe is not good. You can save the yolks for another recipe if you want but usually they are fine going down the drain with hot water. Stir in water and lemon juice (if using) and pour into a small saucepan over very low heat.
Slowly add in the flour (add cream of tartar here if you have it, but not if using lemon juice) and beat on low for 1 minute with a hand held mixer or until mixture reaches 160 degrees F with an instant read kitchen thermometer. This should take anywhere from 10- 15 minutes. Remove from heat and pour into a large bowl. Add vanilla and beat on high until stiff peaks form.
If using lemon juice, your peaks will not be as stiff as if you were using cream of tartar but it will still taste divine and you can stiffen it up a bit by adding more powdered sugar and beating on high until it reaches a consistency of your liking.
At this point, I let the frosting cool for a bit while I work on the cupcakes. By now, your cupcakes should have cooled. Using a sharp knife (I use a paring knife) or a apple corer, gently slice into the cupcakes. I attempt to make deep upside down cone shape. If it's not pretty, don't worry about it, it will be covered up by the frosting. Throw the scraps into a nearby bowl for later snacking with leftover filling and frosting. Brush off stray crumbs.
Now fill your piping bag with filling. I generally use a gallon size Ziploc bag with a corner snipped off. Stand you bag up in a small glass and use a scraper or a spoon to fill the bag with about half the frosting. Start your corner very small and squeeze some onto the side of the bowl, if it seems slow coming out or comes out in a thin stream, consider snipping a bit more off. Now pointing your bag at the very center of the cupcake, squeeze and swirl some until the hole is filled and the frosting is in a little dollop above the cupcake. Let this sit while you go make the frosting. If you still have frosting in your bag, squeeze the rest back into the bowl, you will need a smaller bag later anyway. Feel free to lick the frosting from the bag before tossing it in the trash.
Make the Chocolate Butter Frosting now. Unless you have another, you may want to move your fluffy white frosting from the large bowl it is in to a smaller bowl and wash the large one to use here. Sift together sugar and cocoa. Mix the butter and all but about a teaspoon of the milk. Add the cocoa and flour mixture in parts (to keep your counter tops clean, this will fly everywhere when using a hand mixer). Mix until smooth and creamy. Stir in vanilla. If you would like it even creamier add the rest of the milk, if you would like it a bit thicker, add a bit more sugar.
Going back to the cupcakes now, use a butter knife (or even your clean finger) to gently squish down the filling until the peaks are gone and they are more level with the top of the cupcakes. Now frost the cupcakes with the chocolate butter cream. You can use a scraper to do this or you could pipe the frosting. Fill the bag as before and starting from the center swirl the bag in circles leaving a connected stream of frosting all the way out to the edges. it might run over the sides a bit, and don't stress about it too much if it doesn't look smooth, the frosting will run and settle a bit leaving it more smooth on top after a few moments. Be sure however not to touch the filling, use a very gentle hand if using a scraper and never let your bag touch the cupcake. The whole point is to hide the frosting inside. There may be a small bump where the hardened filling is but don't worry about that, no one is perfect. Now, fill a smaller bag with the fluffy white filling and snip a tiny corner off (you only want a very thin stream) and make swirls on top the cupcake. You could make them to resemble the classic Hostess cupcakes or you could write words or just make abstract designs

Ingredients 1/4 cup(s) hoisin sauce 1 tablespoon(s) honey 1 tablespoon(s) grated fresh peeled ginger 1 teaspoon(s) Asian sesame oil 1 whole(s) (1 1/4 pounds) pork tenderloin 1/2 medium pineapple, untrimmed 2 tablespoon(s) brown sugar
Directions
Prepare outdoor grill for covered direct grilling over medium heat. In small bowl, combine hoisin, honey, ginger, and oil. Place pork on hot grill rack. Cover grill and cook pork 18 to 20 minutes, turning occasionally. With serrated knife, cut pineapple half into 4 wedges. Rub cut sides of pineapple with brown sugar. Grill pineapple 10 minutes or until browned on both sides, turning over once. While pineapple is grilling, brush pork with hoisin-honey glaze and turn frequently until temperature on instant-read thermometer reaches 155 degrees F. Transfer pork to cutting board; let stand 10 minutes. Transfer pineapple to platter. Thinly slice pork and serve with pineapple wedges.

Ingredients 3 cup(s) canola oil 2 large eggs 1 cup(s) all-purpose flour 3/4 teaspoon(s) fresh-ground pepper 1/4 teaspoon(s) cayenne pepper 3 large full-sour dill pickles, cut into spears

Add oil to a heavy 9-inch skillet, attach a deep-fry thermometer, and heat oil over medium-high heat to 350 degrees F. Whisk the eggs in a bowl and set aside. Combine the flour, pepper, and cayenne in a shallow dish and set aside. Line a baking sheet with paper towels and set aside. Dip pickles in egg, shake off excess, and dredge in the flour mixture. Add pickles to the oil a few at a time so they can float freely. Fry the spears until golden, about 3 minutes. Transfer to the prepared baking sheet to drain slightly and serve immediately.

Beef Stew
Description A quick & easy meal that can be cooked in a slow cooker, on the stove, or in the oven.
Ingredients 1-2 pounds stew beef or a round steak cut into bite size pieces 4 potatoes, diced 4-6 carrots , cut up 1 can of onion soup 1 can of cream of mushroom soup 1 can of water
Directions Put stew beef into slow cooker, add potatoes, carrots, and onion soup. Mix cream of mushroom soup with one can of water then add to slow cooker. Can be cooked overnight or during the day (while at work etc). Cooking time is approximately 3 1/2 to 4 hours. (Does not hurt to cook overnight and through the next day for evening meal. Veggies do not get mushy. This will serve 6 to 8 people. Good with cornbread and a salad.

12 cups cooked potato, diced (I use my pressure cooker) 4 tsp. salt 2 large onions, chopped 32 oz. frozen chopped broccoli, thawed 2 cups grated cheddar 1/2 cup Parmesan cheese
Directions:
Combine potatoes, onion and salt. Cook until done. Drain and press into bottom of 9x13 inch casserole.
Drain broccoli. Pour over potatoes. Cover with cheeses.
Bake at 350 degrees F for about 15 minutes until heated through and cheeses melt. May top each serving with bacon bits and Ranch dressing or sour cream.

1 Heat oven to 400°F. Spray large cookie sheet with cooking spray, or line with cooking parchment paper. 2 Unroll dough onto lightly floured work surface. Roll dough into 12x14-inch rectangle. Using pizza cutter, cut dough lengthwise into 4 strips. 3 Along long edge of each dough strip, spread 2 tablespoons of the cheese. Stretch dough over filling; brush edges with water, and pinch to seal. Pick up ends and gently stretch each dough rope to 24 inches long. 4 To make pretzel shape, form each rope into U shape. Twist ends twice. Press down dough where dough overlaps in an “X.†Pick ends up and fold over so they rest over bottom of U shape. Tuck one end under dough at bottom of U shape; other end lies over dough at bottom of U shape. 5 In small bowl, beat egg and 1 tablespoon beer with whisk until blended, set aside. 6 In large microwavable bowl, microwave remaining beer uncovered on High 1 minute 30 seconds or until hot. Slowly add baking soda; stir until dissolved. Dip each pretzel,1 at a time, into beer and soda mixture. Remove with large pancake turner or slotted spoon; place on rack. Let stand at room temperature 5 minutes. 7 Brush pretzels with egg mixture, and sprinkle with coarse salt. Carefully transfer to cookie sheet. Before Ansel Adams became famous as a landscape photographer, he studied piano and showed some talent. At one of his first recitals he played Chopin's Nocturne in F Major. "In some strange way," he said, "my right hand started off in F-sharp major while my left hand behaved well in F major. I could not bring them together. I went through the entire nocturne with the hands separated by a half-step. The next day, someone walked up to him and jokingly commented, "You never missed a wrong note."2
I can identify with Adams in that in much younger days I used to play trumpet on a gospel team and one of the first times I played a solo, I was so nervous I was thinking one song and playing another! You can imagine the effect. It was very embarrassing, to say the least.
Such mistakes are easily overcome. But some mistakes we make in life can have long-lasting serious consequences. With these mistakes, however, the good news is that God's mercy is always available to all who confess their sins and failures and ask for his forgiveness.

Buying Guide: The Best Sheets to Keep You Cool This Summer
Many of us don't swap out our bedding each season, but to prevent tossing and turning in the summer heat, it may be best to consider changing out your sheets for a set that won't make a hot night even worse. So ditch your flannel bedding, and read our tips below for choosing the best sheets to keep you cool and comfortable.
Choose Natural Fibers. Fabrics made from natural materials are the most breathable and will wick away perspiration, keeping you cool and dry, versus synthetic fabrics which don't allow ventilation. (Studies suggest that the average person sweats one pint of perspiration throughout the night. Ick!) Cotton or cotton blends, including percale, sateen, and jersey are affordable, comfortable and durable. The best quality cotton sheets are made from Egyptian cotton, which describes the smooth yarns that they're woven from, which are grown in Egypt. Of course silk sheets regulate temperature well and feel great on the skin, but often come with a high price tag. Linen breathes well and has a natural cooling effect, but be careful because it wrinkles very easily.
Consider The Weight. Although sateen and silk sheets are light in weight they tend to be insulating and trap heat because they drape closely to your body. While percale are heavier and crisper, this may be preferable in the summer months as they allow for more circulation. Also, heavy weight sheets are more durable over time.
Don't Get Caught Up In The Thread Count Hype. While most people think that the higher the thread count, the more decadent the sheets are, this is not always the truth. Also, sheets with a very high thread count don't let air pass as freely, trapping heat underneath. We suggest choosing a set with a 300-400 thread count for the summer. Also, if possible, it's best to feel the fabric first-hand, as this is the best test to how they will feel against your skin all night long.
Pick A Light Color. For the summer months, choose light colored sheets that reflect rather than absorb the light that comes in through your bedroom windows during the day. White or light colored sheets are easy to bleach as well. But remember when laundering your sheets use lukewarm water and avoid drying on high heat to keep them in the best condition. Better yet, dry your sheets on a line outdoors for that amazing sunshine smell.

Grilled Portobella Mushrooms
A great side dish to serve alongside any meat.
Serves: 4 Prep Time: 5 minutes Cook Time: 15 to 30 minutes
4 large (1 1/4 pounds) portabella mushrooms 2 tablespoons extra virgin olive oil 1 teaspoon thyme salt and pepper, to taste
Gently pull away the stems from the mushrooms. Cut the stems in half lengthwise but leave the cap whole. Thread the mushrooms on skewers.
Combine the olive oil and thyme and brush onto the mushroom. Grill small mushrooms about 4 inches from the coals, about 5 minutes on each side. Grill large mushrooms about 7 inches from the coals, about 12 to 15 minutes on each side. Brush the mushrooms with the olive oil mixture while grilling. The mushrooms are done when they feel soft to the touch.

Baked Chicken Breast with Swiss Cheese
Description This dish is too good to be this simple.
Ingredients 6 Chicken Breast without ribs 6 slices Swiss cheese 1 can Cream of Chicken Soup 1 cup chicken broth 1/4 cup milk 1/4 cup Sour Cream 1 pkg Herb Stuffing
Directions Mix soup, milk, broth, & sour cream together, set aside. Place half of the stuffing in foil lined baking dish. Clean each chicken breast, pat dry and place on the stuffing that is already in dish. Place cheese over chicken breast, cover with soup mixture. Pour the second half of the stuffing over the chicken breast. Cover with foil, bake for 30 minutes at 350 degrees, remove foil bake another 30 minutes.
Prep Time: 20 Min Cook Time: 1 Hr Total Time: 1 Hr 20 Min Servings: 6

Description A great meal with very quick clean up.
Ingredients greased 9X13X2" pan 2 10.5 oz. cans of cream of chicken soup 21 oz. of milk (Use the empty chicken soup cans) 21 oz. of wild or white instant rice (Use the empty soup cans) 3.5 to 4 lbs. cut up chicken salt and pepper to taste
Directions Pre heat oven to 350 degrees. While this is warming, salt and pepper the chicken pieces, or use your favorite rub. Grease the 9x13x2" pan and spread the two cans of soup on the bottom. Next, spread the rice on top of the soup, pour milk over the rice and soup, and arrange the chicken pieces in the pan. Finally, bake for 60 to 90 minutes, or until the chicken is done. Enjoy!

INGREDIENTS:
1 1/2 cups Gold Medal all-purpose flour 2/3 cup milk 1/2 cup shredded Cheddar cheese (2 ounces) 2 tablespoons butter or margarine, softened 2 teaspoons baking powder 1 teaspoon sugar 1 teaspoon salt 1 egg Coarse salt
DIRECTIONS:
1 Heat oven to 400°F. Grease cookie sheet. Mix all ingredients except egg and coarse salt in medium bowl with fork until soft dough forms. Smooth dough gently into ball on floured board. Knead 10 times. Divide dough in half. 2 Roll half of dough into 12x8-inch rectangle. Cut rectangle lengthwise into eight 1-inch strips. Fold each strip lengthwise in half into 12x1/2-inch strip; pinch edges to seal. Twist each strip into pretzel shape. Place seam down on cookie sheet. 3 Beat egg in small bowl with fork until blended. Brush pretzels with egg. Sprinkle lightly with coarse salt. 4 Bake 15 to 20 minutes or until golden brown. Remove from cookie sheet to wire rack. Repeat with remaining half of dough.

Preheat oven to 400 degrees. Place Taste Toppers into resealable plastic food bag; seal. Crush taste toppers with rolling pin.
Coat chicken fingers with mustard. Dip into crushed onions. Place chicken on baking sheet.
Bake 15 minutes or until chicken is crispy and no longer pink inside.

Ingredients 3 boneless chicken breast halves, cut up 2 12 ounce jars of chicken or turkey gravy (turkey is more flavorful) 1 lb. (at least) baby carrots, cooked fresh, not canned 1 lb bag frozen peas, cooked as directed 3 15 oz. cans small whole potatoes, cut into bite-sized pieces 1 pkg prepared refrigerated pie crust (top & bottom crust)
Directions Boil chicken for 20 to 30 minutes in chicken broth or stock mix, celery salt, pepper, garlic powder, and onion powder to taste. Remove and let cool, in same water, cook carrots, then peas, strain and put in large bowl, add potatoes and chicken, then add gravy, stir gently so as not to crush the peas, put bottom pie crust in a 9 to 11 inch pie plate (may need to roll out to fit larger plate, gets thin, but it works), pour chicken and veggie mixture into bottom crust, top and seal pie with top crust, seal sides and cut an X or C in top, put in a 400 degree oven until crust is golden brown (approximately 20 minutes). You may want to put something under it to catch any dripping, in case the seal breaks.

Here is a simple visualization meditation called White Light Meditation that I have taught to my patients to reduce stress and headaches:
1. Sit or lie down comfortably. Clear your mind, relax your body, and breathe deeply and slowly.
2. Inhale and visualize a white light or clear mountain spring water entering your body at the top of your head and flowing down to your abdomen.
3. Exhale and visualize the white light or water continuing its downward course from your abdomen to the bottom of your feet, where it drains out.
Repeat for 10 minutes. Usually you will experience a quick reduction in symptoms right after this exercise.
4. Be free from headaches with vitamins
B-complex vitamins are one of my recommendations for headaches -- not only for their pain-relieving properties, but because they are crucial for energy production and help the nervous system. Vitamin B6, in particular, can be very effective for alleviating pressure headaches. Use supplements of B-complex vitamins to relieve pain when a headache strikes and take them daily to prevent headaches.
5. Herbal tea helps headaches
• Sichuan lovage, or ligusticum, has for centuries, been a traditional Chinese remedy for agonizing migraines. The usual dosage is 300 to 500 mg daily, or it can be taken as tea, 2 or 3 cups a day. You can find ligusticum (not to be confused with European lovage) in health food stores, online, and at the offices of acupuncturists and Chinese herbalists.
• Ginger, a natural anti-inflammatory, has been used for thousands of years by the Chinese to cure pain. To make ginger tea, you can cut up the root, boil it for 10 minutes, then strain the water and sip as tea; or, use ginger tea bags available in health food stores.
• Plum, mint, green tea will help release tension. Boil 5 dried plums, 1 tablespoon of green tea, and 2 tablespoons of mint in 3-1/2 cups of water for 15 minutes. Drink 3 cups a day until the headache subsides.
6. The Food Factor
What we eat on a regular basis affects the energy flow in our body. The foods we eat eventually end up in our blood and meridians in the form of energy. Good eating habits help maintain a good flow of energy and blood to the head, preventing headaches. Some common headache-causing culprits to cut back on include sugar, wine, cheese, and caffeine (although caffeine may alleviate one temporarily, especially if you are addicted to it).
Here's an uncommon food remedy: Drink a glass of fresh carrot juice every 4 hours until the headache subsides.
If you are suffering from the headaches that come with allergies, try Allergy Tamer, a traditional Chinese herbal blend that promotes temporary relief from nasal congestion, sneezing, itchiness and watery eyes.

Easy Noodle Bake with Ham and Peas

Ingredients
3 cups uncooked wide egg noodles 1 tablespoon unsalted butter 1 small onion, finely chopped 1 3/4 cups milk 2 tablespoons cornstarch 1 cup heavy cream 1 (10 oz.) box frozen baby peas (2 1/2 cups) 4 ounces boiled ham, cut into small cubes (about 1 cup) 1/2 teaspoon salt Pepper 1/2 cup chopped pretzels 1 cup shredded Cheddar
directions
1. Preheat oven to 400°F. Lightly butter a 1 1/2- to 2-quart baking dish. 2. Cook noodles according to package directions and drain in a colander; do not rinse noodles. 3. While noodles cook, melt butter in a large saucepan over medium heat, add onion and cook, stirring, until softened, about 5 minutes. Stir milk and cornstarch together in a large cup; whisk into saucepan with onion and cook, whisking, until boiling. Whisk in cream and continue to cook, whisking, until thickened, about 2 minutes. 4. Stir noodles, peas, ham and salt into sauce mixture, season with pepper and scrape into prepared baking dish. Sprinkle pretzels and Cheddar on top and bake until bubbly and golden on top, about 20 minutes.

Preparation time: 25 minutes Cooking time: 35 minutes
9 medium apples, peeled and sliced 1/4 cup plus 1/4 cup Splenda, No Calorie Sweetener, granular 1/4 cup plus 1/4 cup sugar 2 teaspoons cinnamon 1/2 cup trans-fat-free margarine I cup all-purpose flour I cup old-fashioned oatmeal
Preheat oven to 375°F. Toss apples with 1/4 cup Splenda, 1/4 cup sugar, and cinnamon. Transfer apple mixture into a 9 x 13 baking pan. Beat margarine and add the remaining 1/4 cup Splenda and 1/4 cup sugar along with the flour and oatmeal. Blend until well mixed. Evenly distribute flour mixture over apples. Bake for 35–40 minutes on the top rack of the oven until topping is lightly browned and apples are soft.

Preheat oven to 375°F. Combine shortening, applesauce, egg, and vanilla with mixer. Add flour, oats, 3/4 cup Splenda, brown sugar, soda, salt, and cinnamon, and mix until soft dough forms. Spray a baking sheet with nonstick cooking spray. Drop heaping teaspoons of dough onto baking sheet. Pour remaining 2 tablespoons of Splenda onto a small saucer. Dip a slightly moistened, flat-bottom drinking glass into the Splenda, then gently press each dough ball to flatten slightly. Bake for approximately 10 minutes until cookie bottoms are light brown. Salad:
1 head lettuce, torn into bite-sized pieces 3 Roma tomatoes, chopped 8 ounces Provolone cheese, cut into 1/2 inch cubes 1-1/2 cups coarsely chopped artichoke hearts 1 (6-ounce) can pitted black olives, drained 1 package sliced pepperoni 1/2 cup drained garbanzo beans 6 mushrooms, sliced 1/2 cup freshly grated Parmesan cheese
TO PREPARE:
For the vinaigrette, combine the olive oil, wine vinegar, chili sauce, cheese, garlic, Worcestershire sauce, parsley, Italian seasoning, sugar, salt and pepper in a jar with a tight-fitting lid and seal tightly. Shake to mix.
For the salad, combine the lettuce, tomatoes, provolone cheese, artichokes, olives, pepperoni, beans and mushrooms in a salad bowl and mix gently. Add the vinaigrette and toss to coat. Sprinkle with the Parmesan cheese.

Directions
1. Preheat grill to medium-high or oven to 450 degrees F. Cut steak lengthwise in half and then crosswise into 1/8-inch thick strips. Combine steak strips, peppers with onions, black beans and fajita marinade. 2. Center half of steak mixture on each sheet of Reynolds Wrap Heavy Duty Aluminum Foil. 3. Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make two packets. 4. Heat the oven to 400°F. Stir the soup, water, chiles, oregano and chili powder in a medium bowl.
Stir 1 cup soup mixture, chicken and 1/4 cup cheese in a medium bowl.
Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam-side down in a 2-quart shallow baking dish. Pour the remaining soup mixture over the filled tortillas. Sprinkle with the remaining cheese. Cover the baking dish.

My daughter was once a little girl, and would sometimes be afraid just as the girl in the story. But, while at church, she had committed Psalm 56:4 to memory. Although a child, she found comfort in this verse, and took to heart its message. It is often hard for us as adults to have the kind of peace she held. We cling to tangible evidences like a security blanket, and have a most difficult time letting go. Yet perhaps it is not too late for us to discover a childlike faith in all things--the kind of faith that requires no physical proof. 6 Positive tools to go from Super Sad to Super Duper Glad
Happiness is a choice. Choose happy.
There are many souls I know, who are rarely effected by mood swings. It’s the most incredible thing to behold! They are honestly the most balanced, joyful, and happiest people I have ever met. Sure, they can get upset, angry, or disillusioned just like the rest of us, but overall their mood is light-filled and loving. I absolutely adore this abundant laugher and overflowing joy that is part of their nature.
As for me, I love life! But… I feel everything – even those feelings that don’t originate from me. Overall, that’s a good thing. It provides a deep and rich awareness, understanding, and empathy of life, other people, and myself. However, sometimes those feelings are intense and sometimes they get stuck inside. A lifetime of living with this heightened sense of emotional awareness has allowed me to become an expert in how to move those more difficult emotions up and out. Are you moody often?
If you often feel moody or down in the dumps perhaps that is just part of the way you are built. Instead of tolerating your moods, maybe it’s time you also became an expert in positive personal mood management. If you are having trouble feeling happy, try these tips. When you find something that works, add it to your emotional well-being toolbox. Then next time you want to move from sad to glad, open your toolbox, dig around, and put one or more of your tools into action. 6 Positive tools to go from Super Sad to Super Duper Glad
1. Go ahead – worry. Allow yourself 15 minutes of worry time. Get out your journal and write it all down. Your journal can be an incredible tool to validate the importance of what you feel. Express your emotions, feel your feelings, and let it all out. Write out the big sloppy, messy misery that you are experiencing. Communicate your concerns. Then once it’s all out, set aside your journal and move on to an activity that will bring some positive energy into your life.
2. Walk it off. Research shows that walking is great way to de-stress. Not only does a walk get your energy flowing, it also helps you breathe more deeply. Breathing can disrupt the internal stress-building loop where stressful feelings lead to negative thoughts that lead to stressful energy. Breathing interrupts the common tendency that we have to ruminate or become absorbed with our thoughts and feelings when we are upset. Breathing opens up your body, helps emotions flow, and helps us come back to our own inner core of peace.
3. Rub it in. Enjoying a 20 minute massage once or twice a week has been shown to lower stress and anxiety. Plus, massage is a great way to connect with your body in a positive, loving way. Human touch in the form of massage can allow you to relax, unwind, reduce your stress hormones, and increase brain relaxation. It certainly can’t hurt and it can make you feel better. The best part, you can give yourself a nice foot massage(with a light moisturizing cream) to begin with every night.
4. Laugh it up. If you can’t cry, then try laughing. It can be just as effective as tears to move out some of those dark, heavy, moody energies. Laughter also increases the release of endorphins – brain chemicals that give you a sense of emotional well-being. Rent a funny movie, call up your comical friend, or check out the comedy channel on television or your satellite radio. Here’s a little funny joke to get you started: TEACHER : What a pair of strange socks you’re wearing, one is green and the other is blue with red spots !! STUDENT: Yes, it’s really strange. I’ve got another pair just like that at home. ;)
5. Create the official “50 things I love†list. Sit down and create a list of 50 things you love. Maybe your list includes a favorite movie, making up silly poetry, a messy pizza, and gardening. When you are feeling down, you can look at all the things you love about life. Then actively engage yourself in one or two of the items on your list, even if you think you won’t enjoy yourself. Find an item that makes you laugh, boosts your self-esteem, or revitalizes your mood. You might be faking it at first, but as you take an intentional action to nurture yourself, your brain will respond by releasing feel good hormones.
6. Food and mood. What you eat can affect your mood. If you haven’t eaten in a few hours, or you’ve only eaten a sugary cereal or doughnut for breakfast, your blood sugar could be plummeting. Low blood sugar equals a low mood. Instead of reaching for a quick fix candy bar, reach for a meal that’s loaded with protein that can increase alertness and energy, and complex carbohydrates that can provide a level blood sugar balance. High protein foods include fish, poultry, meat, and eggs. If you can’t eat those, try legumes, cheese, milk, yogurt, or tofu. Healthy complex carbohydrate foods include whole grain breads and cereals, whole grain pasta or rice, oatmeal, fruits, and vegetables. Eat good to feel good :)
7. Drink Up the H2O! Drink water, water, and more water! One of the first signs of dehydration is a mood swing. Drinking more water could be the easiest way to lighten your mood, sharpen your thoughts, and feel better quickly. In part, that’s because your brain needs water to function at its highest capacity. Re-hydrating allows the natural brain chemicals to do their job. Want to be less moody, then please drink lots of water. Juices are great too, but not the sugary kind. All natural is always best.
8. Clean your house, clear your mood. A clean house, or closet, or desk can lift your spirits. Being surrounded by clutter can cause you to feel overwhelmed, stuck, and stressed. It can kill your energy and leave you feeling down and unmotivated. Get a feel for where you would get the most bang for your buck. Cleaning the toilet might not do much to increase your enthusiasm, but putting away your laundry and then clearing out your closet might just be what the doctor ordered. Once your clutter clearing is complete, sit back, breathe, and enjoy all the new energy that is available to you.
Learning to lift your mood can seem impossible at times, but there are ways to help yourself feel better. Experiment with the tips above and discover what lifts the moodiness out of you. Spending some time figuring out how to release a sad mood will payoff big time to give you a more fun and fulfilling life.

RECIPES:
Acorn Saquah Soup In Shells
INGREDIENTS:
6 acorn squash of equal size 2 medium onions, chopped 4 Tablespoons butter 3/4 cup bread crumbs Salt and pepper, to taste 1/8 teaspoon nutmeg 1 cup grated Gruyere cheese 1/4 cup grated Parmesan cheese 6 cups chicken stock 1 cup heavy cream
TO PREPARE:
Preheat oven to 400 degrees. Cut thin slice off bottom of each squash so it sits level. Slice cap off squash and reserve. Scrape out seeds and fibers. Saute onions in butter until tender. Add bread crumbs and stir until butter is absorbed. Remove from heat and stir in salt, pepper, nutmeg, and cheeses. Place squash in buttered baking pan.
Divide crumb-cheese mixture equally among the squash. Add enough stock so that the squash is almost full. Replace cap on each squash. Bake 45 to 60 minutes or until soup is simmering and squash pulp begins to get tender. Reduce heat to 350 degrees and bake 15 to 20 minutes until squash is tender. Squash should not lose its shape. Stir cream into each squash and adjust seasonings. Serve soup and remember to scrape the inside of the squash bowl.

Bow-Tie Salad with Fennel, Prosciutto, and Parmesan
A tangy lemon dressing makes this main-course salad especially refreshing, and the only thing you have to cook is the pasta. If you find a fennel bulb with the dark-green feathery tops still on, chop some of them and toss into the pasta.
Serves: 4 Prep Time: 5 minutes Cook Time: 15 minutes 1/2 pound bow tie pasta 1 large fennel bulb, (about one pound) sliced as thin as possible 1/4 cup olive oil 2 tablespoons fresh lemon juice 1/4 teaspoon salt 1/2 teaspoon fresh ground black pepper 1/4 pound prosciutto, thinly sliced, cut into strips 1/4 pound Grated Parmesan cheese, (or 1/3 cup grated parmesan)
In a large pot of boiling, salted water, cook the bow ties until just done, about 15 minutes. Drain. Rinse with cold water and drain thoroughly.
In a large bowl, toss together the bow ties, fennel, oil, lemon juice, salt, and 1/4 teaspoon of the pepper. Add the prosciutto and toss again.
To serve, mound the salad on plates. Top with strips of Parmesan shaved from the chunk of cheese with a vegetable peeler or with the grated Parmesan. Sprinkle the remaining 1/4 teaspoon pepper over the cheese.

Cookies and Candy Pizza
Surprise, it’s dessert pizza! And what’s even sweeter, it comes from a pouch of cookie mix!
Serves: Makes 12 servings Prep Time: 20 minutes Cook Time: 25 minutes 1 pouch Betty Crocker peanut butter cookie mix 1/3 cup Vegetable Oil 1 egg Toppings, such as candy-coated chocolate candies, candy corn, semisweet chocolate chips, salted or honey-roasted peanuts 1/2 cup shredded or flaked coconut, if desired, tinted orange 1 cup miniature marshmallows 1/3 cup semi-sweet chocolate chips, melted
1. Heat oven to 350°F. 2. Stir cookie mix, oil and egg in medium bowl until soft dough forms. Press dough in ungreased 12-inch pizza pan, forming a narrow rim around edge of pan. Sprinkle choice of toppings on dough; sprinkle coconut over toppings. 3. Bake 10 minutes. Sprinkle marshmallows on top. Bake 10 to 15 minutes or until marshmallows are lightly browned and cookie is set at edge. Cool completely in pan, about 1 hour. Drizzle melted chocolate over top. Cut into 12 wedges.

Mushroom Casserole
"The best way to get to the meat of the matter is through a bowl of rice."
Serves: 4 Prep Time: 10 minutes Cook Time: 20 minutes 1 cup UNCLE BEN’S ORIGINAL CONVERTED brand Rice 1 cup milk or single cream 8 ozs. mushrooms (small) cut in half 1 medium onion finely chopped 2 tbsp. chives chopped 1/2 tsp. chopped tarragon (optional) 1 tbsp. parsley chopped pinch cayenne pepper 1 tsp. salt 1 tbsp. flour 4 tbsp. butter or margarine
1. Cook rice according to package instructions. 2. Sauté mushrooms and onions with tarragon, chives and salt in butter over moderate heat for about 5 min. 3. Blend in flour, mix completely. Add cream and cook stirring constantly until thickened. 4. Transfer cooked rice into shallow baking dish covering both the bottom and sides of the dish with rice. Spoon mushroom mixture into the center. 5. Cover and bake at 400F for 12-15 minutes. Sprinkle with parsley before serving.

Barbecued Chicken Sandwiches
This flavorful recipe is great for the family or for casual get-togethers. It uses canned chicken and prepared barbecue sauce to make mouthwateringly delicious sandwiches.
Serves: 4 servings Prep Time: 10 minutes Cook Time: 15 minutes
1 tablespoon butter 1 small green pepper, chopped (about 1/2 cup) (optional) 1 small onion, chopped (about 1/4 cup) 1/4 cup chopped celery 1/2 cup barbecue sauce 1 can (12.5 ounces) Swanson Premium White Chunk Chicken Breast in Water, drained 4 Pepperidge Farm Farmhouse Premium White Rolls with Sesame Seeds, split and toasted
Heat the butter in a 2-quart saucepan over medium heat. Add the pepper, if desired, onion and celery and cook until they're tender, stirring occasionally. Stir the barbecue sauce and chicken in the saucepan. Cook until the mixture is hot and bubbling, stirring occasionally. Divide the chicken mixture among the rolls.

Orange Whip Delight ----------------------------------
12 oz. Cool Whip,thawed 1 20 oz.can crushed pineapple,drained 2 10 oz.cans mandarin oranges,drained 3/4 c.chopped walnuts 1/2 c. sweetened coconut 1 6 oz.box orange JELLO (I'm guessing any flavor would work) 1 1/2 c. hot water
Put JELLO into a large bowl. Pour in water.Stir well to dissolve. Let cool on counter until cool enough to put in refrigerator. Chill in fridge for 15-20 mins. You DO NOT want it set.When it's cool, and you stick your finger in,it should leave an orange coat on your finger. It should still be LIQUID form. Add Cool Whip and stir until mixed well. Add pineapple and mix well.Fold in oranges carefully as not to crush them. Add nuts and coconut and mix to combine. Chill for at least 30 minutes before serving. The longer is sits,the more firm it becomes.

The medics rush Mr. Steinberg to the hospital in the middle of the night, apparently with a massive heart attack. The doctors work on him all night and morning and finally discharge him to ICU, where therapy continues.
In a couple of days Mr. Steinberg's physician comes into his room and says, "Sol, I'm happy to tell you that you are completely well. You have the heart function that you did when you were a fifteen-year-old lad. We're going to send you home tomorrow. You don't have to worry about your heart; do any physical exercise that you like."
Mr. Steinberg goes home and that evening is talking with his wife: "Doris, you'll never believe it: I'm completely well. I have no worries with my heart. Tonight, Darling, you and I are going to make love like you've never had before, wild, passionate sex....you'll love it!"
Doris thinks for a minute and says, "I don't know, Sol. I've heard about active sex and heart conditions. I don't want it to be on my head if you croak while we are making love.
